Chocolate covered cherries are a popular gift for Valentine's Day and other holidays. Just how does that wonderful sugar liquid get inside the candy and how do you do that? With all of the chocolate covered cherries recipes floating around on the web, which one works best? I have many batches of these tantalizing candies over the years and as a Valentine's Day present, I'd like to share my experiences and secrets with you!

They are fresher and you can doctor the recipe according to your taste in chocolate. But, your loved ones will be impressed simply because you made them homemade candy and they probably won't care what it comes wrapped in.

My Adventures with Chocolate Covered Cherries

cherry jarOne year I impulsively bought a giant gallon jar of Maraschino cherries at a warehouse club. I knew I had a recipe for chocolate covered cherries around somewhere and so I set out to make them. Wow! That giant jar of cherries only cost about what two small jars of cherries did at the regular store. What a bargain! Well, as we know, these things are never what they seem. Once I opened the jar I had the thing hulking in my refrigerator for a long, long time. This was even after I made many, many batches of chocolate covered cherries.

It took me several tries to get this candy right and there were problems that the recipes didn't explain. For example, in the recipe and tips section I speak keeping the cherries dry and the fondant cool. The first time I made these I expected to make neat pieces of flat fondant that rolled nicely around each cherry, like the recipe described. Nope! The wet dough, the wet cherries and the heat from my hand turned it into a huge mess. People ate them anyway. I made lots more and they began to turn out the way I imagined.

Tips for Making Chocolate Covered Cherries

melted chocolateThe most important thing for making chocolate covered cherries is to keep the candy at the right moisture level during each stage of the process. If the cherries or fondant are too wet or too dry when you try to put the two together it won't stick. Don't be afraid to have a little extra powdered sugar on hand to dust on the fondant.

An easy way to dry the candies in between stages is to lay the cherries out on waxed paper in a plastic container. Then, put the container in the refrigerator with the lid off for a few hours.

It is easy to melt the chocolate in a microwave but you can also make a double boiler out of two pots. Select two pots, one slightly larger than the other. Add water to the larger pot and then put the second pot on top. Simmer the water gently and gradually add chocolate to the top pot. It should melt slowly without burning.

Make sure the cherries and fondant are completely covered by chocolate. If not, all of your juicy sugary goodness will leak out of any holes once the fondant melts.

Chocolate covered cherries are best when they are a few weeks old. Store them in a cool dry place and allow the fondant to melt, which will make the sugar liquefy inside.

If you have trouble keeping the dipped candy neat, put each candy into small paper candy cups to keep it contained.

Tasty Toppings for Chocolate Covered Cherries

candyWhen the cherries are still covered in fresh wet chocolate, sprinkle one (or more) of the following on top:

Jimmies in red, pink, white, or more chocolate!

Crushed nuts

Nonpareils, either in Valentine colors or traditional silver

Tiny candies made for cupcake toppings, such as heart shaped ones.

If you are skilled with icing, you can pipe a tiny flower on top of each candy
Drizzle darker or lighter chocolate on top in a swirl or zig-zag pattern

Ideas for Wrapping and Presenting Your Sweet Treats

small presentHomemade chocolate covered cherries can be a bit delicate, so take care in packaging them for your sweetie.

Paper candy cups are available at party supply stores, or almost any craft store that sells candy making supplies.

If adding more than one layer in a box, use thin cardboard in between the layers to keep the candies stable. Cut the square to fit and then cover it with foil or colored paper to make it pretty.

Keep it simple: get a decorative tin or box from the dollar store and line it with waxed paper. Line your candies up inside and you're done!

Beware of gift bags or any other loose, soft packaging. The candies could burst and become a gooey mess inside.
