My Adventures with Chocolate Covered Cherries
One year I impulsively bought a giant gallon jar of Maraschino cherries at a warehouse club. I knew I had a recipe for chocolate covered cherries around somewhere and so I set out to make them. Wow! That giant jar of cherries only cost about what two small jars of cherries did at the regular store. What a bargain! Well, as we know, these things are never what they seem. Once I opened the jar I had the thing hulking in my refrigerator for a long, long time. This was even after I made many, many batches of chocolate covered cherries.It took me several tries to get this candy right and there were problems that the recipes didn't explain. For example, in the recipe and tips section I speak keeping the cherries dry and the fondant cool. The first time I made these I expected to make neat pieces of flat fondant that rolled nicely around each cherry, like the recipe described. Nope! The wet dough, the wet cherries and the heat from my hand turned it into a huge mess. People ate them anyway. I made lots more and they began to turn out the way I imagined.

Chocolate Covered Cherries Recipe
How to make chocolate covered cherries

- Serves: makes 4 1/2 dozen chocolate covered cherries
I adapted this recipe from one I found on the web years ago and I often make it at holidays. I've run into problems with stickiness or the cherries or fondant being too wet. This makes a mess and the fondant won't properly stick to the cherries. So, dust powdered sugar on your hands when you work, then take care to keep your cherries dry and your fondant cold. I use flat plastic containers for laying out the cherries in the different stages. Once the cherries are finished I just put the lids on the container and let them set up in the refrigerator until I can get back to them.

Ingredients
- 1 1/2 tbsp butter or margerine
- softened
- 1 1/2 tbsp corn syrup
- 1/4 tsp vanilla
- 1 1/4 cups sifted confectioner's sugar
- 54 Marischino cherries (about 2 10 oz jars)
- 1 (10 to 12oz) bar of the milk or dark chocolate of your choice
Instructions
Drain the liquid from the cherries and remove the stem. Lay them out on waxed paper to dry them a bit. (This works best if the cherries are left uncovered in the refrigerator overnight.)
In a small bowl, mix together butter, corn syrup, and vanilla to make the fondant. Slowly add confectioner's sugar and mix well. At this point you may have to get your hands in there and knead the fondant to thoroughly mix it. Divide the dough in half, roll it into logs and wrap it in plastic and chill it until firm, about 2 hours.
When the fondant is cold enough, cut 1 inch slices out of the logs and then cut these slices into quarters. You may not want to do the whole thing at once as the dough will begin to warm and become too sticky. Flatten each small piece of dough and wrap one around each cherry. Lay the fondant covered cherries on a plastic container or cookie sheet lined in wax paper (see photo) and freeze for at least 30 minutes (longer is better).
Melt the chocolate in a double boiler. One at a time, dip the cherries into the melted chocolate. Place the cherries on a wax paper covered plastic container or cookie sheet and place them in the refrigerator. Chill them until the chocolate sets, about 30 minutes. You can double dip the cherries if you still have leftover chocolate.
Store the chocolate covered cherries in a cool dry place. It will take about a week for the fondant to fully melt and become liquid.

Tips for Making Chocolate Covered Cherries
The most important thing for making chocolate covered cherries is to keep the candy at the right moisture level during each stage of the process. If the cherries or fondant are too wet or too dry when you try to put the two together it won't stick. Don't be afraid to have a little extra powdered sugar on hand to dust on the fondant.An easy way to dry the candies in between stages is to lay the cherries out on waxed paper in a plastic container. Then, put the container in the refrigerator with the lid off for a few hours.
It is easy to melt the chocolate in a microwave but you can also make a double boiler out of two pots. Select two pots, one slightly larger than the other. Add water to the larger pot and then put the second pot on top. Simmer the water gently and gradually add chocolate to the top pot. It should melt slowly without burning.
Make sure the cherries and fondant are completely covered by chocolate. If not, all of your juicy sugary goodness will leak out of any holes once the fondant melts.
Chocolate covered cherries are best when they are a few weeks old. Store them in a cool dry place and allow the fondant to melt, which will make the sugar liquefy inside.
If you have trouble keeping the dipped candy neat, put each candy into small paper candy cups to keep it contained.

Tasty Toppings for Chocolate Covered Cherries
When the cherries are still covered in fresh wet chocolate, sprinkle one (or more) of the following on top:Jimmies in red, pink, white, or more chocolate!
Crushed nuts
Nonpareils, either in Valentine colors or traditional silver
Tiny candies made for cupcake toppings, such as heart shaped ones.
If you are skilled with icing, you can pipe a tiny flower on top of each candy
Drizzle darker or lighter chocolate on top in a swirl or zig-zag pattern

Candy Making Supplies
Ideas for Wrapping and Presenting Your Sweet Treats
Homemade chocolate covered cherries can be a bit delicate, so take care in packaging them for your sweetie.Paper candy cups are available at party supply stores, or almost any craft store that sells candy making supplies.
If adding more than one layer in a box, use thin cardboard in between the layers to keep the candies stable. Cut the square to fit and then cover it with foil or colored paper to make it pretty.
Keep it simple: get a decorative tin or box from the dollar store and line it with waxed paper. Line your candies up inside and you're done!
Beware of gift bags or any other loose, soft packaging. The candies could burst and become a gooey mess inside.
