- 2A personalized "fortune" - a message of love with a special meaning for your sweetheart. (See the love notes here for inspiration.)
- 3An appropriately romantic setting to serve your Sweetheart Fortune Cookies. Perhaps with champagne by candlelight? While you're strolling under the stars? Personalized fortune cookies to mark your Big Day? What a great way to break the ice among the guests at your reception!
Basic Fortune Cookies Recipe
- Serves: 12 -14 cookies
Ingredients
- 2 egg whites
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 3 Tbsp vegetable oil
- 1/2 cup all-purpose flour
- 1/2 cup white sugar
- 1 1/2 tsp cornstarch
- 1/4 tsp salt
- 1 Tbsp cold water
Instructions
Prepare your custom "fortunes" or love notes on small slips of paper, ahead of time. Cut each slip of paper about 1/4 to 1/3 inch wide by about 3 1/2 or 4 inches long.
Preheat the oven to 350°F,
and spray two small baking sheets with cooking oil.
Method
- Whisk the egg whites until they're frothy, then whisk in the vanilla extract, almond extract, and vegetable oil.
- In a second bowl, sift together the flour, sugar, cornstarch and salt, then stir in the cold water.
- Gradually add the flour mixture to the egg-white mixture, whisking vigorously until the cookie batter is very smooth.
- Drop a level tablespoon of cookie batter onto a prepared baking sheet, and use the back of a spoon or a small spatula to spread it out into a circle about 31/2 or 4 inches across.
- Several inches away, repeat with another tablespoonful of batter to make a second cookie, and perhaps a third if you're confident about your Fortune Cookie-folding skills.
Note: If this is your first try at making Fortune Cookies, start with baking just 1 or 2 cookies at a time, as you'll need to work quickly to fold the cookies before they cool, and they do cool down very quickly! - Bake 12 to 14 minutes - just until the edges of the cookies begin to turn a golden colour.
- Use a spatula to remove the cookies one at a time from the baking sheet, and fold as directed below.
- Repeat the process until you've used up all the batter. (Make sure that your baking sheet is cool and well greased, each time!)

How to Fold a Fortune Cookie
Wearing cotton gloves to protect your hands from the heat, lay the cookie flat on your hand and place a paper fortune on it.
(This will go better if you flip the cookie upside-down from how it was sitting on the baking sheet - the side that was against the baking sheet will now be facing up as it sits on your hand.)
Fold the cookie in half, over the paper fortune, and press the edges together.
This gives you a half-moon shape.
Lay the folded, straight edge of the cookie across the handle of a wooden spoon (or the lip of a cup or bowl - your choice) and press the tips of the cookie gently downward and together, to form the traditional Fortune Cookie shape.
Work quickly, so the cookies don't crack!
Set each Fortune Cookie into a muffin pan cup, to help it to hold its shape while it cools and hardens, while you quickly move on to folding your next cookie.
Finding it hard to picture exactly how to do this? No problem! Have a look at the video, How to Make Fortune Cookies!, below - Max Rumaner will walk you through the whole process.
Colorful Fortune Cookies
Stir a few drops of food coloring into the batter to tint your Fortune Cookies any color of the rainbow.

Chocolate-Dipped Fortune Cookies
Chocolate-Dipped
Wedding Fortune Cookies

Chocolate-dipped Fortune Cookies are easy to do, whether you bake your own cookies from scratch or buy pre-made Fortune Cookies to personalize for your sweetheart.
Place pieces of chopped chocolate (milk chocolate, dark chocolate, semi-sweet, white chocolate... whatever you have on hand) or chocolate chips in a small microwave-safe bowl. Heat at low power just until you see the chocolate start to develop a bit of a shine. When you can see some of the chocolate is starting to melt, stir it to distribute the heat and melt the rest of the chocolate pieces. Dip an end of edge of each Fortune Cookie into the chocolate, and place on a rack to cool and dry.
The timing will vary according to the type of chocolate you use and the power of your microwave. Check it every 10 seconds or so - it's really important not to get it too hot or the chocolate will "seize" and get lumpy and hard. If this happens, stir in a few drops of vegetable oil. That will often bring the chocolate back to a smooth dipping consistency again.

Quick Tips for Successful Homemade Fortune Cookies
The recipe Max Rumaner uses in his cooking demo is very close to my Basic Fortune Cookies recipe, although the method he follows is a bit different from mine. For example, I whisk the egg whites separately, first, and sift the dry ingredients before adding them - the smoother the batter, the better the texture of your Fortune Cookies and the more easily they'll fold without cracking.Max folds his cookies over the lip of a cup, while I usually fold mine around a wooden spoon - but that's just a matter of personal preference. Go with whatever makes it easy for you to get that second fold.

But we're in total agreement on the idea of setting the Fortune Cookies into muffin cups to help them hold their shape while they cool. Some people sort of hang their cookies over the edge of a bowl, but that's just never worked well for me.
You will see that Max wears a pair of close-fitting cotton gloves to protect his hands from the heat when he's folding the hot Fortune Cookies just out of the oven. I couldn't find my kitchen gloves, the last time I made Fortune Cookies, so I handled the hot cookies with a folded piece of parchment paper. It worked okay, but trust me - the gloves are much easier. Unless you're good at juggling.
First, Whisk the Egg Whites...
Cuisinart CSB-77 Smart Stick Hand Blender with Whisk and Chopper Attachments
Amazon Price: $46.95 (as of 06/03/2012)![]()
This well-made kitchen gadget is a lot of value for a very low price. It's easy to use, easy to clean - that's a biggie! - and has a surprising amount of power behind it. When you can't spare the cash or the counter space for a lot of different small appliances to do a lot of different small cooking tasks, a good stick blender with chopper and whisk attachments is, I have found, a very practical tool to have in your kitchen.
Sift the Dry Ingredients...
OXO Good Grips Flour Sifter
Amazon Price: $12.95 (as of 06/03/2012)![]()
No fiddly bits to get jammed up or gunked up. You just measure in your dry ingredients, remove the lid on the bottom, and shake the sifter from side to side over your mixing bowl. It's as simple as that. And you can do your sifting with one hand, while you're stirring in the dry ingredients with the other hand. How efficient is that? Dishwasher safe, too.
A Few Little Baking Helpers
Do Your Fortune Cookies Stick to the Pan?
Try a SlickMat baking mat

Photo: meh by Rick Harris, on Flickr
Two of my cookies sheets are (sigh!) the wonderful Paderno, and I can count on them to give me a good result every time. My third cookie sheet? Not so much...
That third pan is so old, I think there's part of Methusaleh's goat baked into the corners, and even a heavy greasing won't keep baked goods from sticking. But it's a good heavy baking sheet (the kind it's hard to get these days without paying a mint) and still far too good to get rid of, so I've started lining it with a silicone baking mat - instant non-stick surface, yay!
Cuissential SlickMat Non-stick Silicone Baking Mat
Amazon Price: $17.99 (as of 06/03/2012)![]()
The silicone baking mat gives any pan a non-stick surface. "No more grease or parchment paper!" Also handy for rolling out pie crust - you just pick up the mat and flip the crust into the pan, no sticking or stretching. To clean, just slosh it off with a cloth and soapy water.

- Mine will say, "Always and forever." I haven't yet made sweetheart fortune cookies, but I have made them for my graduate students. On the last night of class, we met at a Chinese restaurant to celebrate our semester. I created a customized fortune for every student. Can't wait to expand on the possibilities with your great ideas here. Thanks!

- Usually my fortune cookies don't make senses thanks to bad and cheap translation to French. I love them, not for the little note but for the taste. With Jasmine tea it's delicious

- I don't know yet. We have our own little codes, so maybe "You're my moon!" She'd understand. Something simple and sweet. If I dip them in chocolate, she may not care what the note says anyway.

- I feel the need to share an interesting fortune cookie story. Prior to my husband and I dating, we were friends and I was looking for a car ... it was an arduous task. We'd begun early and were still out looking at lunch time so we popped into a Chinese restaurant for a bite. The host seated us at a little corner table that caused us to sit on adjoining sides with the table corner between us, rather than across from each other as we normally would have. A the end of lunch came the predictable fortune cookie, but with an interesting/unpredictable fortune inside. When I opened it the fortune read "Happiness is sitting right next to you" and that fortune cookie was right. We've been together for over 20 years and married for nearly 17 years of that time; we're still VERY happy :)
