Chocolate-dipped Fortune Cookies are easy to do, whether you bake your own cookies from scratch or buy pre-made Fortune Cookies to personalize for your sweetheart.

Place pieces of chopped chocolate (milk chocolate, dark chocolate, semi-sweet, white chocolate... whatever you have on hand) or chocolate chips in a small microwave-safe bowl. Heat at low power just until you see the chocolate start to develop a bit of a shine. When you can see some of the chocolate is starting to melt, stir it to distribute the heat and melt the rest of the chocolate pieces. Dip an end of edge of each Fortune Cookie into the chocolate, and place on a rack to cool and dry.

The timing will vary according to the type of chocolate you use and the power of your microwave. Check it every 10 seconds or so - it's really important not to get it too hot or the chocolate will "seize" and get lumpy and hard. If this happens, stir in a few drops of vegetable oil. That will often bring the chocolate back to a smooth dipping consistency again.

Pay particular attention to the consistency of these cookies before baking - it's more of a batter than a dough, very loose and spreadable. Actually, Max's cookie batter may be a bit more liquid than mine, perhaps due to a little "oops' with the almond extract... but, these things happen to the best of cooks.

Quick Tips for Successful Homemade Fortune Cookies

You are my Fortune CookieThe recipe Max Rumaner uses in his cooking demo is very close to my Basic Fortune Cookies recipe, although the method he follows is a bit different from mine. For example, I whisk the egg whites separately, first, and sift the dry ingredients before adding them - the smoother the batter, the better the texture of your Fortune Cookies and the more easily they'll fold without cracking.

Max folds his cookies over the lip of a cup, while I usually fold mine around a wooden spoon - but that's just a matter of personal preference. Go with whatever makes it easy for you to get that second fold.

But we're in total agreement on the idea of setting the Fortune Cookies into muffin cups to help them hold their shape while they cool. Some people sort of hang their cookies over the edge of a bowl, but that's just never worked well for me.

You will see that Max wears a pair of close-fitting cotton gloves to protect his hands from the heat when he's folding the hot Fortune Cookies just out of the oven. I couldn't find my kitchen gloves, the last time I made Fortune Cookies, so I handled the hot cookies with a folded piece of parchment paper. It worked okay, but trust me - the gloves are much easier. Unless you're good at juggling.

First, Whisk the Egg Whites...

This is the one kitchen gadget that I use almost every day, and can't imagine doing without - a tough little stick blender that doubles as a chopper and a whisk. Yes, absolutely, I do use a hand whisk for a quick froth, say, for example, when making scrambled eggs. But for seriously whisking - like getting those egg whites good and frothy for making Fortune Cookies - I just pull out the convenient Cuisinart Smart Stick and save my strength for more fun stuff.

This well-made kitchen gadget is a lot of value for a very low price. It's easy to use, easy to clean - that's a biggie! - and has a surprising amount of power behind it. When you can't spare the cash or the counter space for a lot of different small appliances to do a lot of different small cooking tasks, a good stick blender with chopper and whisk attachments is, I have found, a very practical tool to have in your kitchen.

Sift the Dry Ingredients...

Yes, when you're making Fortune Cookies, it is well worth sifting the dry ingredients before you mix the batter! But... if you're like I used to be, sometimes you don't want to bother, even when a recipe calls for sifted flour, because it's just a big hassle. I used to use a sieve over a bowl for sifting - now there's a mess waiting to happen! - and my mother has an old hand-crank sifter that you have to take apart to clean. No question, this OXO sifter is a much more sensible design.

No fiddly bits to get jammed up or gunked up. You just measure in your dry ingredients, remove the lid on the bottom, and shake the sifter from side to side over your mixing bowl. It's as simple as that. And you can do your sifting with one hand, while you're stirring in the dry ingredients with the other hand. How efficient is that? Dishwasher safe, too.

Do Your Fortune Cookies Stick to the Pan?

For best results, it's important to make sure your cookie sheet is cool when you start laying out your Fortune Cookies, so that means pulling at least two cookie sheets into play and rotating between them. Maybe three, if you're getting good and fast at folding your cookies and don't give the pans a chance to cool down.

Two of my cookies sheets are (sigh!) the wonderful Paderno, and I can count on them to give me a good result every time. My third cookie sheet? Not so much...

That third pan is so old, I think there's part of Methusaleh's goat baked into the corners, and even a heavy greasing won't keep baked goods from sticking. But it's a good heavy baking sheet (the kind it's hard to get these days without paying a mint) and still far too good to get rid of, so I've started lining it with a silicone baking mat - instant non-stick surface, yay!

The silicone baking mat gives any pan a non-stick surface. "No more grease or parchment paper!" Also handy for rolling out pie crust - you just pick up the mat and flip the crust into the pan, no sticking or stretching. To clean, just slosh it off with a cloth and soapy water.

    Mine will say, "Always and forever." I haven't yet made sweetheart fortune cookies, but I have made them for my graduate students. On the last night of class, we met at a Chinese restaurant to celebrate our semester. I created a customized fortune for every student.     I feel the need to share an interesting fortune cookie story. Prior to my husband and I dating, we were friends and I was looking for a car ... it was an arduous task. We'd begun early and were still out looking at lunch time so we popped into a Chinese restaurant for a bite. The host seated us at a little corner table that caused us to sit on adjoining sides with the table corner between us, rather than across from each other as we normally would have. A the end of lunch came the predictable fortune cookie, but with an interesting/unpredictable fortune inside. When I opened it the fortune read "Happiness is sitting right next to you" and that fortune cookie was right. We've been together for over 20 years and married for nearly 17 years of that time; we're still VERY happy :)
