Make your own flavored syrups from scratch. It's not hard and the flavor possibilities are endless. After buying a bottle of lavender soda I decided to research lavender syrup recipes to see how hard it would be to make my own. I found a fascinating world of not just fruit and chocolate syrup, but flower, herb and spice syrups as well. Here are the recipes I've collected.

Real Maple Syrup

You may be wondering how to make maple syrup. Well, you need a stand of maple trees, the end of winter, and a lot of patience for watching a pot boil. Real maple syrup is much different than the maple-flavored syrup most of us Americans put on our pancakes. It is thinner and has a lighter flavor, almost flowery.

To make one gallon of syrup you need 40-60 gallons of sap, depending on the kind of maple tree it is and the sugar content of the sap. It can take hours to boil it down.

In the 1800s there was a large tariff on cane sugar and so maple syrup was an important industry for the northeast United States and Canada. Along with honey and molasses it was a primary sweetener. Once the tariff was lifted in the late 1800s the face of the food industry and how we sweeten things changed overnight.

Phosphate Soda Fountains

Before there were coffee shops to get Italian sodas at, there were soda fountains where you could get a "phosphate" made with sparkling phosphate soda and a flavored syrup. As a little girl in the 1960s I'd go with my dad and get a cherry phosphate at the soda fountain in the local drugstore on Saturday afternoons. Later, when I was a teenager working there, I served up not only cherry cokes but chocolate and vanilla as well.

It wasn't until I was researching this lens that I learned more about what phosphate really is and how phosphoric acid is being discouraged from being used in bottled soft drinks for health reasons. See more about that here: Phosphate Soda Recipes

The Inspiration for This Lens

I tried a bottle of this and although I liked it, the lavender taste was barely there and I thought I could probably do a better job by making my own lavender syrup. From that this lens was born.

    Well, these all sound wonderful. We were brought up on Golden Syrup, and here in France they sell some sort of syrup in bottles, but when I discovered that it was just burnt sugar, (I discovered it the hard way!!), I now make it myself. I just had no idea that it could be more than just 'burnt sugar'. I've added this to my Make Pancakes lens.

    As a kid in Mississippi ( during the syrup dark ages decades ago), COUNTRYLUTHIER had molasses and syrup, and nothing flavored about em. This lens is great. I can have a flavor for each day of the week and beyond! Thanks for the inspiration and for sharing soooo much!!!

    Years ago my Mom's chokecherry jelly didn't set up for some reason and we were disappointed until we used it as syrup...it was the best ever! This is yummy and beautiful!
