Easy Vegetarian Taco Casserole Recipe

A Quick Easy Microwavable Vegetarian Recipe

This is a quick, easy and delicious Taco Casserole Recipe. You can start fixing dinner 1/2 hour or less before you're ready to sit down and eat it, because it takes 15 minutes or less to prepare, and 15 minutes in the microwave on high to cook. Cooking in the microwave means that your kitchen doesn't get heated up on hot summer days. It also saves time any other time of year.

Taco Casserole is a favorite with my family. Like so many of the recipes I use, this one evolved over time into what it is today, and is not copied from any other recipe, any similarity is coincidental.

Here's a Picture of my Ingredients

One important item is missing, the can of red kidney beans

Ingredients include:

- 6-8 corn tortillas
- 2-3 eggs
- Salsa as hot or mild as you like it
- 1 small can chopped green chilies
- Fresh or dried cilantro (I use dried organic)
- Chili powder
- 1 can of red kidney beans (not pictured)
- Shredded taco blend cheese or sharp shredded cheddar
- About 1/4 Cup of Milk
- Optional: Can of Organic Corn, drained

Tear corn tortillas into pieces, put in casserole dish sprayed w/ non-stick spray

6-8 Tortillas for this recipe for 3-4, depending upon portion size

Add 2 eggs/egg whites, salsa, chopped green chilis

Egg whites w/out yokes decrease cholesterol significantly

Add 1 T. Cilantro and 1 T. Chili Powder

You can adjust this to taste if you like

Rinse and add 15 oz. can of Red Kidney Beans + 1/2 c. shredded cheese + 1/4 cup milk, stir

Are you Lactose Intolerant like me? Use Organic Soy Milk instead of Milk.

Optional: Can of Organic Corn

Why I choose Organic

If you add a can of organic corn, it will add more fiber, moisture, and will increase quantity so it should make 4 moderate portions. I am making this recipe tonight at this typing and will be adding corn, 1 can, drained.

I make a special effort to get corn and products that contain corn in organic form because it is one of the foods that is highly likely, unless organic, to be Genetically Modified - a GMO Food.

Top with remaining shredded cheese and sprinkle lightly with chili powder and chopped cilantro

Microwave on high about 15 minutes until top looks something like this

I just purchased some food online today, and the price was better than my supermarket. Compare prices with your supermarket and see if this works for you. We keep several things in our Amazon cart that we like to buy in bulk, and watch for the prices to be where we like them when we order. They go up and down.     7.15am here, I was just wondering around the house looking for something to eat and now this lens just made me more hungry! I actually have tasted some yummy Mexican dishes before but have no clue what their names are :D...So I definitely will love this one, I can tell by the look of it and the ingredients are also yummy!
