Who loves tacos?

I can't say everyone does because it's guaranteed that, somewhere on this planet, someone does not love tacos. Truly, I cannot understand it because I love tacos!

There! It's out in the open! Now I can get on with my lens!

Seriously, tacos are good...and they are good for you, providing you have all the trimmings such as tomatoes, lettuce and shredded cheddar cheese. They are even better for you if you use lean ground beef.

They are also great if you experiment with the vegetables. I enjoy using peppers - any color, as long as they are not hot - and will sometimes substitute them for lettuce or tomatoes, depending upon what I feel like. Using tortilla shells instead of hard taco shells is another wonderful way to eat a taco.

I know a few things about tacos

If you've eaten them as many times as I have, it's likely you realize a few things as well...
  1. Tacos can be crunchy or soft, depending upon whether you use a shell or a wrap.
  2. Tacos can stand by themselves. Yes, it's true. You can have wide based tacos which can be filled comfortably and then eaten. They are not my preference, though...probably because my mouth is not that big. :)
  3. Tacos are colorful and appealing.
  4. Tacos are a kids' favorite...yes, adult kids, too.
  5. And, like anything else, there has to be a negative aspect. In the case of tacos, they can be really messy.

Do you disagree?

I didn't think so....

So...I came up with a solution.

“I asked myself how I could enjoy tacos without all the mess...”

And I came up with...

Taco Dip.

Years ago, when I first moved away from my parents - before moving to the barren land of white - I had the occasion to try something. I did not know what that something was but I knew that it was good...and I knew that I would want it again...but I didn't know who had made the appetizer that would come to haunt my life.

Sadly, through all the years of my life since then, I felt deprived; I never did learn what that something was...until, one day, I just had to try an off-the-wall idea that had only moments before floated through my head.

I latched on to it; I was not going to let it go. I thought for an instant,
"Perhaps, this is it!"

Guess what?
It wasn't exactly the recipe... but I'm no longer feeling deprived because it came really close!

But don't let the looks fool you...
This is delicious, tantalizing, mouth-watering...oh, the list goes on...but I'll stop here!

And I'm going to do for you what I wish someone had done for me years ago - I'm going to give you my recipe...and if you decide to try it, you must let me know what you think of it!

OK...since we just made a deal, here it is:

Sensational Taco Dip

First, here are the ingredients which can comfortably feed four people:

- 1 pound lean ground beef

- 1/8 teaspoon each of salt and ground black pepper
- 1/4 teaspoon meat tenderizer and onion powder
- 1/2 teaspoon ground cumin

- 2 diced peppers (your choice of color)

- 1 250 mL container Light Sour Cream
- 220 mL Mild Thick n' Chunky Salsa (or your preferred brand and strength)
- 2 cups double cheddar shredded cheese

- 1/2 package Tostitos or Tortilla chips.

“What do I do with the ingredients? I have an idea...but would like to be sure.”

Follow these steps...

  1. Fry ground beef on medium-high setting. Season with salt, pepper and spices. When finished, set aside on low heat until ready to use.
  2. Dice 2 cups of peppers and set aside.
  3. Place seasoned ground beef on a large serving tray/platter.
  4. Spread sour cream over ground beef. Hint: a moistened spatula works wonders.
  5. Spread salsa over sour cream.
  6. Sprinkle diced peppers on top of salsa.
  7. Cover the peppers with shredded cheese.
  8. Line the edge of the serving tray/platter with Tostitos or Tortilla chips of your choice. Hint: Rounds and restaurant style recommended!

    Of course, if there are time constraints, chips can be placed in bowls and people can opt for their chip of choice.

Another variation...

Add guacamole with the sour cream and black olives with the peppers; this was passed on by my brother who loves these two ingredients.

    Kel, your rendition was sooooooo spicy. If anyone wants to add a spicier touch - substitute the cumin for a package of Taco seasoning mix. IT will tantalize your taste buds, for sure.
