The tagines, a typical North African stew, are traditionally cooked in an earthenware pot, also called a tagine, but you can use a heavy lidded pan, or crockpot to make the tagines if you don't have a cooking tagine.

A combination of aromatic spices and long, slow cooking results in a wonderfully tasty tagine with succulent, tender meat which just melts in your mouth.


As well as being an unbelievably tasty meal, tagines recipes are economical too, the slow cooking means that less expensive cuts of meat can be used when making tagines. One of my favourites is a lamb shank tagine, slow cooked until the lamb is falling off the bone.

A Moroccan lamb tagine is probably the first thing you think of when you hear 'Traditional Tagine Recipe'

I would say that a lamb tagine is one of the most traditional moroccan tagines. The sweet flavour of the lamb combines well with the spices and fruits such as dates, prunes and apricots which are widely used in tagines recipes.

Lamb also lends itself well to the slow cooking generally associated with tagines recipes, giving a soft and tender meat which falls off the bone.

    I brought back a tagine from Morocco many years ago. It has aged wonderfully and makes the most wonderful meals. It's just a simple clay one and not the fancy beautiful ones they make now.

    I placed a link to this lens as a Featured Lens at my lens, "Everyday Exotic Spices". I watch a lot of cooking shows and the first time I saw Emeril use a tagine, I was hooked. I had never heard of them and since then everybody's recipe I come across that's prepared using a tagine makes me start salivating. I am conditioned! Automatic drooling when I even hear the word "tagine".
