Tahini Recipe Ingredients and Instructions
This dish makes enough tahini for two people.Ingredients:
2 heaping tablespoons of tahini paste (look for organic if possible)
5 - 7 tablespoons of water
1/2 lemon
1/4 - 1/3 cup of freshly sliced parsley leaves
Optional: I sliced up garlic clove
Instructions:
1. Place the tahini paste in a large bowl
2. Add the water to the bowl
(Less water for a creamier hummus-style texture, more water for a more traditional tahini recipe.)
3. Mix, mix, mix until smooth
(This can get sticky, but keep mixing the water with a fork or spoon until you get an even consistency. This will take up to five minutes.)
4. Squeeze the lemon into the bowl and mix it with the tahini
5. Add the chopped parsley leaves
6. (Optional) Add the chopped garlic
7. Mix one more time
8. Serve on whole wheat bread/ pita / falafel or as a veggie dip for celery, carrots, etc.
Note: I think this tahini recipe can be made in a food processor, but I've never tried to make it that way.

Tahini Facts on Wikipedia
Tahini (Arabic tahina: ?????), zhimajiang (???), nerigoma (????), ????? (tahina or thina'' - Hebrew), Tashi (?????) in Cyprus or sesame paste is a paste of ground sesame seeds used in cooking. Middle Eastern tahini is made of hulled, lightly roasted seeds. East Asian sesame paste is made of unhulled seeds.
Tahini is a major component of hummus bi tahini and other Middle Eastern foods. It is sold fresh or dehydrated.
Sesame paste is an ingredient in some Chinese, Korean, and Japanese dishes; it is used in some versions of the Szechuan dish Dan dan noodles. Because East Asian sesame paste is made from unhulled seeds, it is more bitter than tahini.
The Tahini-Hummus Relationship
Tahini is a key ingredient in hummus.

Warning!
If you're allergic or sensitive to sesame seeds or nuts, it could be a bad idea to eat tahini. Check with your doctor if you're not sure.
