What games do you play while waiting for the big football game to start? In this part of the country, southeastern USA, most folks like to play corn hole or bean bag toss. Checkers, Scrabble, card games, sports trivia and other board games are also popular with tailgaters! Wave the flag for your favorite NCAA football team!

Ham Delights!
You absolutely must have ham sandwiches to tailgate properly!
In the Tate family cookbook, our "Meme" called these "Football Sandwiches"Sauce ingredients:
2 sticks butter
3 tablspoons dried mustard
1 teaspoon Worchestershire sauce
1 Tablespoon sesame seed
1 Small grated onion
Thin slices of ham
Sliced swiss cheese
Mix melted butter with all sauce ingredients in pan. Spread mixture on onion buns. Stack thin slices of ham and a slice of swiss cheese on each bun. Wrap in foil. (You can freeze at this point.) Heat before serving. 400 degrees for ten minutes.
These will stay hot for a long time wrapped in the foil. Great for those cold football game days!

We call this "trash" but it sure tastes good!
Another from the Tate Family Cookbook
Ingredients:6 Tablespoons margarine
1 teaspoon All Seasoned salt
4 teaspoons Worcestershire sauce
2 cups Corn Chex
2 cups Rice Chex
2 cups Wheat Chex
1 1/2 cups salted mixed nuts
Melt margarine in shallow pan over low heat. Stir in seasoned salt and Worchestershire sauce. Add all cereal and nuts. Mix until all pieces are coated. Heat in 250 degree oven for 45 minutes. Stir every 15 minutes. Spread out on absorbent paper to cool.
Better make 2 or 3 batches of this! It disappears fast!
PS - sometimes we add pretzels and cheerios!

"Somebody Loves You" Cheeseball - from the Tate Family Cookbook
Add a box of Ritz or Triscuits. This is delish!
Ingredients:2 eight oz pkgs cream cheese
1 seven oz can crushed pineapple - drained
1/4 bell pepper
1 Tablespoon onion, chopped very fine
1 Tablespoon seasoned salt
1 Cup Pecans, finely chopped
Combine all ingredients and shape into a ball. Roll in additional pecans. Chill in refrigerator overnight!
Note: Sometimes I make two small cheeseballs instead of the one large one. This allows for easier serving to a large group.
Don't forget to pack a little spreading knife for each one!

Tailgate With Chocolate Chip Cookies!
Hmmmmmmm Good!
$250 NEIMAN-MARCUS COOKIES
2 C butter
2 C sugar
2 C brown sugar
4 eggs
2 tsp.vanilla
5 C oatmeal (measure then grind in blender to a powder)
4 C plain flour
1 tsp.salt
2 tsp.soda
2 tsp.baking powder
24 oz choc. chips
8 oz. Hershey bar (grated)
3 C nuts (your choice)
Cream butter and sugars, add eggs and vanilla. Mix together with combined dry ingredients. Fold in chips, hershey bar and nuts. Bake 2" apart on cookie sheet.
375 degree oven for 10 minutes.
approximately 112 cookies.

Buffalo Chicken Dip
INGREDIENTS:
8 oz. pkg. cream cheese
1/2 cup blue cheese or ranch salad dressing
1/2 cup Frank's RedHot Original
1/2 cup crumbled blue cheese or shredded mozzarella cheese
2 cans (9.75 oz. each) Swanson White Premium Chunk Chicken Breast
DIRECTIONS:
HEAT oven to 350 degrees. Place cream cheese into deep dish 9-inch pie plate. Microwave 1 min. to soften.
WHISK in salad dressing, Frank's RedHot Sauce and cheese until smooth. Stir in chicken.
BAKE 20 min. or until mixture is heated through; stir. Garnish as desired. Serve with crackers or vegetables.
Microwave Directions: Prepare as above. Microwave, uncovered, on HIGH 5 min. until hot, stirring halfway through cooking.
Tailgating Tip: Prepare dip ahead and place in heavy disposable foil pan. Place pan on grill and heat dip until hot and bubbly.
Shortcut: I work with Swanson's so I use their canned white meat chicken!

TAILGATE FRESH SALSA
1 16 oz. bag frozen Corn, thawed - room Temperature
15 oz. can Black Beans
1 Small Red Pepper - diced
1 Small Green Pepper - diced
1 Small Red Onion - chopped
1 bunch fresh Cilantro - chopped
1 Jalapeno Pepper - cord and diced (0ptional)
2 Tes. Chili Powder
2 Tes. Cumin Powdeer
1 Tes. Salt
1.4 C. White Vinegar
1/2 C. Vegetable or Light Olive Oil
4 to 5 Large Fresh Tomatoes - diced.
4 to 5 Limes (squeeze out juice)
1 Bag of Tortilla Chips. I like Scoops
Combine all ingredients, leaving the tomatoes last so you won't mush them up.
I also leave the limes until the end. Add lime juice for your own particular taste. I like lots of lime.
Chill for about 2 hours before serving. This keeps in the fridge for a couple of days.
Pack it up for a tailgate party%u2026 You'll make a touchdown with this recipe.
Lime Tip: heat the limes in the microwave for about 30 seconds or so%u2026 or until warm.
Roll the limes on a hard surface with the palm of your hand until they feel soft. This process breaks down the juice buds so you'll get more juice from your limes when you squeeze it into your salsa.

Amy's Crock Pot Beef and Cheese Dip; also Pasta Salad for game day!

Crock pot beef and cheese dip:Brown 1lb of ground beeg
add packet of onion soup mix to the ground beef while you are browning it.
Add a container of salsa (I use mild but you can use med. or hot depending on how hot you want the dip.)
1 big block of velveeta cheese
Turn crock pot on low for an hour and let it all melt together, and add beef to cheese and salsa when the beef is done cooking.
Pasta Salad for Game Days!
Boil 2 lbs of penne pasta. Run cold water over it while you are straining it, let cool. Use a bag of shredded carrots, 2-3 cans of black pitted olives, a big container of crumbled feta cheese, 1 green pepper cut up , yellow pepper cut up and add cooked broccoli if you would like. Sometimes I also have added cooked grilled chicken breast cut up. Then I add salt, garlic powder (a lot), oil (vegetable) because olive will solidify in the refridge, and white cidar vinegar (a lot of both the oil and vinegar because the pasta will soak it up). I usually make the pasta a day or 2 before the game so it is really tasty . The longer it sits in the dressing the more flavor it has. It also can sit out in the sun for a good period of time because the oil and vinegar aren't going to go bad, but I usually place a ice pack under it since the feta is in it.

Leslie's Tailgate Onion Dip
Gamecock Contribution - Thank you, Leslie!
1 package frozen onions
3 packs cream cheese softened
1/2 c mayo
1 pack shredded parmeson cheese
Mix together with mixer.
If you wish, add 2 cans of crab to take to next level,,,, um
350 for 30 min
You can take to the game in a small crock pot to keep it warm.
Serve with crackers or tortilla chips.
Makes a ton, can freeze half for next game
Taco Soup
from Sister Betty! Thank you, BR!
TACO SOUP
2 cans of diced tomatoes (reg. size cans)
1 can black beans
1 can dark kidney beans
1 can kernel corn
2 frozen chicken breast
1 package of Taco Seasoning
Mix all ingredients (do NOT drain beans or corn) in a crock pot and cook for 8 hours. Take chicken out and shred it then put back in the soup.
Serve with shredded cheese and sour cream on top.
Totistos Chips or Fritos on the side.
If you want the soup spicy, use the hot taco seasoning and add some Rotel. You can also use chicken thighs instead of chicken breasts if you prefer. (And I would probably add cooked ground beef....b.)

Your "trash" snack has been at the back of my mind since I first read this lens. I finally got around to making it, used peanuts and cashew halves for the nuts then added the pretzels (added them after the seasoned salt because they bring their own saltiness to the party), and it turned out great!
Everyone agreed that this was better than the pre-made snack you can buy at the store (my dad thinks there's too much Worcestershire sauce in the store bought).
Didn't calculate the economics, but I made 2 baking sheets' worth, and have plenty of left over ingredients to make more.

Sorry that I root only for the real U.S.C, but I still loved this lens with great recipe ideas. Try this one for the grill.Take two equal size burger patties and put Gorganzola or Bleu cheese in between them then pinch and seal the patties together. Lightly season with Fresh black pepper and a pinch of sea salt. Top with thick sliced smoked or maple bacon and Avocado. Now that's a Trojan burger to die for! 5 stars on your lens even though it's for Clemson and the other USC.
