Our Dream Begins - The Tangerine...

Named after Tangiers, the port city in North Africa from which this marvelous citrus fruit was originally shipped to the United States, the tangerine belongs to the mandarin orange family and is native to the Far East.

A good-quality tangerine is a firm fruit, somewhat heavy for its size, sweet, juicy, and easy to peel. Varieties include the very sweet Honey, Sunburst, Fairchild, and Dancy tangerines. In the Northern Hemisphere, the short peak season lasts from November to January.

Tangerines are a tremendous source of Vitamin C, folate, beta-carotene, potassium, magnesium, and Vitamins B1, B2, and B3.

Ginger Root - Warm, Sweet, Fiery, Pungent 

Fresh, dried, pickled, crystallized - culinary ginger comes in many forms...

The discovery and use of ginger in China and Arab countries dates as far back as 650 A.D.. It was known in Western Europe since the ninth century.

The whole raw root is called a "hand". It has a brown to off-white skin and a pale yellow interior color.

In my culinary dreams I envision a multiple wedding of some of the greatest flavors available to us - sweet citrus, a touch of sour and bitter, spicy heat, pungent warmth...add the tremendous boost of vitamins and minerals, a multitude of healing properties, and a melodious name - Tangerine Ginger - and you feel enrobed with natural goodness. That's why.

Essential Oils As Flavoring Ingredients

Essential oils are very powerful herbal extracts. Some of them are recommended for external use only. Others can be applied to the skin in diluted form (mixed with a good olive oil), inhaled through a mister, ingested as a tincture, or blended with food.

Roasted Salmon With A Balsamic Tangerine Ginger Glaze 

Doesn't it sound good already?

6 salmon fillets with skin, 5-6 oz/each

For the glaze:

1/2 cup Agasweet Tangerine Ginger
3 Tablespoons balsamic vinegar
1 Tablespoon olive oil
2 cloves garlic, finely minced
1/2 teaspoon salt

Season the flesh side with salt and pepper to taste. Place fillets skin side down in a shallow baking pan. Roast at 500 degrees F, for 5 minutes.

Thoroughly whisk the ingredients for the glaze. Drizzle 1 Tablespoon over each fillet and return to the oven for 2-5 more minutes at 500 degrees F. Remove the fillets to serving plates and drizzle again 1 tablespoon of the glaze over each fillet.

The citrus-fruity sweetness compliments the rich salmon perfectly.

Scrumptious Satay Sauce With Tangerine Ginger 

Peanuts never tasted that good!

Here's what we need:

4 rounded teaspoons peanut butter
3 Tablespoons soy sauce
3 Tablespoons Agasweet Tangerine Ginger
1 clove garlic, crushed
1 teaspoon red pepper flakes (optional)
juice of 1/2 tangerine (or orange)

Over medium heat, in a sauce pan - bring all ingredients to a slow simmer while stirring to combine well.

Serve as a dipping sauce for chicken skewers or fried shrimp.

Tangerine Ginger Agave Figs With Goat Cheese And Pecans 

What can I say?... Heaven!

1 cup chopped pecans
1 log (6 oz) goat cheese
12 fresh figs (Calimyrna, Black Mission), halved
3/4 cup Agasweet Tangerine Ginger
sea salt and freshly-ground black pepper

Season the pecans with salt and pepper and place in a shallow dish. Roll the goat cheese to cover evenly with the nuts; refrigerate to firm, then cut into rounds.

Divide the figs between 6 dessert plates and top with a round of goat cheese. Drizzle 2 Tablespoons of Agasweet Tangerine Ginger over each serving. Serve immediately.

A Note On Cooking With Essential Oils 

A beautiful and wholesome way to enhance your dishes..

Essential oils are much more potent than herbs and dried spices. Start with a drop or two, and taste your dish before you add more.

Be safe and sure about the quality of an essential oil. "Perfume-grade" is NOT safe for consumption. Look for "therapeutic-grade" oils, and when in doubt, consult with a knowledgeable attendant. Good essential oils cost some more money, but due to their potency they'll last a long time.

In general, use essential oils mixed with other liquid ingredients of your dish, so it can be well dispersed and won't concentrate in one spot. Salad dressings, soups, sauces, stews, drinks - these are all ideal media for the addition of a few drops of pure essential oils.

So - What Can You Do With T&G Essential Oils In Your Kitchen? 

A few gourmet ideas on Tangerine Ginger...

  • Salad Dressings
    Add a few drops of T&G essential oils to your favorite homemade or store-bought dressings for a definite gourmet touch.
  • Appetizers
    Enhance your dips, mayos, and sauces for appetizers with a drop or two of T&G essential oils. Your guests will be surprised and curious.
  • Meats
    Any marinade or gravy will improve tremendously with a couple of drops of T&G. You add a "secret", subtle ingredient for an interesting accent.
  • Fish & Seafood
    A marriage made in heaven - Tangerine and Ginger are perfect with seafood. Blend a few drops into the sauces or melted butter.
  • Steamed Vegetables
    Add a few drops to the steaming liquid (water or wine) and your dish will be fragrant with our two dream flavors.
  • Desserts
    Mmmh...ice cream and custards enriched with essential Tangerine and Ginger oils - phenomenal! Add a drop to cream before whipping it - outstanding!

Strawberry Short Cake With Tangerine Ginger Agasweet 

Much healthier than the refined sugar version...

Strawberry Shortcake

4 cups sliced strawberries
1/2 cup Agasweet Tangerine Ginger

Shortcake:
13/4 cups all-purpose unbleached flour
1 Tablespoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, chilled and cut into 1/2 inch cubes
3/4 cup cream
1 Tablespoon Agasweet Tangerine Ginger

Whipped cream:
1 cup heavy whipping cream, chilled
1/4 cup Agasweet Tangerine Ginger

Mix strawberries with Agasweet T/G, set aside.
Combine dry ingredients for the cakes; cut the butter pieces into the dry mix with a pastry cutter until it resembles coarse crumbles;
make a well in the center and add cream and Agasweet; make a soft dough.
Roll out dough and cut round cakes with a biscuit cutter;
brush the tops with milk and bake at 400 F until golden brown, about 15 min.

Add Agasweet Tangerine Ginger during the last few seconds of whipping the cream.

Spoon strawberries over cakes and top with whipped cream.
