About Taramosalata
Taramosalata is actually a spread well known in Greece, Turkey and Cyprus that is prepared from fish roe, freshly squeezed lemon juice, vinegar, olive oil, and either soaked bread or potatoes. This spread is often provided together in a Cyprus meze, or with appetizers, that often can involve a variety of smaller, light dishes that are consumed in advance of supper or with a number of glasses of wine or ouzo.
Depending on what sort of fish roe is involved, taramosalata can be creamy white to brilliant pink. Considering that a lot of people became familiar with brilliant pink taramosalata, it's not necessarily rare for commercial suppliers to color their taramosalata with food color to produce the required coloring.

How To Prepare Taramosalata
Taramosalata is traditionally made out of taramas, the salted roe of the cod or carp. The roe is either mixed with bread crumbs or mashed potatoes. Parsley, onion, lemon juice, olive oil and vinegar are added and it is seasoned with salt and pepper.
Depending on the type of roe used, the color of taramosalata can be different. You will find taramosalata in colors from beige to bright pink.
A similar dip is well known in Romania. But salata de icre, how it is called there, is usually made with hering roe and instead of olive oil, vegetable oil is used.

- Definitely not my favourite dip from the region. The versions I've had were made from potato and I don't like the taste of cold potatoes. Yup, it's the taters that turn me off, not the roe!
