Fish is Healthy Food and Delicious Too

Many children grow up not liking to eat fish which is a shame because there is no doubt that it is a healthy food for both children and adults. The best way to make sure your kids are happy to eat fish is to serve it to them as soon as you are weaning them.

If they eat it regularly before they develop food fads, there's a good chance they will grow up enjoying more fish dishes than mass produced fish fingers.

By experimenting with different recipes, you might find that the most confirmed fish-haters, both kids and adults, will find one or more dishes they like.

Fish Pie 

My fish pie

I shall give you recommended quantities of ingredients for this fish pie but you can adapt it to suit your family. This recipes uses white fish like cod but I often use smoked haddock instead because I think it gives more flavour. Use whatever fresh fish you can buy on special offer or is inexpensive because it is in season.

I adjust the quantities by instinct and experience, depending how many people I'm feeding. This recipe should produce 4 to 6 portions.

Ingredients
16oz white uncooked fish
32oz potatoes, boiled and mashed
1oz butter
1/2 cup milk
1/2 cup fish stock
3 tbs flour
4oz grated cheese
2tbs chopped parsley (optional)
Salt and pepper to taste

Method

1. Put the fish in a pan and cover with water. Bring to the boil and simmer for about 5 minutes. Drain off the water saving half a cup for the sauce.

2. When the fish is cool enough, remove any bones and use a fork to break the fish into flakes.

3. Melt the butter in a small pan. When it is melted stir in the flour with a wooden spoon. Keep stirring until the butter and flour are fully combined and have achieved a smooth consistency. Continue to cook the mixture (called a roux) over a low heat for 2 minutes.

4. Remove the pan from the heat and add half of the milk. Return to the heat but DO NOT STIR. Wait until the milk starts to boil then stir vigorously. You will see that the roux will take up the milk until it is fully absorbed. The roux will have expanded and will still be quite thick and smooth. If there are any lumps, keep stirring. Repeat this with the other half of the milk, then with the stock.

5. By the time the stock has been absorbed into the roux sauce, it will be much thinner. Now add 3oz grated cheese and stir in well. Season to taste and stir in the chopped parsley if used.

6. Mix the flaked fish into the sauce and put into and ovenproof dish, smoothing evenly over the dish. Now put the mashed potatoes on top and spread over the fish mixture. Draw lines all over the top with a fork, then sprinkle the remaining grated cheese evenly over the top.

7. Bake in a preheated oven (400 deg F or 200 deg C) for about 30 minutes or until the top is golden brown (I usually stand the dish on a metal oven tray in case the sauce leaks out). Serve hot with peas, carrots or other vegetables.

Healthier Fish Taco Recipe 

As these are grilled not fried, they are healthier than regular fish tacos.

Fish Cakes 

Ingredients
8oz white fish like cod or haddock, alternatively you can use salmon
16oz potatoes, boiled and mashed
1oz butter
1tbs chopped parsley
Beaten egg or milk for binding
dry breadcrumbs
1 beaten egg for coating with breadcrumbs
Salt and pepper to taste

Method
1. Put the fish in a pan and cover with water. Bring to the boil and simmer for about 5 minutes. Drain off the water.

2. When the fish is cool enough, remove any bones and use a fork to break the fish into flakes.

3. Mix the fish and mashed potato together and season with the salt and pepper. If the mixture is not holding together well, mix in a little milk or beaten egg. Be careful not to make the mixture too wet.

4. Shape the mixture into a roll on a floured board, about 3ins in diameter. Cut into 8 slices and, with your hands, shape them into fish cakes.

5. Dip each cake into the beaten egg on both sides then coat with breadcrumbs.

6. You can either fry them in a little oil or grill them.

Baked Mackerel

Mackerel is an oily fish and a very healthy food as it is high in omega 3 oils.

Ingredients

1 mackerel per person
1 tomato for each fish, sliced
Butter
Lemon juice
Salt and pepper to taste

Method

1. Cut off the heads and tails of the mackerels and clean them, if necessary - open them up and remove anything inside if the store hasn't already done so.

2. Prepare one piece of aluminium foil for each fish. It should be big enough that you can make a roomy packet of it and seal it by scrunching the edges together.

3. Butter or oil the foil to stop the fish sticking, then lay each mackerel on its own foil.

4. Now put a knob of butter in the stomach cavity of the fish, then place the slices of tomatoes in there and season. Spinkle a little lemon juice over the tomatoes.

5. Seal each foil packet.

6. Place the packets on an ovenproof tray and put in a pre-heated oven on 350 deg F or 180 deg C for about 25 minutes.
