Tasty Recipes for Your Sweetie
Just follow a simple recipe or two, squeeze some fresh orange juice and you'll be on your way to the best breakfast ever.
Be sure you leave yourself enough time before your sweetie wakes up. You don't want to feel rushed. And make a nice setting on a tray complete with a rose and your best dishes.
Try these recipes and see if it's not the best Valentine's Day cookie gift you've ever planned... er, well and all those other Valentine meals of course. I'm just partial to cookies.

Baked Brunch Omelet

- Serves: 12
- Prep Time: 15 min
- Total Time: 75 min
"A baked egg casserole with cheese, ham and green onions."
Ingredients
- 1/2 (1 pound) loaf white bread - cut into cubes
- 1 1/2 pounds shredded Cheddar cheese
- 1 cup cubed cooked ham
- 8 eggs
- 2 cups milk
- 1 pinch salt
- 1 dash hot pepper sauce (or to taste)
- 1/4 cup chopped green onion
- Optional: Peppers - Mushrooms - Tomatoes - etc
Instructions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
2. Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.
3. In a large bowl, beat together eggs, milk, salt, hot sauce, and green onions. Pour egg mixture into pan.
4. Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.

Eggs Florentine

Ingredients
- 1 package (10 ounces) chopped frozen spinach
- 1/4 cup butter
- 2 tablespoons all-purpose flour
- 2 cups half-and-half
- 8 eggs - poached
- Salt and pepper to taste
- Grated parmesan cheese or shredded mild cheddar cheese
Instructions
Cook spinach according to package instructions.
Prepare white sauce. In a small saucepan, melt butter. Add flour; blend well. Gradually add half-and-half, stirring constantly, until thickened and bubbly.
Place spinach in a lightly buttered shallow baking dish. Arrange cooked, drained eggs over the top of the spinach, then pour white sauce over eggs.
Sprinkle with salt, pepper, and cheese. Bake eggs at 400° for 2 to 3 minutes, until cheese is melted and lightly browned.

Cinnamon French Toast

- Total Time: 20 min
This French toast recipe cuts back on fat by using only 1 whole egg and 2 egg whites.
Ingredients
- 1 egg
- 2 egg whites
- 1/4 cup milk
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- dash nutmeg
- 8 slices French bread - sliced on diagonal
Instructions
In a shallow bowl, whisk egg and egg white until foamy. Whisk in milk, vanilla, cinnamon, and nutmeg.
Have warming drawer heated or heat oven to 200°.
Heat butter in heavy skillet over medium-low heat. Dip 4 slices of bread in the egg mixture, turning to coat thoroughly. Let excess drip back into bowl.
Place coated bread slices in hot skillet. Cook, turning, until both sides are nicely browned, about 2 minutes each side.
Transfer to a warm plate and keep warm in oven. Repeat with remaining bread and egg mixture. To serve, sprinkle with cinnamon sugar, if desired. Serve with maple syrup.

- I always go for the easiest recipe (that is obviously still tasty) so I vote for the frittata or the French toast. My hubby would love either!
