The ritual of tea
You have decided on a healthy eating plan. (Right?) But it can be hard to stop eating when you know you should. Tea can help. Here is what you do. Fill your plate with yummy food in the amount you know you should eat. Savor it. But never take seconds.
When you are done eating, put on the water to heat. Choose your tea. Enjoy the various aromas. Most of the loose teas are a joy to eyes as well as the tongue. Inhale the glorious smells. Measure your tea. I like to use glass teapots and cups because I think the process of brewing and the end result is beautiful. Pour the water over your leaves. Watch it steep. Pour your cup. Sip and enjoy thoroughly.
This accomplishes several things at once. For one (as every frequent dieter knows), it takes 10-15 minutes for the 'full' signal to make it from your stomach to your brain. This ritual allows you to get that signal. Chances are you ate plenty of food. You just don't know it yet.
Also, the ritual makes a definite end to your meal. It is the harbinger of finality. It will come to signal that. On top of that, the liquid in your stomach will actually make you feel full, and the tea will speed up your metabolism and give you energy.

How to brew your tea
- Green tea
I've heard people say they don't like green tea. Whenever I hear this, I suspect that they have had some badly brewed tea. Green tea is the prima dona of teas. If you brew it too hot, or too long, it becomes bitter. But brew it properly, and the reward is great.
Green tea should be brewed in the 140-175 degree range. Think of it this way- it should be closer to hot bath temperature than boiling. You should be able to stick your finger in the water for several seconds without pain. If you are brewing in an open pan, a rule of thumb is to observe the bubbles. When they just start to form on the bottom of the pan, but have not yet begun to rise, the temp should be about right. Or you could buy a kitchen thermometer. If you're that sort of person.
Add water to the leaves or bag and let steep for 1-3 minutes. This time will differ for different teas and your personal taste. Start low, and build up the time if you want it stronger.
Pour tea.
Exult in life. - Ooolong tea
After the trouble you went through with the green, you will be glad to hear that oolong is simpler. Boil the water. (Some people think that slightly cooler is better. You can let it set for 5 minutes before pouring, or add a dash of filtered, cold water). Add it to the leaves. Steep for 30 seconds to 5 minutes, according to personal taste. Remove leaves.
Pour tea.
Rejoice.
