Healthy Vegan Thanksgiving Recipes

Last year we tried a few Raw recipes with our thanksgiving meal.

Well, let's just say it was my contribution to the meal.

I tried the cranberry sauce recipe (delicious) and the raw mashed potatoes recipes. [psst it's really cauliflower]

We are again on the heels of the Thanksgiving Holiday in the States and I encourage you to try incorporating 1 (even 2 ) raw vegan recipes into your menu this year. Don't tell anyone that it's raw or vegan and listen for the complements. I bet your guests will be surprisingly pleased.

What you need to know

"CDC surveys indicate that only 33 percent of adults meet the recommendation for fruit consumption and 27 percent get the recommended servings of vegetables. The statistics are even worse for high school students, the CDC report says."

- Healthy People 2010 challenges Americans to eat a minimum of 2 or more fresh fruits and vegetables a day. It's goal is to get 75% of Americans eating the recommended 2 or more servings and 50% of Americans eating 3 or more servings per day.

Tail:
* 9 pieces of Banana (tail) sliced on the diagonal
* Topped with a clementine (9)

Skewers:
* 8 Grape and Berry Skewers (blueberry, raspberry, blackberry)
* placed between clementine pieces

Body:
* 1/2 pear
* currant eyes
* dried mango Beak
* goji berry Waddle
* Mango feet using kitchen shears

Green Bean Casserole

Recipe for Green Bean Casserole:

2 cups of green beans
1 cup of grounded almond pulp
2 cups of thinly sliced mushrooms
1/2 cup of onions
1 cup of green onions

Casserole Sauce

1 1/2 cup of cashews
1/4 cup of water
1/4 cup of lemon juice
3 dates
1/8 cup of onions
1/2 teaspoon mustard powder
1 teaspoon of sea salt

Slice up the green beans in half ( they should be very thin) and place them in a casserole dish. Add the thinly sliced mushrooms and onions. Next add the casserole sauce that has been blended unti a smooth consistancy in the vitamixer. Top the casserole with the grounded almonds and then garnish it with the green onions. Now bring it to your hoiday gathering and watch as people devour it. I just had a little leftover to eat today!

Cranberry Relish-Sauce

Raw Cranberry Relish

* 2 cups fresh or defrosted frozen cranberries (sort through and toss the bad ones, remember this is raw and bad cranberries will be too mushy or too hard)
* 1/4 cup diced red onion
* 1 large jalapeno pepper, seeded and chopped
* 2 tablespoons fresh lime juice
* 2 oranges peeled and chopped
* 2 teaspoons freshly grated ginger
* 1/2 cup sugar
* 2 stalks celery chopped small to fine depending on your tastes

Place cranberries in food processor, and pulse to chop coarsely. Add onion, jalapeno, lime juice, orange sections (and their juice), and ginger. Pulse until everything is chopped and blended.

Transfer to a bowl. Mix in sugar and celery. Refrigerate for at the very least 2 hours and up to 2 days. Seriously do not skimp on the last step. The sugar needs to melt and blend with the cranberries otherwise you have a grainy consistency and the cranberries will be too tart and the sugar too sweet. Definitely plan to make this the day before
you want to serve it for the absolute best results.

Raw 'Mashed' Potatoes

Interesting Texture **a powerful food processor is necessary**

Ingredients:
2 cup parsnip, washed and cubed
½ cup pine nuts
1½ cup water
.33 cup lemon juice
2 clove garlic, minced - or more to taste
1 teaspoon sea salt, or to taste
1 teaspoon olive oil

Preparation:
1.Blend all ingredients until creamy.
2.Serve with a drizzle of flax oil or a simple gravy, such as: .5 cup chickpea miso and .5 cup water whisked with some seasoning, such as drop of cumin or pepper or chopped mushrooms

All-American Apple Pie

ALMOND PIE CRUST -

2 cups almonds, dry
1 teaspoon sea salt
2 cups pitted dates

SYRUP -

1/2 cup pitted dates
1 orange, peeled and seeded
splash of water, as needed to make the blender go round

FILLING -

5 cups apples, peeled, seeded, thinly sliced, about 5 or 6 apples
1 cup raisins and/or dried cranberries (optional)
2 tablespoons ground cinnamon
