Even though the chances are you'll be eating WAY too much on Thanksgiving Day, you still need to have some simple appetizers around to keep the guests happy while you are busy in the kitchen with last minute details.

So, browse through the recipes, get hungry reading them, and remember, Thanksgiving Day is not just about eating... it's about giving thanks. So THANK YOU to all of you for visiting this lense. May you live gratefully and eat well!

Pears and Cheese 

Simple, Delicious, Nutritious

Want to make a Thanksgiving Day appetizer that your guests will salivate over? Try this tasty tidbit. Easy to make, easy to eat!

What you'll need:
Ripe pears (Bartlett or your favorite kind)
Bleu Cheese (crumbled)
Pecans (chopped)

What to do:
Here's how easy it is: cut the pears into 1/4 inch slices and lay them, nicely presented, on your favorite party platter.

Sprinkle with the crumbled bleu cheese and top off with the chopped pecans.

Elegant to look at and easily prepared. Best if prepared right before you serve. Enjoy!

Pumpkin Pie Martini! 

Oh my! Give your guests a sip of heaven...

Why not start the Thanksgiving Day Feast out with a little nip of pumpkin spice! Here's a wonderful recipe for an appropriate drink for the adults in the crowd. Enjoy!

What you'll need:
2.5 oz. of spiced pumpkin-flavored vodka (see below)
1/2 oz amaretto
1/4 tsp. pumpkin pie spice
1 Tbs. sugar

Mix the pumpkin pie spice and sugar in a saucer. Moisten the rim of a chilled cocktail glass with amaretto and spin the rim in a sugar-spice mixture.

Shake the alcohol ingredients well with cracked ice and strain into the prepared martini glass. Finish off by garnishing with small chunks of spiked pumpkin or a cinnamon stick.

Making Spiced Pumpkin-flavored Vodka:
1 1/2 cups of vodka (not flavored)
3/4 cup of vanilla-flavored vodka
3/4 cup cinnamon-flavored vodka
2 vanilla beans
2 cups raw pumpkin meat, cut into 1/4-inch slices

Combine all ingredients in a glass container and leave in the refrigerator for one week or longer for a stronger flavor. Strain into another container.

This recipe must be done ahead, but it's well worth the effort! Enjoy!

Spicy Pumpkin Seeds 

If you are like me, you associate pumpkins seeds with Halloween. But think outside the pumpkin! Make some yummy pumpkin seed recipes and serve the crunchy little fellas for a healthy, non-filling appetizer. Try out this flavor ...

What you'll need for Spicy Pumpkin Seeds:
1/4 of cup water
3 Tablespoons of brown sugar
1 Tablespoon of pumpkin pie spice
2 cups of pumpkin seeds (hulled)- Dash salt

What to do:
First things first: preheat your oven to 350 degrees F.

Then, combine water, the pumpkin pie spice, the brown sugar, and the salt in your choice of saucepan - medium sized is good.

Simmer the mixture over low heat for about 10 minutes making sure you stir it until all the sugar is completely dissolved.

Then, add your pumpkin seeds and cook them for about five minutes while stirring occasionally. You'll need to drain the seeds on a paper towel and then place them on a baking sheet.

Finally, bake the seeds for 10 to 15 minutes, turning them over by stirring them a little. When the seeds turn crispy, you know they are ready.

That's it! How easy is that? You can store the pumpkin seeds in an air tight plastic container until you are ready to use them. They are also very tasty right out of the oven.

This recipe makes about 2 cups of spiced pumpkin seeds.

For a variation, try substituting and equal measure of apple pie spice or a mixture of cinnamon, nutmeg and allspice with a dash of cloves instead of the pumpkin pie spice. So yummy!

And... if you don't have a pumpkin handy, buy a package of raw, uncooked pumpkin seeds and use those. The results? A perfect little snack to wet the appetite!

Cherry Tomato Bruschetta 

A little explosion of taste before The Big Bird

Having a crowd over this Thanksgiving? Well, keep them happy while you are finishing up the last minute details in the kitchen. Serve up some hot, delicious Cherry Tomato Bruschetta that you can make ahead of time and simply warm up right before you serve...

What you'll need:
1 small loaf semolina bread
2 pints (4 cups) small cherry tomatoes
8 Tablespoons of garlic-flavored oil
salt and pepper (to taste)

What to do:
All you need to do for this easy appetizer recipe is first, preheat your oven to 375 degrees F. Then, cut the bread into 16 to 20 1/2-inch thick slices.

Next, place the bread slices on a cookie sheet in the oven and toast for about 5 minutes on each side, until golden in color and crisp to the touch. Remove them from the oven and place the toasted bread on platter.

Make sure you wash the tomatoes and dry well, removing any stems if they are vine-ripened tomatoes. Then, cut the cherry tomatoes in half through stem ends.

Next, heat 5 tablespoons of the oil in a 12-inch nonstick skillet over high heat. Add the tomatoes and cook, stirring often, until they are softened (should take about 5 minutes.) Add a pinch of salt and freshly ground black pepper to taste.

Finally, spoon the tomato mixture onto the toasted bread and drizzle with remaining garlic-flavored oil.

This simple appetizer recipe makes about 20 bruschetta. Enjoy and give thanks.

Top Chefs - Great Ideas for Thanksgiving! 

Smoked Salmon Rolls 

Oh! These are to die for!

Smoked Salmon Rolls will compliment your menu for any holiday party or gathering. Try them out for a new kind of appetizer for Thanksgiving or Christmas. Or just make them because you love smoked salmon. That's what I like to do!

What you'll need:
1 cup water
1/2 cup of butter (unsalted)*
1 tsp. of kosher salt
1 cup of all-purpose flour
4 eggs (large)
2 tablespoons poppy seeds
1/2 lb. of sliced smoked salmon
1/2 lb. of cream cheese (softened)
6 Tbsp.of sour cream
1 tsp. of Dijon mustard
1 garlic clove (small)
Tabasco sauce to taste

* cut the butter into Tablespoon size pieces.

What to do:
First, Preheat the oven to 400 degrees F. Position 2 of your racks in the upper and lower third of the oven. Using 2 large-sized rimmed baking sheets, go ahead and grease them lightly.

Bring the water, butter and the salt to a boil in a small saucepan. Take the saucepan off the heat and add the flour, stirring vigorously until all is combined. Return the mixture to the heat and cook over moderate heat. Stir for about 1 minute.

Scrape the mixture into a bowl. Use an electric mixer and beat at medium speed for 1 minute. Then, add the eggs - one at a time - beating them well after each addition. Beat until the mixture is thick, shiny and smooth.

Next, transfer the dough you've just made to a pastry bag fitted with a 1/2-inch plain tip. Then, pipe 1-inch mounds onto the prepared baking sheets, keeping them about 3/4 inch apart. Moisten your fingertips and smooth the tops. Sprinkle with the poppy seeds and bake for 20 minutes, shifting the pans halfway through, until the puffs are risen and golden. Then, lower the oven to 250 degrees F.

With the tip of a knife, poke a hole into the side of each puff and return to the baking sheet. Bake for 10 minutes longer, with the oven door slightly ajar, to dry out the centers. Transfer to a rack and cool.

In the meantime, make the smoked salmon filling. In a food processor or blender, combine the smoked salmon with the cream cheese, sour cream, mustard and the garlic and process until smooth. Next, season with Tabasco - add more if you like spicy and less if you just want a little bite to the tongue.

Transfer the filling to a pastry bag fitted with a 1/4-inch tip. Pipe the filling into the holes in the sides of the puffs and transfer to a serving plate. Serve right immediately.

This recipe for Smoked Salmon Rolls makes 10 servings.

Tip: If you need to make these ahead, just make the unfilled baked rolls. They can be frozen for up to one month and all you need to do is RECRISP them in a 325 degrees F. oven. You can also make the filling ahead of time and keep refrigerated for up to 3 days.

Artichoke Parmesan Spread 

...another little dip for a big feast on Thanksgiving Day

Artichoke Parmesan Spread is another easy appetizer recipe that you can make the day before your party or event.

It's tasty and your guests will come back over and over looking for more of it.

The secret to this recipe is the chopped pepperoncini peppers. Absolutely divine!

What you'll need:
1 3-ounce package of cream cheese (softened)
1/2 cup Parmesan cheese (grated)
1/4 cup dairy sour cream
1/2 cup marinated artichoke hearts (drained and coarsely chopped)
1/4 cup sliced green olives
2 tablespoons pepperoncini salad peppers (chopped)
1 tablespoon snipped fresh Italian flat-leaf parsely
1 teaspoon lemon peel (finely shredded)
20 crostini (toasted baquette slices 1/4-inch thick) or equivalent

First, in a medium bowl, mix the cream cheese, Parmesan cheese and sour cream until smooth. Stir in the artichoke hearts, olives, peppers, parsley and the lemon peel. Spread the mixture on the crostini slices.

This recipe makes 1 1/4 cups or 20 (1-tablespoon) servings. Too good!

Cheddar Cheese Mushrooms 

...phew! these are too delicious to leave out of your Thanksgiving Day

What you'll need:
1 pound mushrooms
3/4 stick (6 tablespoons) butter (unsalted)
1/2 cup walnuts
1/2 cup parsley leaves (fresh)
1 onion
1 cup sharp Cheddar* (coarsely grated)
1/2 cup fine fresh bread crumbs
1/4 teaspoon salt (or to taste)

*about 4 ounces

What to do:
First, preheat you oven to 350 degrees F.

Next, cut off and chop up the stems from the mushrooms and set aside.

Then, melt the butter and with a pastry brush, gently brush the butter over the tops of the mushroom caps. You can then arrange the caps, with the cut stemmed sides up, on a large baking sheet.

Next you need to lightly toast the walnuts. When they have cooled, finely chop the nuts and then chop up the parsley and onion.

In a large skillet, sauté the chopped stems in the remaining butter over a moderately high heat until the stems have softened.

Next, remove the skillet from the heat and stir in the remaining ingredients. Once the mixture has been thoroughly stirred, divide it among all the mushroom caps, making a small mound in each cap.

The best part of this recipe is it can all be done ahead of time. You can have all the ingredients ready to go and then once the caps have been stuffed, you can store them for up to 4 hours before you serve them.

Before serving, take out the Cheddar Cheese Mushrooms if you have chilled them in advance, and bake them in the middle of the oven for approximately 20 minutes. Serve these delicious tidbits warm.
