More recipes from the Kitchen Cupboard Cook!

There is something just as exciting as saving money, and that is saving time. There are shorcuts we can use for substitutes when baking, and there are quick, easy, kid and adult loving recipes found from items probably already in your cabinet (and freezer)

There are times when those pantry items just must be used. There are many creative ways to mix together different boxed and canned foods.

So let's get started:

Baking Shortcuts

What? I'm out of....

Brown Sugar
1 C Granulated Sugar
1 Tablespoon Molasses
Mix and viola! Brown Sugar

Buttermilk
Put 1 tablespoon vinegar or lemon juice into a measuring cup. Fill to top with milk and let stand 5 minutes. (You can kill two birds with one stone by making the butter recipe below)

Yeast Substitute
Mix your other ingredients in a bowl first. The yeast substitute will go on top. You will need equal amounts of baking soda and lemon juice. If the recipe calls for 2 tablespoons yeast, then mix one tablespoon baking soda, 1 tablespoon lemon juice then add mixture to the top of the other ingredients. (*when using the substitute, you don't have to give your bread "rising" time)

Butter Think Pioneer days! Fill a jar with heavy cream (you can even use old baby food jars for this) and put lid on tightly. Shake, shake, shake until the cream thickens and begins to stick together. Open jar and pour liquid into another container (there is your buttermilk!) You now have home made butter. (this is unsalted butter, you may want to add salt to taste)

EASY recipes from items you probably already have

I agree with Paula Deene..."I am your cook, not your doctor"

Cheeseburger Macaroni
Mix up a box of Mac N Cheese and add a pound of cooked hamburger. Lightly season.
**Note; you can also add tuna or chicken to this instead of hamburger...but then it wouldn't be called Cheeseburger Macaroni :)

Lazy Chicken N Dumplings
1 or 2 Cans Cream of chicken soup
1 can refrigerator biscuits
Cooked or canned chicken
Can of veggies (optional)
Open a can of cream of chicken soup (or two, depending on how many you need to feed) add to a medium pan and add some cooked or canned chicken. Bring to a soft boil. Take a can of refrigerated biscuits and cut into quarters. When Soup and chicken are boiling, drop biscuit dough on top. Cover and simmer 10 minutes.

English Muffin Pizzas
4 English Muffins
Pizza Sauce
Mozzerella Cheese
Split 4 english muffins and toast VERY lightly. Top with some pizza sauce (or spaghetti sauce) and the cheeze. Place under broiler for 2 minutes.

Leftover Pizza Roll up
~1 can refrigerated pizza crust or make from mix
~Left over sloppy joes, Barbequed Beef or pork, anything of that nature
~Cheese (optional)

Roll or press out pizza dough onto a cookie sheet in an oblong shape. Slightly curve up the edges. Place filling on top of crust and roll up starting at one of the long sides. Pinch edges to seal. Bake at 350 for approx 10-15 minutes. Slice and Serve
