Tiramisu: Love At First Bite

 

Tiramisu is an Italian dessert made of sponge lady finger biscuits, espresso coffee, mascarpone cheese, eggs, cream, sugar, Marsala wine, cocoa, and rum. The Italian name tiramisù means "pick-me-up" (metaphorically, "make me happy,"), a reference to the two caffeine-containing ingredients, espresso and cocoa.

Tiramisu: MMM...Make Me Happy 

I fell in love with Tiramisu after (during?) the first bite I ever took of this heavenly dessert. Good Tiramisu is melting in your mouth, it has a delightful, prominent coffee flavor, and it is very creamy. It also has a cream layer on the top, dusted with cocoa powder. It takes a little bit of time to prepare it, but I can reassure you, it is worth every minute of your input!

How to Make Tiramisu 

The ladyfingers (and my favorite ones are those from Savoiardi) are sprinkled with or briefly soaked in a mixture of coffee, rum, and sugar. They are layered with a mixture of mascarpone cheese and zabaglione, a custard made from egg yolks, Marsala, and sugar. Cocoa powder is then sprinkled on top.

Tiramisu has become one of the most popular desserts served in restaurants of all types, not just Italian restaurants. The recipe has been adapted into cakes, puddings, and other varieties of dessert. Other flavors are often used now in place of coffee, including strawberry, lemon, or chocolate.

Ingredients:

* 4 egg whites
* 2 egg yolks
* 100 g (1/2 cup) of sugar (alter to your own preference)
* 500 g (2 1/2 cups) of mascarpone cheese
* espresso
* marsala wine (or brandy or cognac)
* lady fingers (sponge cake fingers)
* dark chocolate powder

How to proceed

1. Make espresso, sweeten, and add the marsala wine (or cognac) to it.
2. Beat sugar into the egg yolks.
3. Beat the sweetened mascarpone into the sweetened yolks.
4. Whisk whites of 4 eggs until they form stiff peaks.
5. Fold egg whites into mascarpone mixture.
6. Quickly dip both sides of the ladyfingers in the espresso mixture.
7. Layer soaked ladyfingers and mascarpone in a large bowl or pan (start with fingers, finish with mascarpone).
8. Sprinkle dark chocolate powder on top.
9. Refrigerate for one hour.

Recipe and instructions for the wonderful Italian dessert, Tiramisu (with zabaglione - no raw eggs). Please note - I do not have an alcohol-free version of this recipe. People purporting to be Italian keep leaving comments that 'the original recipe' doesn't cook the eggs, or doesn't use Marsala, or doesn't use Kahlua. However I have been assured by many other Italians that they do. I've done my research and there does not seem to be any 'original recipe', or even any agreed-upon origin of the dessert. But whoever it was who first came up with this I am grateful to them for by any other name it would still taste as sweet ;-)

Helpful Tips About Tiramisu 

Savoiardi are the traditional biscuits used with this recipe, rather than ladyfingers

Cream can be used as an alternative to thicken the tiramisu. Whisk 3/4 pint to 1 pint of double cream until stiff peaks form, then add the sugar and continue from step 2.

Full-fat spread cheese can be used as an alternative to mascarpone; add some cream to taste.
