HERE'S WHAT I THINK
So there's this weird Bacon vs. Tofu debate thing going on these days. Which is the better protein? Which is more environmentally conscious? Which is the sign of a sophisticated palate, which is not?
It's not really about the food itself... these are just easy symbols to represent some cultural and culinary stereotypes.
One the one hand there's tofu, which stands up for vegetarians and healthy eating everywhere. When most people think tofu, they automatically think things like "strict diets, liberals, hippies, vegan, meatfree living, PETA activists, treehuggers."
On the other there's bacon, the sizzling porkfat symbol for meatlover. If you eat bacon, most people assume you're an unhealthy Irish or British beer-drinking carnivore with no regard to an animal's rights or to healthy eating and living.
I told you, both are stereotypes. And maybe that's why the tofu vs. bacon debate can be so fun...and so heated.
But I'm offering myself up as The Great TofuBacon Diplomat.
Why? Because I'm a meateater and a baconlover, yes. And I'm the furthest thing from a vegetarian possible. BUT I love tofu, I am a very healthy eater, I'm more of a treehugger than most vegetarians I know. And I think Tofu and Bacon people can live and work together just fine -- and could even be on the same menu.

Or, they think "Asian" when you say tofu. But honestly, I love tofu. Any kind of tofu. (Except maybe stinky tofu, which I have heard about but never tried.) Also, I keep kosher, so no bacon for me. As for fake-bacon, even that is sometimes too greasy -- my stomach can't handle that much fat.

Tofu and meat alternatives have come soooo far in the last ten years. The stuff is great. But, of course I'm a nut. So, maybe it's just me "believing" it tastes good. Also, not only am I a nut,i love eating nuts. I love peanut butter. I mix in so many things.(hey could be a lens topic) Anyway, I go meatless when possible. It's healthy, I'm not contributing to any harm of animals and it's a way to compensate for my lack of recycling and using paper towels like crazy.

That is pretty darn sad, once it did find it's way to food it was then only given to pigs and animals later on to fatten them up. The amount of estrogen alone in there is enough to have people realize that it's not as healthy as you are led to believe. Well at this stage in our evolutionary track we have carnivorous teeth so bacon is on the menu along with any other tasty animal. Do I know what they do to those poor animals? Not exactly but it is delicious. I suppose they could be killed in a way less humane than a Lioness dragging an antelope down by its jugular and starting to dine as the animal finishes bleeding out and eventually dieing...but I doubt it.
On another note those damn pigs are just raising the greenhouse gas emissions that are causing global warming, I say we all eat bacon for the sake of poor old mother earth. Our planet depends on it.
We could rid ourselves of the delicious pig but don't forget that all those midwest soy fields are depending on the fertilizer our tasty livestock produce. So if your not eating bacon with your tofu then I will have to eat a little extra just to cover your share.

I've studied and continue to study nutrition, on a personal level, because I've been concerned about raising healthy children. I've reviewed vegan diets, raw food diets, meat-only diets, vegetarian diets... you name it. I've, simply, come to the conclustion that a diet balancing fats, protiens and enzymes (in the traditional/cultural mode) is the wisest choice for my family.
I am against soy as a main food product for all (human, horse, cow, pig, chicken, etc); there are so many better plant protiens available. Aside from tannins, soy is also high in phytates (protien inhibitors) which can be limited through fermention in miso, natto, etc. But, no amount of processing done currently removes the phytoestregens. Phytoestregens are potent endocrine disrupters and also have a tendency to cause thyroid problems.
It just doesn't make sense to eat a "high protien" diet of soy if your body can't digest that soy protien does it? ;-)
I've known many silly pigs and I agree with you, all animals deserve to be raised and cared for in a humane and conscientious manner even if they are destined for the dinner plate. Humanely, carefully, raised animals are healthier and provide a better quality source of food (dairy, egg or meat).
As an aside, I also believe people who do not have an agricultural background can misunderstand proper management when they see it. Livestock animals are not housepets and shouldn't be treated as though they are. I worry about this because it can cause problems for knowledgable farmers and well intentioned visitors alike.
In food and farming, it seems to come down to being curious, educating ourselves and making the choice we think is best. I'm just glad there is so much information available for little to no cost!

Bovine will eat the afterbirth of another bovine without contration of mad cow (even if the mother was a confirmed case). Also, organo-phosphates are suspect in mad cow. How much organo-phosphate contamination is in the non-animal-based food supply? Living in farm country, I'd wager a lot.

You have to make informed choices and find local, whole foods. Responsibly raised meat, dairy and chicken is incomparable to what is available in the common grocery store. Even in veggies, not all food is grown equal. :)

Interestingly enough pigs and humans should be warry of eating too much soy protien due to the high tannin levels found in soy beans. Tannins bind with the substrate protiens and digestive enzymes. This is bad news because enzymes work in concert with each other to complete there tasks. So, if one or two are bound-up by tannins the digestive enzymes can not do their jobs. Tannins binding with protiens means the body can not digest them. Tannins are also well known for their prowess at blocking the absorbtion of vitamins and minerals.
Tofu is too high in tannins to be considered a health food. It is more, likely, to be anti-nutritive (ie: blocking absorbtion or causing the body to strip nutrients from within the body for use in digestion).
Indigenous societies that used soy beans never used them as a protien replacer. They were intended as condiments most often fermented and occassionally (sparingly) sprouted.
Isn't it wonderful soy protien is used in just about EVERYTHING? Yummy industrial waste product that it is? MMMMM, MMMMM!
Seriously, there are better plant protiens to be used than those found in soy. But you shouldn't be missing out on all the non-hydrogenated, non-rancid, totally natural short, medium and long chain fats found in the fat of the pig. Healthy fat is essencial to a healthy diet.
High Tannin diets are not good for pig or human... so go eat some bacon.
