Peru is famous for its Inca ruins, as it was once the capital of the mighty empire and is now the gateway to the mysterious and captivating lost cities, including the unforgettable Machu Picchu. In all Peru, there is a big variety of preparing potatoes (papas, not papatas as in Spain) the traditional Andean vegetable. Peruvian are quite proud of their deserts, especially in Lima.

Picarones are a sort of dough nut made from fried yams dough and served with chancaca , a very sweet sugarcane syrup. The sweetest dessert is suspiro Limeno, which is perfect if you are in sore need of a calorie and glucose shock.

Inca kola, the Peruvian equivalent of Cola-cola, is bright yellow in color and tastes like bubble gum. Pisco Sour, an alcoholic drink with a interesting ingredients list, such as egg-whites is the main drink in Peru and is available in most places in Huaraz. You haven't tried the true pisco if you haven't tried Peruvian pisco. Emoliente, another popular drink in Peru, is often sold in the streets by vendors. Served hot, its flavor is best described as a thick, viscous tea, but surprisingly refreshing - depending on what herb and fruit extracts you choose to put into it, of course.

Normally the vendor's mix will be good enough if you choose not to say anything, but you're free to select the mix yourself. Normally sold hot is the usual after-party drink, known as a"reconstituyente", can be drunk cold too.

RESPECT & STAY HEALTHY

- Don't use the word "Indio", although it's spanish. For natives, it sounds like "nigger" since it was used by Spanish conquerors. The politically correct way of speaking is "el indigena" or "la indigena" - although, like "nigger", very close people inside a circle of friends can get away with it.
- Another word to be careful with is chola/cholo or cholita meaning indigena. This may be used affectionately among indigenous people but is offensive if coming from an outsider.
- Outside of well set-up restaurants and hotels in cities and towns, toilets are often quite primitive and sometimes really dirty. It's a good idea to bring your own paper with you, as Peruvian toilet paper may be too rough as well as being one ply. It's usual not to throw the used toilet paper into the toilet but in the baskets besides.This is because the pipes tend to plug up.
- Avoid unboiled tap water, if possible. This can be difficult if you eat a salad or drink fruit juice as they will probably be prepared with tap water. Also, avoid ice in drinks if you can.
- Don't eat food prepared in the street (if you can resist it).
- Many Peruvian dishes can be too spicy and heavy, so if you have a weak stomach try it with caution.
