Traditional Turkey Rice Soup
The perfect simple meal for the day after.
6 cups Chicken broth
1/4 cup White rice, raw
1/4 cup Wild rice, raw
1 cup Green onions, chopped fine
1/2 cup Butter
3/4 cup Flour
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 cups Milk
1-1/2 cup cooked Turkey, cubed
8 slices Bacon, cooked crisp and crumbled
3 tablespoons Sherry, dry (optional)
Combine chicken broth, rice and onions in a large sauce pan. Heat to boiling, reduce heat and simmer 40 minutes. In another sauce pan melt butter. Stir in the flour, salt and pepper, cook 1 minute stirring until smooth and bubbly. Slowly stir in the milk and cook until slightly thickened. Add the milk mixture into the broth mixture slowly. Add remaining ingredients and heat gently, do not boil.

Turkey Reuben Sandwich Recipe
An unusual turkey sandwich recipe.
One pound of cooked turkey breast, thinly-sliced
Eight slices of rye bread
1/4 cup of softened, unsalted butter
1/2 cup of sweet honey mustard
Eight slices of Swiss cheese
1/2 cup of well-drained sauerkraut
Spread mustard on one side of four slices of bread.
To each of the four pieces of bread, add four ounces of sliced turkey, a slice of cheese and two tablespoons of well-drained sauerkraut, then another slice of cheese. Top each with a slice of bread.
Carefully butter both sides of the sandwiches.
Heat a large skillet to medium-high. Grill one side of the sandwiches until browned, then flip and grill the other side.

Incredibly Easy Leftover Turkey Casserole
This recipe and its variations have been around for years. It remains popular because it's tasty and very easy to make.
1 pk (6 oz) Stove Top Stuffing Mix For Turkey or Chicken
1 1/2 c Hot Water
1/4 c (1/2 stick), Butter or Margarine, cut into pieces
2 c Cubed Cooked Turkey
1 Jar (12 oz.) Chicken Gravy
1 pk (10 oz.) Frozen Mixed Vegetables, thawed, drained
1/4 ts Dried Thyme Leaves
Combine seasoning packet from stuffing mix with hot water and butter until better is melted. Stir in stuffing just until moist.
Let stand 5 minutes.
Add gravy, turkey, vegetables and thyme to a 2-quart casserole or 12x8 inch baking dish. Stir to combine.
Spoon stuffing over turkey mixture.
BAKE at 350F for 45 minutes or until thoroughly heated. Makes 6 servings.

2 tsp. Prepared Mustard
2 tbsp. Sweet Pickle Relish
Combine ingredients and chill 1 hour. Serve on bread or as a salad on lettuce leaves.

Lattice Topped Turkey Pie

2 cups chopped cooked turkey
1 10 oz. pkg frozen English peas
1 cup (4 oz.) shredded sharp cheddar cheese
1 cup diced celery
1/2 cup soft breadcrumbs
1/4 cup chopped onion
1/4 tsp salt
1/8 tsp pepper
1 cup mayonnaise
3 dashes hot sauce
1 (8 oz.) can crescent dinner rolls
2 tsp sesame seeds
Combine turkey, peas, cheese, celery, breadcrumbs, onion, salt, pepper, mayonnaise and hot sauce; mix well. Spoon into a 12x8-inch baking dish.
Separate crescent dough into 2 rectangles; press to seal any perforations. Cut into 1-inch wide strips. Arrange strips in a lattice design across the top of the turkey mixture. Sprinkle with sesame seeds. Bake at 350 for 35 minutes.

Turkey and Swiss Calzones
4 cups all-purpose flour
4 1/2 teaspoons quick-rise yeast
2 teaspoons brown sugar
1/4 teaspoon salt
1 1/2 cup water, 120 degrees F.
3 tablespoons oil
3 1/2 cups cooked turkey, cubed
1 1/2 cup Swiss cheese, shredded
3 tablespoons Dijon mustard
1 egg, beaten
In a mixing bowl, mix together 3 cups flour, yeast, brown sugar and salt. Stir in water and beat until smooth. Add enough remaining flour to make a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 4 minutes. Cover and let rest in a warm place for 15 minutes.
Meanwhile, combine the turkey, cheese and mustard in a bowl. Divide dough into eight pieces. On a floured surface, roll each piece into a 7 inch circle. Put a dab of turkey filling on each circle. Fold dough over filling; pinch seams to seal. Place on greased baking sheets. Brush with egg. Bake at 375 F for 25-30 minutes or until golden brown.

1 8-oz. can Corn, drained
Tortilla Chips
Cheddar Cheese, and Cilantro (optional)
In large saucepan, over medium-high heat, sautee onions and garlic in oil until tender. Stir in turkey, tomatoes, chicken broth, mustard, chili powder and cayenne pepper. Bring to a boil, reduce heat and simmer for 10 minutes. Stir in beans and corn. Cook for 5 minutes. Top with crushed tortilla chips, shredded cheese and
cilantro, if desired.
