Turning your Turkey dinner into more than one meal
Soup is good food. I know when it comes to cooking a Turkey I will get more than one meal from it and we always use the leftover Turkey for a Yummy Soup. So I am going to share with you a simple recipe that we use to make a delicious easy soup that will warm your belly. It is a family favorite in our house and maybe it will become one in yours.

So here it is folks Nana's Leftover Turkey Soup Recipe
What you need:
Turkey Skeleton with Whatever you did not get off and all the left over Turkey you have
Save the juice from it cooking too - helps the flavor and when you make the soup you can just scrape off some of the fat easily after it has been sitting in the fridge, but do save some.
Any left over gravy, stuffing, mashed potatoes etc..
Salt & Pepper
Celery Salt (this is a must in my soup)
Water or Chicken Broth
Spaghetti
Here is what you do:
Get a big pot and break the Turkey Skeleton in half and place it all in the pot. Cover it with the juice you saved add some water and boil, then put it to a simmer for a few hours till all the turkey falls off the bones.
Take another big pot and a big strainer. Place the strainer on top of the other large pot so you can save the juice/water it boiled in. Poor all the Turkey into the strainer catching the juice in the pot. Set juice aside for later - that will be the base of the soup.
Let the Turkey in the strainer cool enough for you to be able to touch it. (be careful if you have cats - they will snack)
(Now this is the part I hate, but worth it for end product) After the Turkey is cool enough you need to sort through it and pull out all the pieces of Turkey and ditch the bones, skins and yucky stuff. Set the good stuff aside. This takes time, but you need to make sure all the bones are out.
Ok good - now that that job is done - you can attend to your Soup Base. If there is not a lot of Stock you can add more water or some chicken broth.
So bring that back to a boil tossing in any other leftovers you have - like stuffing, mashes potatoes, gravy etc.. When boiling add in your noodles (I use Spaghetti and I break it up a bit)
You can add your Salt & Pepper to taste and Celery Salt to taste as well. Once the noodles are cooked then toss in all your Turkey and get ready for some good soup!!!
It is that easy. I like my the next day when it is all thick from the noodles soaking up the juice. My husband will add some more water to it to make his more soupy. It is all how you like it I guess.
You can even add in veggies - I like it without for a basic soup, but whatever suits your tastes.
So no need to waste that left over Turkey and Fixin's - enjoy it for days to come.
You can even do this with Chicken.
