Time to Talk Turkey! Although the Domesticated Ones Aren't Too Bright, the Wild Ones Are SMART!
The most famous bird in North America?--Nope, not Big Bird. Nope, not the Eagle (well, maybe). The Turkey!
There are two species of that big bird we know as a turkey (the wild kind, that is): the North American wild turkey, Meleagridinae gallopavo, and the Central American Ocellated Turkey, Meleagridinae ocellata.
Turkeys are native to North America--and are in the genus Meleagris in the order Galliformes. They are a subfamily of pheasants.
They are big birds and can have wingspans that exceed 6 feet.

Almost Became America's Bird! But Somehow the Eagle Got There First... Aargh!
When the Pilgrims celebrated their first Thanksgiving--the celebration feast they put on for thanking God for letting them survive their first year in the New World--one of the main attractions at the feast was turkey. Without the protein from this bird they mistakenly assumed was a guinea fowl (also known as a "turkey-cock" because those were imported to Europe through Turkey), the Pilgrims would have suffered more than they did.

Turkeys were common throughout the New World and were frequent "guests of honor" at the various feasts the settlers had. Because the bird was so popular at the special occasions such as Thanksgiving and Christmas, Benjamin Franklin recommended in a letter to his daughter to make the wild turkey the national bird of the United States. However, the bald eagle won that one (bald eagles don't taste good anyway-- sort of like spotted owl. JUST KIDDING!)

Are You a Turkey Fan? Here are some ideas for Cooking Them!
Whether you get them right out of the oven, or make a sandwich the day after with the leftovers, it's good stuff!
But turkeys are BIG BIRDS--and first timers with cooking them find themselves in lots of trouble.
Turkeys are heavy. Especially the solid-frozen ones you usually find at the grocery store.
Turkeys are slippery and don't have convenient handles for holding them. So chances are good you'll be dropping them a lot if you aren't prepared with a proper preparation surface/table near your oven and sink.
