Rock

Rock is a type of hard stick-shaped boiled sugar confectionery most usually flavoured with peppermint. It is commonly sold at tourist (usually seaside) resorts in the UK (like Brighton or Blackpool); in Ireland in seaside towns such as Bray and Strandhill; in Denmark in towns such as Løkken and Ebeltoft; and in Sydney and Tasmania, Australia.

It usually takes the form of a cylindrical stick ("a stick of rock"), normally to in diameter and to long. Blackpool rock is usually at least an inch in diameter, and can be as thick as six inches across and up to six feet long when made for special retail displays. These cylinders usually have a pattern embedded throughout the length, which is often the name of the resort where the rock is sold, so that the name can be read on both ends of the stick (reversed at one end) and remains legible even after pieces are bitten off. Rock is also manufactured as a promotional item, for example with a company name running through it.

It is sometimes found in the form of individual sweets, with writing or a pattern in the centre; these are, in effect, 'slices' of rock.

Candy

Candy, specifically sugar candy, is a confection made from a concentrated solution of sugar in water, to which flavorings and colorants are added. Candies come in numerous colors and varieties and have a long history in popular culture.

The word "candy" comes from the Sanskrit "çahn-da", meaning "piece (of sugar)," which again perhaps from Dravidian (cf. Tamil kantu "candy," kattu "to harden, condense").""candy", OED http://www.etymonline.com/index.php?term=candy In North America, candy is a broad category that includes candy bars, chocolates, licorice, sour candies, salty candies, tart candies, hard candies, taffies, gumdrops, marshmallows, and more. Vegetables, fruit or nuts glazed and coated with sugar are called candied. Candy is considered unhealthy by many.

Outside North America, the generic name for candy is sweets or confectionery (UK, Ireland, Australia, New Zealand, South Africa and other Commonwealth countries). In Australia and New Zealand, sweets are, in normal usage, further categorized as either chocolate or lollies (for all other non-chocolate candies).

In North America, the UK, and Australia, the word lollipop refers specifically to sugar candy with flavoring on a stick. While not used in the generic sense of North America, the term candy is used in the UK for specific types of foods such as candy floss (cotton candy in North America and fairy floss in Australia), and certain other sugar based products.

Indian sweets or Pakistani sweets, known as Mithai are a type of confectionery. Many are made with sugar, milk and condensed milk, and cooked by frying. The bases of the sweets and other ingredients vary by region. In the Eastern part of India, for example, milk is a staple, and most sweets from this region are based on milk products. Turkish Delight

Turkish Delight (Lokum) or Cyprus Delight (Loukoumi) is a confection made from starch and sugar. It is often flavored with rosewater, mastic or lemon; rosewater gives it a characteristic pale pink color. It has a soft, jelly-like and sometimes sticky consistency, and is often packaged and eaten in small cubes dusted with icing sugar or copra to prevent clinging. Some types contain small nut pieces, usually pistachio, hazelnut or walnuts. Other common types include flavors such as cinnamon or mint. In the production process soapwort may be used as an additive, serving as an emulsifier.
