A Tribute To the Florida Lifestyle!

 

We all know that nothing beats a day by the pool with family and friends (of both the two and four legged variety). This is a photo of my Jack Russell Terrier, Lotte, taking a break after a morning of swimming. She and her brother Russell are excellent swimmers and of course grill enthusiasts.

At my house we all love to grill, play, swim and lounge in the comfort of our own back yard. It has become a weekend ritual for us. In fact, we enjoy it so much that I decided to start my own business selling comfy and contemporary outdoor furniture on my new website www.patio-UndertheBanyan.com. The site will be up and running in the next couple of months -- hopefully by September of 2008. To mix it up I'll include my favorite grill recipes from time to time, and hope that my friends and customers will send in their recipes and suggestions as well.

For my first grill menu -- it has to be 

A SIMPLE AND ELEGANT TERIYAKI SALMON DINNER

There's nothing like a beautiful piece of Teriyaki Salmon on a plate surrounded by steamed broccoli, jasmine rice and a slice of fresh pineapple straight off the grill.

To feed 4 people a hearty meal you'll need:

1C jasmine rice
1T olive oil
1t butter
1 2/3 cups Organic Chicken stock

1 1/2 lbs of salmon (preferably wild Alaskan)
1 bottle of Mr. Yoshida's Original Sweet Teriyaki Grilling Sauce and Marinade

1 head of Broccoli washed and trimmed

1 fresh pineapple cleaned, cored and sliced into 1/2 in. rings and sprinkled with Mr. Yoshida's sauce

For the salmon and pineapple:

Nobody makes teriyaki sauce like Mr. Yoshida. All you have to do to create an elegant and delicious meal is marinate your beautiful salmon in Mr. Yoshida's teriyaki sauce for an hour, put it on a hot grill and sear each side for about 4 minutes (depending on thickness of salmon). Put the pineapple directly on the grill when you start the salmon. You'll want to flip it once so you get those beautiful grill marks on either side.

Always start with the rice because it takes about 20 minutes to cook and is fine to sit in the pot with the lid on if it finished first.

To cook the rice:

Add olive oil and butter to 2 quart sauce pan (with tight fitting lid) and warm over high heat. When butter is melted add rice and stir to coat rice with oil. Add 1 2/3 c of chicken stock to pot and let return to boil. Taste the liquid and add a little salt if needed. Stir it up a bit and put the lid on the pot. Reduce heat to low and DO NOT remove lid for at least 20 minutes. When the 20 minutes are up you can just turn off the heat and let the pot sit with the lid still in place.

While the rice is cooking you should get your grill nice and hot. Timing is everything, and in this case it's easy.

And for your broccoli:

Put your flourettes in a glass dish with about an inch of water in the bottom. Cover with saran or other plastic wrap. When the salmon is almost done you put your broccoli in the microwave for about 3 1/2 - 4 minutes. Take it out carefully - with oven mitts. Drain it and add a little salt and pepper and it's ready to eat.

Add a nice bottle of white wine and a Key Lime Pie for dessert and you too will be living the Florida lifestyle!

Where should I start? How about the beginning. . .
I was born and raised in Maryland and lived there for, well let's just say I lived there for a long time. After trudging through too many cold and icy winters, my husband and I decided that it was time to get out of Dodge (or Silver Spring to be exact). My in-laws were moving to Florida to retire in the company of palm trees and blue-green waters, so we jumped on their wagon and moved to Bradenton. My husband, being a tennis pro and enthusiast, found the idea of moving to the tennis capital of the U.S. way too exciting to pass up. We've been here for about 8 years now, and we love the lifestyle. We have two kids ages 4 and 2, and 2 Jack Russell Terriers to keep us happy, healthy and young. Life really is a beach after all!

I've had a wonderful career in the graphic design field for almost 20 yrs now and have just recently (with the help and guidance of friends and family) decided to start a new adventure. My friends manufacture fabulously beautiful outdoor furniture and have asked if I would like to start my own website selling their wares. My answer was of course a resounding yes as I have seen the quality of the furniture and know the owners of the company well. I'll even get to design some of the furniture, so what could be better than that?

I plan to use both this lenses and my website as a forum for all things "backyard". I'm looking forward to sharing grill recipes and ideas for outdoor activities that are fun for the entire family.
