Simple, Beautiful Rosemary and Garlic Crusted Pork Loin
Oh Yeah!
This is the best and easiest recipe for an amazing grilled pork loin.To feed four you'll need:
1 beautiful loin of pork
1/2c fresh rosemary finely chopped
4 cloves garlic
1/2c Extra Virgin olive oil
1t course salt
1/4t pepper
I like to throw the rosemary, garlic, salt and olive oil (a little oil at a time) in a food processor until it makes a thick paste. If you don't have a food processor a mortor and pestle works really well too!
Slather the paste on the pork loin and leave it outside of the refrigerator for about 20 minutes before grilling.
Start by grilling over high heat to brown each side of meat, then lower grill temp to medium for about 20 minutes, turning the meat 1/4 turn every few minutes. If you have a meat thermometer, use it -- just remember that the internal temp will still rise a couple of degrees after you take the meat off the grill. I'm not kidding when I say that overcooked pork is as bad for the soul as undercooked pork is for the body.
Let the loin settle for five minutes before cutting. It should have just the tiniest hint of pink juice inside.
Serve this with steamed asparagus and roasted potatoes for a real feast!

Tried to Pork Loin recipe and it was the best! Quick, easy and the most moist I have ever made! I do believe I will be using this one again for Father's day when I have a crowd to feed and are relaxing by the pool. Thanks for the recipe!
