Betty shares her super-quick, super-easy cheddar cheese stuffed manicotti with pasta sauce recipe. Hardly any work, but great taste!

1 medium to large pot of water, boiling
8 oz. package manicotti noodles
1/2 teaspoon salt
16 oz. sharp Cheddar cheese
1 lb. 10 oz. jar Pasta sauce (I use Prego, meat-flavored)
Grate Parmesan cheese (to taste)

Place the 14 manicotti noodles in the boiling, salted water. Cook until almost tender--al dente. Remove from heat and drain off the water in the sink using a colander. Rinse the hot, cooked noodles in the colander under cold water, until they are cool enough to handle. Place the colander back on top of the pot to catch any additional drips.

Now, slice the cheese into 16 equal (1 oz.) strips. Place one strip inside each cooked manicotti noodle and place in an 8 inch by 12 inch Pyrex baking dish, which has been sprayed with cooking oil. (You can also spread a thin, even layer of Prego sauce over the cooking spray before placing the noodles in the baking dish.)

Continue to place the stuffed noodles in the baking dish until you have one layer. Now, pour more of the Prego sauce evenly over the noodle layer, until about half of the bottle of Prego remains. Finish placing the rest of the stuffed noodles in a new layer on top of the previous layer until all stuffed noodles are used up.

Pour the remaining Prego sauce over the top of the layered noodles. Spread the sauce evenly over the top, and sprinkle as much grated Parmesan cheese evenly over the top as desired. Place in a preheated 350 degree oven and bake for 30 minutes.

Meal suggestion: 10 minutes before the manicotti is ready to be removed from the oven, place a loaf of Italian bread (from the deli section of your supermarket) in the oven to heat until hot an crispy. Serve this with your Italian meal with a ramekin (small dish) of light-tasting olive oil for dipping the bread, plus Betty's Essential Garden Salad. Buon appetito!

english muffins

pizza sauce (walmart)

and any other toppings you like!

spread pizza sauce on english muffins with a tea spoon full

dice pepperettes placing 8 to 10 on each muffin side

sprinkle grated mozzerella cheese on top

place in a toaster oven

250 degrees preheated.

8 to 9 minutes until cheese if fully melted

serve on a plate with a napkin

two english muffins per person for regular appetites, double it for BIG appetites

great party snack or late night study snack for you.

It's always good to consider where you want to get your education. If it's close to home, this will save on rent and food costs. Sometimes you have to go the extra mile though to get what you want. That's why it's important to start planning for University about 5 years before attending. You can save up some money for your education costs, books and do some research on where to get used books and materials. You have to wait till your ready to attend though because the study guides can change. I find by reading up on a topic before going to school gives you a bit of a head start on it. The best information to find is on the internet. The local library can be outdated on some issues!

Sign Language History

Juan Pablo Bonet (Zaragoza (Aragon), circa 1573-1633) was a Spanish priest and pioneer of education for the deaf. He published the first book on deaf education in 1620 in Madrid.

Juan Pablo Bonet was secretary to Juan Fernández de Velasco, the sixth Constable of Castile. While serving in the constable's household, Bonet observed the methods of a tutor hired to teach Luis, the constable's second son, who was deaf from birth. In this wealthy and titled family as well as in others related by marriage or birth were a number of deaf sons and daughters whose parents wanted them educated in addition to their hearing siblings. Some of the deaf sons were in line to inherit the family's properties, and literacy was a requirement for legal recognition as an heir.

The recorded history of sign language began in 17th Century in Spain, in part with Bonet. In 1620, Juan Pablo Bonet published Reducción de las letras y arte para enseñar a hablar a los mudos ("Summary of the letters and the art of teaching speech to the mute") in Madrid. Considered the first modern treaty of phonetics of signed language and the use of signed language to teach speech to the deaf, this book depicted Bonet's form of a manual alphabet. His intent was to further the oral and manual education of deaf people in Spain.

Bonet's system of signs and manual alphabet has influenced many signed languages, such as Spanish Sign Language, French Sign Language, and American Sign Language.
