THE MOST AMAZING BROWNIE IN THE UNIVERSE

This is the Most Amazing Vegan Brownie in the Universe!! You're going to feel you've gone to brownie heaven, and you'll never ever want to come back! You'll want to eat these brownies for breakfast, lunch, and dinner, and every little nibble in between. Get yourself ready for a most magical brownie experience.

Ingredients

8-1 ounce squares unsweetened baking chocolate
1 cup vegan margarine
egg replacer and water equal to 5 eggs
3 cups sugar
1 tablespoon vanilla
1 1/2 cup flour
1 teaspoon salt

Preheat your oven to 375 degrees. In a small saucepan, melt the chocolate and margarine until smooth, then set aside. Combine egg replacer and water, mix until frothy. In a medium-sized bowl, mix together the melted chocolate-margarine, egg replacer-water, and sugar, vanilla, and salt for 6 minutes, or thereabouts. Add the flour to this mix, stir until well combined. Pour the batter into a 9x13x2 inch pan, and bake for 35-40 minutes.
Let cool completely before slicing.
This makes approximately 36 brownies.

A Most Magnificent Vegan Brownie 

It's time to fall into "Brownie Love!"

No kidding, this is a most Magnificent Brownie! You'll positively love love love these brownies! They're fudgy, chocolately, moist, and soft--they're perfect.

Ingredients

5 ounces unsweetened baking chocolate (make sure it's vegan)
2/3 cup vegan margarine (I like Earth Balance)
1 1/2 cup granulated sugar
2 teaspoons vanilla
vegan egg replacer and water equal to 3 eggs
1 cup flour
3/4 cup chopped nuts (optional)

Preheat your oven to 350 degrees. Lightly oil a square pan, either 8x8x2 or 9x9x2. Melt your chocolate and margarine over low heat, and be sure to stir frequently. Once melted, remove from heat and let this cool a bit. In a small bowl, prepare vegan egg replacer as directed on package (I usually mix mine up until it's fairly frothy.) Next, in a large bowl, mix well your sugar, vanilla, and egg replacer. Mix until nice and smooth, about 4 minutes. Mix in the chocolate mixture. Slowly stir in the flour just until well blended. If using, stir in the nuts. Spread the batter in your prepared pan and bake for 40-45 minutes, or just until brownies begin to crack just a bit, or begin to pull away from the sides of the pan.
Let these cool completely before cutting.
This makes approximately 24 brownies.

A More Cake-Like Vegan Brownie 

For those of us who want to eat our cake and a brownie too-at the same time! What more could we cake AND brownie lovers ask for?

Ingredients

1 cup granulated sugar
1/2 cup vegan margarine (I prefer Earth Balance)
1 teaspoon vanilla
vegan egg replacer and water equal to 2 eggs
2/3 cup flour
1/2 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chopped nuts, optional

Preheat your oven to 350 degrees. Oil an 8x8x2 or 9x9x2 inch square pan and set aside. In a small bowl, prepare the vegan egg replacer as directed on package (I usually make mine frothy before adding it to the mix). In a large bowl, mix together the sugar, vegan margarine, vanilla, and egg replacer. Stir in remaining ingredients. Gently fold in nuts, if you've decided to use them. Spread batter into your prepared pan and bake for 20-25 minutes, until toothpick inserted into center comes out clean. Cool completely before cutting.
This makes approximately 16 brownies.
