Vegan Breakfast Recipes
A great assortment of totally vegan breakfast recipes
Tofu Scramble
* 1/3 block tofu, soft, drained 15 minutes
* 1/2 small onion, diced
* 1 clove garlic, minced
* 1 sun dried tomato slice, diced, (usually come in packages sliced)
* spinach, flat leaf, a small handful
* red pepper
* turmeric or curry (for a spicier dish)
* Mrs. Dash or some other flavored salt (optional)
* olive or vegetable oil (or veggie butter)
* salt and pepper
* flour tortillas, or vegan bread (1-3, optional)
Directions
Add about 1-2 tablespoon (15-30g) oil to sauce pan. Add onion, garlic and sun dried tomato to pan, cook until soft and golden.
While that is cooking, mash tofu (I use my fingers) until they get an even scrambled texture and add spices. I never measure, so use your own judgment on the spices.
I usually add 2 dashes red pepper, two dashes turmeric, salt the top of my mound twice and pepper it once, and add a pinch of flavored salt. Then mix it all in until evenly distributed.
When onion mix is cooked, add tofu and spinach. Heat through (until spinach is soft and wilted looking)
This makes 1-2 servings. I like it in a flour tortilla, like a breakfast burrito, or in vegan bread, like a breakfast sandwich, but eat as you like. I think it really tastes a lot like eggs.

Tofu Scramble (Alternate Recipe)
* 1 green onion
* 2 small cloves garlic
* 2 strips Smart bacon or other breakfast meat substitute
* 1/2 large block of firm tofu
* couple dashes of turmeric
* splash of liquid aminos
* pinch of nutritional yeast flakes
* oil (for the pan)
Directions
First, you've got to heat up the pan on medium- high heat with the oil to cook the bacon-but don't cook it too long or it will be overcooked once you're done. While you're cooking the bacon, start chopping up the garlic and green onion. press as much water from the tofu as possible, then use a cheese grater to grate the tofu into semi-small chunks. you could probably mash it a bit with a fork instead, but I find grating to be a lot quicker. After you have the tofu grated into a bowl, add the onion, garlic, bacon (cooked and cut into small pieces by this time), the turmeric and liquid aminos. You'll want to stir this up gently until you are satisfied that everything is well mixed. Put it in the pan (it should sizzle a bit) and sprinkle the nutritional yeast flakes over the top. Keep stirring occasionally for about 10 minutes or until you've got the desired look of scrambled "eggs."
I like to eat this with some hash browns, of course. This is very very tasty, if i do say so myself. Oh, and be careful with the turmeric. it stains everything yellow...

Vegan Gift Selections
Pancakes (Vegan)
* 1 cup flour
* 2 teaspoons baking powder
* 2 teaspoons sugar
* 1 teaspoon salt
* 1 cup soy milk
* vegetable oil
Procedure
v This recipe is vegan; it contains no animal products of any kind.
1. Mix all dry ingredients: flour, baking powder, sugar, and salt.
2. Mix soy milk into the dry ingredients.
3. Heat a griddle until water sprinkled on it quickly evaporates. Spread a thin film of oil on the griddle.
4. Pour pancake batter on griddle to form 4- to 5-inch circles. Bubbles should start forming.
5. When the underside is light brown, flip the pancake.
6. When the other side is light brown, serve.
Variations
* Banana pancakes: add one well mashed banana to the batter.
* Chocolate pancakes: add 1/2 cup chocolate chips to the batter.
* Walnut pancakes: add 1/2 cup roughly chopped walnuts to the batter.
* Cranberry pancakes: add 1/2 cup dried cranberries to the batter.
Any of the above ingredients can be mixed together.
Notes
* Don't overmix! Overmixing will produce gluten; this will inhibit rising and make the pancakes rubbery.
* Optionally, you can serve your pancakes with syrup or jam.
* Substituting rice milk for soy milk may make the pancakes fall apart more easily.
Oven pancakes (vegan)
* 1 cup (240g) flour
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 2 tablespoons sugar
* 1 cup (240ml) soy milk
* 2 tablespoons vegetable oil
* 2 teaspoons vanilla
* 1 tablespoon apple cider vinegar
Procedure
v This recipe is vegan; it contains no animal products of any kind.
1. Preheat oven to 230° Celsius (450° Fahrenheit) and oil an eight-inch oven-safe skillet.
2. Combine dry ingredients: flour, baking powder, baking soda, salt, and sugar.
3. Add the soy milk, vegetable oil, and vanilla; stir well.
4. Stir in the apple cider vinegar, mix well, and pour immediately into the skillet.
5. Bake at 230° Celsius (450° Fahrenheit) for 18 to 20 minutes, and serve.

Tofu Bacon (Vegan)
* 1 block extra firm tofu
* 3 tbsp vegetable oil
* 3 tbsp soy sauce or tamari
* 3 tbsp nutritional yeast
* liquid smoke (optional)
Instructions
Slice the tofu into thin strips (as bacon) and fry in a pan on medium, turning once, until crispy and gold brown on each side. Add soy sauce and one to two drops of liquid smoke (available in any large grocery store), toss with the tofu bacon slices, coat with nutritional yeast, and remove from heat.
Enjoy with friends.

This is a great collection of vegan breakfast foods. I am a vegan. Typically people don't have time to make a full breakfast, and good luck finding these items readily available in your local diner and/or sandwich shop.
I usually start every day with a shake. I have been having a shake for breakfast for many years. WHen I became a vegan, I had to make a couple of modifications, but it's basically the same thing as it was before. It's filling, satisfying, tasty, nutritious, and QUICK.
