Vegan Veggie Frittata
Ingredients* 1/4 cup olive oil
* 1 onion, finely chopped
* 4-5 green onions, chopped with the green and white parts separated
* 4 cloves garlic, minced
* 2 medium potatoes, shredded (or 2 cups of frozen shredded potatoes)
* 2 tsp. salt, divided
* 1/2 tsp. pepper, divided
* 2 lb. firm tofu
* 2-3 Tbsp. soy sauce, to taste
* 4 Tbsp. nutritional yeast (optional)
* 2-3 Tbsp. faux bacon bits (try Bacos)
Directions
Preheat the oven to 350°F. In a large skillet, heat the olive oil over medium heat. Add the onion and the white part of the green onions and saute for 2 to 3 minutes. Add the garlic and heat for another 30 seconds. Increase the heat to medium-high and add the potatoes, 1 tsp. of the salt, and 1/4 tsp. of the pepper. Cook for 10 to 15 minutes, flipping the potatoes regularly until they are well-browned. Blend the remaining salt and pepper, the tofu, soy sauce, and nutritional yeast in a food processor until they are creamy. Fold in the faux bacon bits, the green part of the green onions, and the fried potatoes and pour the mixture into a large, oiled pie or tart pan. Bake for 30 to 40 minutes or until the center is firm. Allow the frittata to cool for 10 minutes then invert it onto a serving plate.

Dairy-Free Oat Waffles
Ingredients* 2 Tbsp. sesame seeds
* 2 cups water
* 2 cups rolled oats
* 2 Tbsp. whole wheat or buckwheat flour
* 1 Tbsp. lecithin, liquid or granules
* 1/2 tsp. salt
* 2 tsp. vanilla
* 1-2 Tbsp. maple syrup or Sucanat
Directions:
Grind the sesame seeds in the blender. Add the remaining ingredients. Blend well and pour into a bowl. The batter will thicken as it sits and you will need to add a little water to make it the same consistency as when you first poured it out of the blender. Bake for 8 to 10 minutes on a preheated waffle iron. The waffles may be frozen for future use after they cool or serve them immediately with fruit.

Crepes a' la Cherry
Ingredients:* Crepes:
* 1/2 cup soy milk
* 1/2 cup water
* 4 Tbsp. nondairy margarine, melted
* 1 Tbsp. sugar
* 2 Tbsp. maple syrup
* 1/4 tsp. salt
* 1 cup all-purpose flour
* Oil, for frying
* "Cream" Filling and Tart Cherry Sauce:
* 8 oz. nondairy cream cheese (try Tofutti brand-www.tofutti.com), softened
* 1 1/4 cup of sugar, divided
* Juice and zest of 1 lemon
* 2 cups frozen, pitted cherries
* 1 Tbsp. cornstarch
Directions:
In a large bowl, using an electric mixer, blend together the soy milk, water, nondairy margarine, sugar, maple syrup, and salt. Add the flour and mix again. Cover the bowl with plastic wrap and refrigerate it for 2 hours. Lightly oil a small nonstick skillet or crepe pan and place it over medium-high heat. When the pan is hot, pour in 1/4 cup of the batter and swirl it until it covers the entire bottom of the pan. Cook the crepe until it is golden then flip it and cook the other side.
To make the "cream" filling, whip together the nondairy cream cheese, 3/4 cup of the sugar, and the juice and zest of the lemon. To make the cherry sauce, combine the cherries, the remaining sugar, and the cornstarch in a small saucepan over medium heat. Stir the mixture until the sugar melts and the sauce thickens. Allow it to cool before serving with the crepes. Drizzle one or both sauces, to taste, onto the crepes and serve.
