1. Create a salad bar for dinner. Use nutritious dips and those vegetable fancy decorations you learned to make. Dips include low fat salad dressing, peanut butter, cottage cheese, and salsa.

2. Make your vegetables as convenient to eat as any other snack food and you will eat more of them. Precut vegetables into serving size portions and place in the refrigerator for easy access.

3. Break out the china or treat yourself to a funky new serving platter. Make your vegetables look appetizing! Serve your vegetables on a beautiful plate or bowl.

4. You have fun decorating cakes and cookies, why not vegetables? Use cookie cutters or learn how to make roses, palm trees, birds, and other creations with vegetables. Serve vegetables in fancy shapes. There are simple cooking courses available that teach vegetable garnishing, as well as cookbooks.

5. Slice vegetables thin and layer them in sandwiches.

6. Choose a variety of vegetables you don't normally eat like asparagus, parsnips, beets, whatever veggie that you don't much care for eating. In a blender, shred them together and top with your favorite yummy dressing.

7. Toss in some shredded carrots or broccoli when serving hamburgers, sloppy joes, pizza or any other kid pleasing fare. While you've got the blender out, shred more vegetables and package them in ziplock bags or air tight containers for the next vegetable enriched meal.

8. Cut the meat in half and double the vegetables in your next batch of soup or stew. Try adding another vegetable along with the traditional carrots and potatoes. You'll still have the meaty taste, but with lower fat and calorie content.

9. Hide vegetables in any homemade desert, like chocolate cake. You can add tomato juice or pureed spinach to the batter. You won't be able to taste the veggies at all after the cake is baked. No-one will be the wiser, either.

10.Try grilling vegetable kabobs! Cut bite size pieces of vegetables and grill them on skewers or alternate with chunks of meat. You might to surprised to find how tasty vegetables taste by grilling them. Tomatoes are especially yummy when grilled. Add a tasty marinade, too.
