  • Oven Roasted Tomatoes
    From The Ace Bakery

    Ingredients
    1 1/2 lb. (680 g) fresh plum tomatoes
    2/3 cup (160 mL) medium-quality balsamic vinegar
    1/4 cup (60 mL) soy sauce
    2 Tbsp. (30 mL) vegetable oil

    Instructions
    Wash and halve the tomatoes lengthwise and place in a bowl. Combine the remaining ingredients. and pour over the tomatoes. Marinate at least 2 hours or overnight, in the refrigerator. Drain and reserve the marinade to use again. It will keep, refrigerated, for 10 days.

    Preheat the oven to 300°F (150°C).

    Place the tomatoes, cut-side up, on a baking pan covered with foil. Bake until slightly shriveled but not completely dried out, about 1 to 1 1/2 hours - longer if they came out of the refrigerator.

    Oven-roasted tomatoes can be stored in a covered container in the refrigerator for at least 1 week.

Assembling and cooking your grilled cheese sandwich...
Butter two slices of bread on one side, place one slice, butter-side down, on a work surface, add varied ingredients on top of the bread, top with the other slice of bread, butter-side up. Heat griddle or skillet to medium-low, put your assembled sandwich into the skillet and cook 2 to 4 minutes on each side or until golden brown and melty-cheesy! Pure yumness...don't ya think?

  • Orange Marmalade Spread

    Mix together until smooth and creamy equal parts orange marmalade and soft butter. To this mixture sprinkle in same measure of coarsely chopped and toasted pecans, walnuts, almonds, macadamia, sunflower seeds or a blend of different nuts.

    **This would be a wonderful spread on crunchy whole wheat bread that is topped off with salad greens such as arugala, mesclun, and or baby spinach.

  • Raw Apple and Currant Filling

    In a bowl add 1/2 to 3/4 teaspoon of grated lemon or orange peels, 1/2 teaspoon vanilla extract, 3 heaping tablespoons of cinnamon sugar, 1/3 cup of currants or golden raisins and 1 teaspoon fresh lemon or orange juice, mix well. To this mixture finely grate in 3 to 4 apples (preferably a tart variety; peeled or not). Stir and serve.

    **Crispy and sweet on an open-faced sandwich. Lightly butter and toast a slice of pumpernickel bread, add butter lettuce leaves and heap on this raw apple filling! Try topping with a dollop of cottage or ricotta cheese.

  • Carrot Filling for Sandwiches
    From The Time and Talents Club Recipe Book (1959)

    Ingredients
    2 1/4 lbs carrots; grated
    1 cup coconut; grated
    1 tablespoon coriander leaves; chopped
    4 green chiles; chopped and seeded
    Salt to taste
    2 tablespoons oil
    1 sprig curry leaves
    1/2 cup water
    1 teaspoon mustard seeds
    1 small onion; chopped

    Instructions
    Make a masala from the coconut, coriander leaves and chillies by chopping it all together and processing it in a food processor or blender. Add the grated carrots to the masala and mix well.

    Heat 1 tablespoon oil. Add the carrot mixture, curry leaves and water and cook until dry. Heat the remaining oil in another pan and fry the mustard seeds. Add the onion and fry until golden. Add the carrot mixture and fry for about 10 minutes.

    1 15 oz can cannellini beans (white Italian kidney beans)
    1/4 cup tahini
    1/4 cup fresh lime juice
    1 clove garlic, crushed
    1/2 small onion, minced

David Rocco's Recipe for Insalata del Mercato Ballaro

Fill a sliced, hard-crusty roll with these veggie sandwich ingredients...wowsa, huh?!

When I watched David Rocco's episode, Palermo, Palermo, the other day I thought of all of you looking for delicious, easy sandwich fillings that don't include meat. I could not wait to get on here to share the recipe and a quick video of David Rocco from YouTube (wish I'd found the actual episode snippet...perhaps I'll find it at a later date). You and I gotta try this recipe, don't you think? Enjoy every bite btw :)

Ingredients
2 yellow bell peppers, roasted
2 onions, roasted
2 large potatoes, peeled and boiled in salted water
1/2 pound/228 g string beans, ends trimmed, boiled
Extra-virgin olive oil
Salt and freshly ground black pepper

Allow all the cooked vegetables to cool. Then peel the skin off the peppers and the onions. Remove the seeds from the peppers. Cut the peppers, onions, and potatoes into slices and place in a large salad bowl. Add the string beans to the bowl. Season the salad with olive oil, salt, and pepper. Toss well and serve anytime.

  • Citrus Marinated Mushrooms
    From Cookbook Digest, May/June 1993

    Ingredients
    1 pound fresh medium mushrooms stems removed
    1 cup olive oil
    Grated zest of 1 medium orange
    Grated zest of 1 medium lemon
    1/2 cup fresh orange juice
    1/2 cup fresh lemon juice
    2 large garlic cloves very finely chopped
    2 teaspoons salt
    2 teaspoons mustard seed
    2 teaspoons cilantro leaves finely chopped
    1/2 teaspoon cayenne
    1/2 teaspoon freshly ground black pepper

    Instructions
    Place mushrooms, oil, zests and juices in a non-reactive saucepan over high heat. Bring just to a boil and remove from heat. Transfer mixture to a glass jar or bowl, and stir in garlic, salt, mustard seed, oregano, cilantro, cayenne, and pepper. Allow to cool completely, then cover and refrigerate, stirring occasionally, for at least 24 hours before serving. Drain mushrooms and serve. Makes 4 servings.

    From Thai Vegetarian Cooking

    Ingredients
    2 large dried red chilies, coarsely chopped
    1 teaspoon galangal (blue ginger) coarsely chopped
    2 small red shallots coarsely chopped
    3 ounces ready-fried beancurd finely diced
    Oil -- for deep-frying
    2 tablespoons oil
    1 tablespoon garlic finely chopped
    1 tablespoon lemongrass finely chopped into rings
    1 tablespoon coconut grated
    2 ounces long beans coarsely chopped into 1-inch lengths
    1 medium broccoli stem coarsely chopped at an angle into 1-inch lengths
    2 ounces baby sweetcorn roughly chopped at an angle into 1-inch lengths
    1 carrot finely chopped into matchsticks
    3 tablespoons vegetable stock
    2 tablespoons light soy sauce
    1/2 teaspoon sugar

    Instructions
    In a mortar, pound together the chilies, galangal and shallots to form a paste and set aside. Deep-fry the beancurd dice until crispy brown, drain and set aside.

    Heat the 2 tbsp (30 ml) oil and fry the garlic golden brown. Stir in the paste, add the lemon grass and coconut, stirring well. Add all the vegetables and briefly stir-fry. Add the stock, soy sauce and sugar. Stir well and turn on to a serving dish.

Peanut Butter and Orange Sandwich Filling

For kids and of course adults too ;)

Kid-Friendly Vegetarian Sandwich Fillings, Spreads, and Toppings

Adults are gonna love these too!

  • Updated PB&J
    Spread smooth or chunky peanut butter on two pieces of plain or toasted bread (homemade or store bought sprouted wheat rocks!). On one half sprinkle with shredded carrots, currants, and a thick drizzle of local honey, top with the other piece of bread. Cut in half or into quarters. Mmm! served with chunky applesauce.
  • Kids R Fooled Vegan Egg Salad Sandwich Spread
    Drain and mash up a firm block of tofu. To this mash add; for consistency and to taste, vegan mayo, sweet relish, mustard, minced celery and sweet or red onion. Add a shake or two of turmeric if you would like an 'eggy' color. This can be used to spread on sandwich bread or for a dip with crackers.
  • Salad Pockets
    Pack a salad into a pita pocket. Whip up an undressed salad and tuck it into a pita pocket with a side container (for drizzling) of homemade dressing OR build a pocket sandwich with a homemade salad and then add tasty kid-friendly ingredients; such as noodles, chopped nuts, and/or sweet dried fruit.
