A vegetarian spread for your sandwiches and more!

Purple Eggplant Poster
Available on Zazzle
Did you know vegetable spreads are called creams in Italy, even though they contain no dairy products?
Ingredients
- 2 medium-sized eggplants
- olive oil
- sea salt and freshly ground pepper
- 2/3 cup raw cashews; salted or unsalted
- 1 tablespoon dried Italian herbs; to taste
- 2 to 3 tablespoons olive oil
- Garlic; fresh or dried to taste
Instructions
Roasting the eggplant
Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease. Wash the eggplants, trim both ends, slice in half lengthwise, drizzle with olive oil, sprinkle with sea salt and freshly ground pepper. Place the eggplants onto the prepared baking sheet; skin side up. Roast in the preheated oven until softened and golden brown, 20 to 30 minutes. Remove from the oven, allow to cool for just a bit.
Preparing the roasted eggplant cream
Scoop roasted eggplant from skin and add with remaining ingredients into a blender or food processor. Blend until smooth and creamy. Adjust seasoning; to taste. If using unsalted cashews you might like to sprinkle in a tiny pinch of sea salt to the roasted eggplant cream. Store in an airtight container in the fridge.
Serving the roasted eggplant cream
Use as a sandwich spread in place of other condiments. Also delicious for dipping.
Recipe adapted from Vegan Yum Yum's post for Miniature Napoleons with Eggplant Creme.
Recipe Feedback
Ok, so I made the eggplant (with my own adjustments -- a lot less oil, curry spices) and it came out delicious (even better on bread than licking out the food processor, LOL) ~compugraphd, Squidoo lensmaster
Banana Raita
From The Vegetarian Epicure in celebration of 40 years!

Banana Flower Poster
Available on Zazzle
Raita is used in Indian cuisine as a sauce or dip to temper the heat of spicy dishes. I've used this particular recipe in my sandwiches too (see my idea below).
Ingredients
- 1 teaspoon butter or Ghee
- 1 1/2 teaspoons cumin seeds
- 1/4 teaspoon cardamom seeds
- 1/4 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 2 cups mashed bananas
- 2 cups plain yogurt
Instructions
Melt the butter or ghee in a skillet. Pound the spices together lightly in a mortar - they should not be completely crushed - and add them to the butter. Stir the spices around in the pan for a few minutes and then quickly stir in the mashed bananas. Remove from heat, stir in the yogurt, transfer to a serving dish and chill well in the refrigerator. Makes 6 servings.

- Kat I am not sure what the ingredients are on the opening sandwich picture. I thought it looked yummy and used it (with a credit) to the poster on Photobucket. :) Thanks for stopping in today.

Tell your own vegetarian story
It's open to everyone, easy and free to do.
WHY VEG? is a collection of personal stories and manifestos (and favorite recipes!) from vegetarians.
Whether you are vegan, vegetarian, or eat meat-free occasionally, this group welcomes you to share your story about vegetarianism. In the spirit of healthy bodies and a healthy planet, tell us about your transformation and why you did it. We're also open to yummy recipes, restaurants and any tips you've got on living a vegetarian lifestyle. You could make a page about 'Why I Gave Up Bacon (and lots more)' or 'Why My Girlfriend Convinced Me To Go Vegetarian' or 'Vegetarian Sloppy Joes' -- just a few examples. It's free, of course.
