I became a vegetarian little over 4 years ago after learning how our animal friends are treated. It became a challenge to find great foods to eat while maintaining good health. I like foods that are easy to make but do not lack in flavour.

This is my space to share some wonderful recipes I have come across and share ideas for a vegetarian lifestyle. 

All funds obtained through Squidoo for all my lenses will be donated to an animal rights charity.

Dining Out - Vegetarian and Vegan-Friendly Fast Food Places 

I am a busy girl. Working 40+ hours/week and going to nursing school full-time has gotten me eating out of my car. The hardest issue for me was finding places that would accommodate this veggie, so I decided to work on a list of places that cater to vegetarians and vegans.

Veggie Yummies - Breaded Tofu Nuggets (Kid-Friendly) 

Found on the web - creator unknown

1 packet fat-free ranch seasoning
1 cup cornflakes
1/4 cup nutritional yeast
1 lb. of extra firm tofu
Soy milk

Preheat the oven to 400°.

Slice tofu into 8 slices. Press for 10 minutes to get out extra water. Cut each slice into four nuggets and set aside.

Crush cornflakes into fine crumbs. Mix with ranch seasoning and nutritional yeast.

Dredge tofu nuggets once in the coating mix. Dip the nuggets into soy milk and dredge again to recoat.

Spray a cookie sheet lightly with oil. Arrange nuggets in a single layer on the sheet. Spray the nuggets themselves lightly with spray.

Bake for 10-15 minutes or until coating is dry and crispy.

Serve with dipping sauce and enjoy!

Spinach and Cheese Pockets 

Candace's Recipe

This is my friend Candace's recipe. She's a wonderful cook and so I'm making it this weekend!

Homemade spinach pockets: Spinach, feta cheese, 1 egg, salt and pepper to taste, 2 tbsp mozzarella cheese.

Stuff a wonton/springroll with the above, which is perfect for a crispy outer layer. Brush them with butter, sprinkle some seasalt for taste and texture, and put them in the oven at 375 F for 10 minutes or until golden brown.

Veggie Yummies - Roasted Veggies Casserole 

I received a copy of this from a friend, so I have yet to try it.

2 yellow squash
2 zucchini
6 medium potatoes (peeled)
1 large onion
Zest of one lemon
4 tsp. olive oil
4-6 tomatoes
2 oz. feta cheese
1 1/2 tsp. salt and pepper

Preheat oven to 375 degrees Fahrenheit. Slice potatoes into 1/8" thick wedges and all other vegetables into 1/4" slices. In a bowl, mix all veggies except tomatoes with lemon zest, 3 tsp. olive oil, salt and pepper. Place in a baking dish. Top with tomato slices, crumbled feta and the remaining teaspoon of olive oil. Cover tightly with foil and bake for one hour. Remove foil and bake for an additional 15 minutes or until veggies are slightly browned.

Veggie Yummies - Spaghetti Squash - Lasagna Style! 

I absolutely love this recipe! I never tried squash before last week. I saw this at the supermarket and decided to give it a try. So filling, yet very low-fat. Enjoy!

1 Spaghetti Squash
1 can of plum tomatoes with basil ( I got mine at Trader Joe's)
1 bag of low-fat mozzarella cheese (I also got mine at Trader Joe's since theirs is animal rennet-free)
Parmesan cheese
Salt and Pepper to taste

In a huge pot, add water enough to cover the squash and boil it until you can easily pierce it with a fork. Let cool for 10 minutes. Slice in half, remove seeds and flake squash with a fork. This is when you get spaghetti-like strands.

Take a deep baking dish and layer it with tomato sauce. Layer the squash, then add the mozzarella and the parmesan cheese. Continue layering and top the final layer with mozzarella cheese.

Bake at 375 degrees until cheese is melted or until golden brown.

Veggie Yummies - Chewy Chocolate Chip Cookies 

from the Post Punk Kitchen

I made these twice and they are soooo good. I've also added cherries for variations. Enjoy :)

Equipment:
Baking Sheet, Blender, 2 large bowls, mixing spatula, cookie sheets

Ingredients
3/4 cup canola oil
2 cups sugar
2 teaspoons vanilla

1 tablespoon + 1 teaspoon whole flax seeds
1/2 cup soymilk

2 cups all purp flour
3/4 cup dutch processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

Directions
Preheat oven to 350 F.

Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.

In a large bowl sift together flour, cocoa, baking soda and salt.

In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.

Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.

Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.

Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

Variations:
For chocolate chocolate chip cherry cookies, replace 1 teaspoon of the vanilla with almond extract, and replace 1/2 the chocolate chips with dried cherries.

For chocolate nut cookies, replace 1 teaspoon of the vanilla with a nut extract (almond, walnut, what have you) and replace the chocolate chips with 1 1/2 cups chopped nuts (hazelnuts, almonds or walnuts all are good).

Veggie Yummies - Hummus 

Delicious Veg Foods

One of my favorite foods to make is hummus because it is so versatile. It's great on sandwiches, pitas, a great veggie dip, on crackers, whatever. And best of all, it's easy to make!

Here's the recipe. Enjoy! :)

2 cloves garlic-roughly chopped
1/4 cup lemon juice
1/4 cup water
14 oz canned chickpeas (garbanzo beans)- rinsed and drained
1/2 cup tahini (sesame paste)
1 teaspoon sea salt

PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.

Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper. You can also add a chopped roasted red pepper, eggplant...the possibilities are endless.

Make a whole lot, because it's yummy! :)

Veggie Yummies - Avocado, Olive and Tomato Sandwich 

This sandwich is not only super delicious, but addicting as well. Enjoy! :)

1 cup olives (in your favorite color)
2-4 tablespoon extra-virgin olive oil
chopped garlic (optional), to taste
1 small ripe tomato
1 ripe avocado, peeled & pitted
2 slices whole wheat bread or whole wheat roll

Directions:

Put olives, garlic & olive oil into blender. Blend into a paste. Adjust garlic and oil to your liking.

Toast vegan bread if desired. Spread paste onto bread. Slice avocado and place on vegan bread. Slice ripe tomato and place between avocado and spread.

Close sandwich and stuff into face.

Serves: 1

Preparation time: 15 minutes
