The Top 9 Easy Steps to Take When Starting A Vegetarian Diet 

Here's How To Get Started On The Way Towards Better Health and Vegetarianism . . .

Vegetarian Tip 1. Start your transition by dropping junk foods, white sugar, and all meats, including fish and poultry.

Vegetarian Tip 2. Find others who are already vegetarian who can guide and support you during your shift e.g. veg forums, meet-ups and societies in your area.

Vegetarian Tip 3. Read books on vegetarianism and veganism. Or contact your state's Vegan and Vegetarian Society who would be happy to send you a Veg Starter pack.

Vegetarian Tip 4. Try out recipes that substitute plant-based alternatives into your old favorite dishes. (e.g. veggie burgers, veggie sausages, veggie fish cakes, tofu or veggie pies and soy products). Hint: Convenience foods cut out cooking time. Natural food stores stock many such things for you to choose from.

Vegetarian Tip 5. Eat less and less meat and dairy (if you couldn't give-up all meats at once, gradually delete them from your diet over a week or so), and eat more and more fresh, raw fruits and vegetables. Eat large salad every day (hint: make your salads as colorful as a rainbow for maximum nutrient content, with plenty of dark leafy greens).

Vegetarian Tip 6. Replace meat and dairy with a wide variety of organically grown whole grains like breads, beans, rice, nuts, pasta and cereals.

Vegetarian Tip 7. Don't worry about protein. There is protein in all whole foods. Humans need only 8% dietary protein - that percent amount is found in an orange!

Vegetarian Tip 8. Get regular exercise, fresh air, and plenty of clean filtered water. Enjoy your journey, soon you will have more energy, a cleaner body, better skin, plus you'll feel much healthier and lighter, too!

Vegan Carob-Mint-Nut Balls Recipe 

This is a very quick and easy little recipe I've been experimenting with lately (it's one of my favorites).

(Give yourself a burst of flavor and energy with these power packed little treats)

You will need:

1 cup raw cashews - (crushed or ground finely)
6 medjool dates (mashed up)
3 Tbs rice malt syrup
3 Tbs carob powder (or cocoa if desired)
3 drops peppermint oil
Desicated coconut to roll in

Method:

- Remove pits from fresh dates and mash in a bowl.

- Add rice syrup and peppermint oil and mix well.

- Next put in the crushed/ground cashews into the mixture and mix in very well.

- Now add the carob powder.

- Roll into balls then roll in the coconut.

- Refrigerate before serving.

*You can use any kind of raw nuts you wish, we've found these to be delish with cashews, almonds even macadamias.

Find Vegan Recipes and Acceptable Alternatives 

The decision to switch to a vegan diet can be one of the most difficult and life-changing ones you will ever make - if you don't know how to be vegan 'the easy way' that is. Some people make the decision for health reasons, and others do so for moral reasons. Whatever your motive might be for giving up animal products, it is important that you find acceptable alternatives to the meat you once enjoyed. Trying out different vegan recipes will allow you to find the ones that you like best!

Food For Thought

There are many foods that are accepted as part of a vegan diet, and they do not require a recipe at all! People who follow a vegan diet are allowed to eat fruits, vegetables, tofu, and nuts. These foods can be eaten alone, but they often serve as a base for a vegan recipe.

Additionally, modern grocery stores and supermarkets do an exceptional job of providing alternatives to foods that do not comply with a vegan diet. Items such as soy-cheese, non-dairy bread, and tofu ice cream make following a vegan diet and serving vegan recipes much easier. Vegans should check at their local grocery stores to see what products are available.

Gourmet Goodies

Like all other people, people following a vegan diet enjoy foods beyond the basic fruits and vegetables. It is nice to be able to prepare a recipe-or in this case, a vegan recipe-for dinners and special occasions. Being a vegan makes preparing recipes more difficult, because many of the ingredients found in standard recipes do not comply with the vegan lifestyle.

However, this does not mean that vegan food junkies should give up hope. There are many places where vegan recipes are readily available. The Internet is an amazing resource, and many websites contain a large database of animal-free recipes. Additionally, it might be a good idea to check your local library or book store for vegan cookbooks.

"Meat" Loaf and More

Vegan recipes have become very innovative in that they have found many acceptable meat alternatives. It is even possible to find recipes for "meat" loaf, "chicken" strips, and "turkey" roast. The ability to find vegan substitutes for these standard meals demonstrates the adaptability of a vegan's lifestyle.

To make "Meat" Loaf, vegan style, begin by assembling the ingredients you will need. These include: 2 cups of prepared vegetable broth, ½ cup ketchup, 2 tablespoons tamari (soy sauce may be substituted), 2 cups of TVP granules, 1 cup of quick oats or bread crumbs, 1/4 cup ground flaxseed, 1 tablespoon of nutritional yeast, 1 tsp each garlic granules, onion powder, oregano, and basil.

After preheating the oven to 375 degrees, start by mixing the prepared vegetable broth, TVP, tamari, and ketchup in a medium bowl. Let the mixture stand until the liquid is absorbed, or for about 10 minutes. Stir in all of the left over ingredients and mix well.

In a 9×5 loaf pan or glass casserole dish, tightly pack the mixture and put it in the oven for 40-45 minutes. Serve with mushroom gravy and mashed potatoes to complete the vegan recipe.

Children Choose "Chicken"

For a kid-friendly meal, "chicken" strips are a great choice. How can you cook chicken strips without the main ingredient-chicken? As usual, vegans have found a way to make their own version of this popular dinner.

The ingredients needed for this recipe are: oakra from one batch of soy milk, one 6 oz can of tomato paste, spices of your choice ( suggestions include salt, garlic powder, sage, cayenne, and black pepper), and 3 cups quick oats.

Preheat the oven to 350 degrees, and mix the okara, spices, and tomato paste in a large bowl. Gradually, one cup at a time, add the oatmeal to the mixture. Mix well (you might need to use your hands), and then shape them into thin strips. For a creative twist, let your kids mold the dough into shapes of their choice. Finally, bake them for 30-45 minutes and enjoy!

Though society is beginning to gear more foods and meals towards vegan eaters, it can still be more difficult to prepare vegan foods and recipes - but only if you don't know how to do so. The USDA says growing crops for animals takes up 80 percent of the agricultural land in the US and animals raised for food in the US consume 90 percent of the soy crop, 80 percent of the corn and 70 percent of its grain.

Wicked Vegan Berry Choc Cassata 

If you are anything like me and enjoy experimenting with heaps of different types of vegan alternative recipes and desserts to give to friends and family then here's a great easy little vegan dessert you can try out on others that they won't be scared to taste-test . . .

Wicked Vegan Berry & Chocolate Cassata

Here's what you'll need to make it:

1 litre vanilla soy ice cream (softened a little)
150g vegan turkish delight or other jelly lollies (roughly chopped)
100g raspberrries
100g blueberries (chopped)
1/4 cup almonds (chopped roughly)
1/4 macadamias (choppped roughly)
50g chocolate coated goji berries (chopped in half)
1/4 cup of Green & Blacks Maya Gold Chocolate (chopped roughly)

Method:

Line the base and sides of an 8 x 25cm pan with plastic wrap.
In large bowl, combine all ingredients and fold until roughly combined.
Next put some foil or a lid over the pan and freeze until firm.
Remove the log from the pan and remove plastic wrap. Serve sliced with extra rasberries or blueberries.

Tip: if you allow this to rest at room temperature before slicing up, it'll be much easier for you.

PS > Substitue your favorite berries or vegan chocolates in this recipe, as it works wonders with almost any fruit and sweets.

Yummo Vanilla Vegan Cake Recipe 

Here's a great vegetarian (and fully vegan) recipe for a quick vanilla cake that we've been using for many years now (Enjoy!).

You will need ...

4 oz vegan margarine
2 tsp vanilla
2 egg replacer
1 cup caster sugar
½-1 cup soy milk
1¼ cups Self Raising Flour

1. Cream margarine and sugar together until fluffy.
2. Add egg replacer and vanilla, and beat well.
3. Next, add the sifted flour, and then stir in the soymilk gradually, until all the ingredients are combined and smooth.
4. Cook in a moderate oven for 30-45 minutes.
5. Ice when cool and top off with shredded coconut.

Hot Avocado Salad Recipe 

This avocado recipe has a very nice twist on the usual cold salad style. You can top this with either vegan grated cheese, parmesan or simply leave the cheese alternative off it. It's great with or without the vegan cheese topping.

You will need:

3 medium avocados
1 medium tomato
1 medium red onion, finely chopped
1 red capsicum, finely chopped
1 stick celery, finely chopped
2 teaspoons sugar
2 teaspoons sweet chilli sauce
2 tablespoons balsamic vinegar
1 cup grated vegan cheese (optional)

Here's what to do with your ingredients:

- Preheat oven to moderate 180 C, and prepare a non-stick oven tray.
- Cut avocados in half lengthways and remove seeds. Scoop out two-thirds of the flesh, roughly chop. Retain shells.
- Peel, seed and finely chop tomato. Combine avocado, tomato, onion, capsicum and celery in a medium bowl.
- Combine sugar, chilli sauce and vinegar in a small screw-top jar. Shake until combined and pour over the other ingredients in bowl and mix well.
- Next spoon the fill into avocado halves; sprinkle with the vegan cheese. Place onto prepared oven tray and bake for 7-10 minutes or until heated through.
- Serve immediately with corn chips, crackers or sour dough bread.

Additional 22.8 Million Follow a Vegetarian-Inclined Diet

The just-released "Vegetarianism in America" study, published by Vegetarian Times (vegetariantimes.com), shows that 3.2 percent of U.S. adults, or 7.3 million people, follow a vegetarian-based diet. Approximately 0.5 percent, or 1 million, of those are vegans, who consume no animal products at all. In addition, 10 percent of U.S., adults, or 22.8 million people, say they largely follow a vegetarian-inclined diet.

Data for this survey were collected by the Harris Interactive Service Bureau on behalf of Vegetarian Times. The poll surveyed 5,050 respondents, a statistically representative sample of the total U.S. population. Vegetarian Times commissioned RRC Associates, a research firm in Boulder, Colo., to perform the data analysis.

The 2008 study also indicates that of the non-vegetarians surveyed 5.2 percent, or 11.9 million people, are "definitely interested" in following a vegetarian-based diet in the future.

The study also collected data on age, gender and other demographic factors. Of the vegetarians surveyed:

# 59 percent are female; 41 percent are male.
# 42.0 percent are age 18 to 34 years old; 40.7 percent are 35 to 54; and 17.4 percent are over 55.
# 57.1 percent have followed a vegetarian diet for more than 10 years; 18 percent for 5 to 10 years; # 10.8 percent for 2 to 5 years, 14.1 percent for less than 2 years.


The 2008 study also indicated that over half (53 percent) of current vegetarians eat a vegetarian diet to improve their overall health. Environmental concerns were cited by 47 percent ; 39 percent cited " natural approaches to wellness" ; 31 percent cited food-safety concerns; 54 percent cited animal welfare; 25 percent cited weight loss; and 24 percent weight maintenance.

"The vegetarian sector is one of the fastest-growing categories in food publishing," says Elizabeth Turner, Vegetarian Times' editor in chief. "It's a dedicated group of consumers that is growing daily."

"A vast number of people are seeking to reduce their meat intake, creating a rapidly growing market for all things vegetarian," says Bill Harper, vice president and publisher of Vegetarian Times. That trend is reflected in the growth of the magazine, which saw July through December 2007 newsstand sales increase 19.4 percent over the same period in 2006.
