Vegetarian Celebration Food

On this lens you'll find recipes and links for vegetarian and some vegan celebration buffet food. So whether you're catering for an all veggie gathering or are stuck for what to serve your vegetarian guests you'll find some ideas here.

Basic Celebration Cake Recipe 

6oz butter or Margarine
7oz sugar
8oz plain flour
1 level tsp baking powder
4 tbsp milk
1 tsp vanilla extract
3 eggs

1. Cream the butter and sugar together until smooth.
2. Beat in the eggs, milk and vanilla extract.
3. Slowly add the flour and baking powder again until smooth.

4. Sppon the mixture into two round baking tins and cook for approx 50 mins or until ready.

5. To test if the cake is ready gently press it in the middle, if the sponge springs back it's ready. If not leave to bake for another few minutes.

6. Let the sponges cool and sandwich together using either jam, cream, soft cream icing or thick yoghurt and ice with your choice of topping.

Suggestions and Variations

Add two tablespoons of cocoa powder with the flour. sandwich the sponges with cream and raspberries and ice with chocolate icing.

Add 2 tsps dried ginger instead of the vanilla extract. Sandwich the sponges with cream, chopped pineapple, strawberries and kiwi fruit. Drizzle the cake with lemon icing and serve.

Sandwich the sponges with jam and decorate around your chosen theme for a birthday cake.

Veggie Dips 

Vegan Guacamole

1 large ripe avocado
1 tsp lemon juice
4 large tbsps of salsa
1 clove crushed garlic
pinch cayenne pepper

Mash the avacodo until almost smooth or if you like a chunkier Guacamole then until the texture looks good to you.

Add the rest of the ingredients mix well, chill and serve with chips.

Hummus

200g cooked chickpeas
2 cloves garlic
1 large tbsp tahini
1 tbsp olive oil
Juice of one lemon
Salt and pepper to taste

1. Put all of the above in a blender. Whizz till it looks like hummus.

2. Serve with crudités, chips or pitta bread.

Vegan Spicy Indian Dip
2 cups vegan yogurt
1 tablespoon peanut oil
1 large clove crushed garlic
1 tablespoon hot curry powder
1/2 cup vegan mayonnaise
2 tablespoons sweet mango chutney, finely chopped
1 spring onion finely sliced
2 dashes hot pepper sauce
1 teaspoon freshly squeezed lime juice
1 tablespoon finely chopped fresh coriander
Salt and freshly ground pepper to taste (be careful with the pepper as this dip can get pretty hot!)

Throughly mix all the ingredients, serve with crudités, chips or pitta bread.

Vegan "Sour Cream" Dip

½ pound silken tofu
2 Tbsps lemon juice
3 Tbsps canola oil
2 tsps rice vinegar
A Pinch of salt.

1. Whizz the ingredients in a blender, chill and serve.

Crudités 

Suggested Vegetables

Bell peppers
Broccoli
Carrots
Cauliflower
Celery
Cucumbers
Spring onions
Mushrooms
Radishes
Sugar snap peas

Rinse the vegetables well, peel (if required) and cut into batons or rounds.

Serve on a platter with the dips.

Aloo Pakora 

4 large potatoes
2 cups vegetable oil(for deep frying frying)
1 cup besan (chickpea flour)
1/2 tsp baking powder
1/2 cup water
1 tsp hot chili powder
2 tsps cumin powder
4 cloves of crushed garlic
3 inches of chopped fresh ginger
Pinch of salt
2 tablespoons chopped fresh coriander

Mix the besan flour and baking powder adding the water gradually until a smooth texture is achieved.

Add the chilli, cumin, garlic, ginger, salt and chopped coriander and stir into the batter.

Slice the potatoes in 1/4 inch slices, dry and the dip one slice into the batter. A thin coat of batter should cling to the potato.

Heat the oil in a large pan until hot -a deep frying pan is best.

Dip the potato slices in the batter and fry until golden.

Remove from the oil drain on kitchen paper. These can be served immediately or made ahead and either reheated or served cold.

Quick and Easy Vegetarian Sausage Rolls 

1 packet of ready to roll vegan puff pastry
10oz fresh breadcrumbs
8 oz Vegan Cheddar Style cheese, grated
1 large onion, grated
3 tablespoons vegan cream cheese
1 level tbsp fresh chopped parsley, chives, sage and thyme
1½ level tsps mustard powder
A pinch of cayenne pepper
Salt and fresh black pepper

Place all the filling ingredients into a mixing bowl and mix thoroughly.

Roll out the pastry thinly onto a floured surface to form an oblong. Cut the pastry into three strips and divide the filling also into three, making three long rolls the same length as the strips of pastry (if it's sticky, sprinkle on some flour).

Place one roll of filling on to one strip of pastry. Brush the edge with oil to seal, then fold the pastry over and seal it. Lift the roll up and turn it so the sealed edge is on the bottom. Press gently and cut the rolls diagonally, so that they form little diamond shapes. Slash each one on the top in three places with a knife, then brush with oil. Repeat all this with the other portions of filling and pastry.

Bake on oiled baking sheets, on the top shelf of the oven for 20-25 minutes until the pastry is golden.

Once cooked leave to cool on a wire rack

Mushroom Pate 

2 clove garlic
1 tsp cumin seeds
Olive oil
100g Brown mushrooms
100g Chanterelle mushrooms
a handful of Breadcrumbs
1/2 tub of vegan cream cheese
Black pepper to taste
1 handful of chopped fresh chives

Fry the garlic, mushrooms and cumin seeds until soft. Add to the rest of the ingredients and whizz in a blender.

Serve on oatcakes, savoury biscuits or on mini pitta bread.

Still Stuck For What To Serve 

or in a hurry.

Cut a large store bought vegetarian pizza (please note this won't be suitable for vegans) into slices for hot finger food.

Place a large bowl of vegetable chilli on the table and let guests help themselves. Alternatively a vegetable soup with a selection of nice bread usually goes down a treat.

Buy samosas, pakoras, and bahjis from an indian deli , serve hot with dips.

Serve suitable chinese vegetable dim sum.

Serve falafel, pitta bread and salad for a healthy and filling veggie option.
