Simple, easy and nutricious Veggie Recipes

This lens is dedicated to the most delicious vegetarian recipes.

My name is Ava, and I've been a vegetarian for quite some time already. I figured Squidoo would be a nice place for me to share and find more information about vegetarian diet, recipes and knowledge.

To this lens, or page, I will collect the best vegetarian recipes I've tried. And I for anyone who reads this page to submit their own recipes with the feedback form (full recipe or just link to your own recipes/lenses), and of course you can contact me if you like. I'll be adding the veggie recipes I find to this lensroll thing too.

At this point, the page only has couple of recipes, as I was getting the feel for this squid-thing, but I'll be updating the page later on with my own or your recipes, if you choose to send them to me.

Tofu Coconut Soup

Simple and delicious

* 500 grams (16 ounces) of tofu
* 2 tbsp soy sauce (6 teaspoons = 1 oz = 30 grams)
* 1 onion
* 3 cloves of garlic
* 1.5 tbsp oil (4-5 teaspoons = 0.75 oz = 22.5 grams)
* 1 l of tomato juice (1 quart / 4 cups)
* 3 dl coconut milk (3 dl = 3 deciliter = 3/10 of a liter = 1 1/2 cup)
* 0.25 teaspoon of chili powder (0.125 ounces)
* 2 Vegetable broth cubes
* fresh basil

Season the tofu, for example with curry or pepper

Fry the tofu on a pan. Add soy sauce and cook it a bit more.

Peel the onion and the cloves. Cook the onions in a pot with olive oil.

Add tomato juice, coconut milk, powdered chilli and the broth cubes to the pot.

Let the soup boil for ten minutes.

Ground the basil. Add tofu and basil to the finished soup.

Veggie Casserole

Great Taste from Simple Ingredients

* 1 swede (also known as rutabaga or a Swedish turnip)
* 3 carrots
* 1 onion
(nearly any vegetable goes well in this)

* 2 cloves of garlic
* 1 dl grain soy (1 dl = 1/2 cup)
* 1.5 dl pot barley (1.5 dl = 3/4 cup)
* 1.5-2 dl veggie broth: (2 dl = 1 cup)
* Vegetable broth cubes,
* a splash of soy sauce,
* trace of salt, spice and white pepper,
* chili, caraway and 1 / 2 dl sunflower seeds
* Butter
* 1 egg

Slice the vegetables to about 1/3 inch size (less than a centimeter), so that they bake well.

Boil the pot barley for 10 minutes, and mix in a dab of butter.

Grease an oven casserole and pile the vegetables, grain soy and the barley to the carrerole alternately.

Prepare vegetable broth on a stove and spread it to the casserole. Break the egg on top.

Bake at 200°C (392 F) on the bottom level of the oven for 45-60 minutes.

Tomato Pasta with Herbs and Seeds

Nutritious and Delicious Pasta

* Whole Grain Spaghetti (any pasta will do, but prefer Whole Grain)
* 1-2 Tomatos
* ~1/2-1 dl (1/4-1/2 cup) seeds, pumpkin and/or sunflower
* 2-4 cloves of garlic
* 1-4 green chilis
* Olive oil
* Salt
* Black pepper
* Oregano
* Basil
* Thyme

Boil the spaghetti, according to the instructions, or make fresh pasta. Drizzle after boiling.

Chop the chili and the garlic. Preheat the pan and toast the seeds in it.

Add a splash of oil and fry the chili and garlic in it.

Chop or slice the tomatoes.

Add pasta to the pan and cook for a minute. Add herbs and the chopped/sliced tomatoes.

Lift the pasta to the plates and drizzle oil on top.

Finish the portions with couple of herbs.
