Vegetarian Recipes With 5 or Less Ingredients

It's a Personal Choice

 

Whether you're a vegetarian or would just like to try vegetarian meals from time to time, my intent for this lens is to offer quick and easy veggie recipes that are also appealing.
This is a companion to my "Recipes with 5 or Less Ingredients" lens and a direct response to people who've requested such a lens.
Vegetarian eating can be very healthy and people do it for many different reasons. I am not a vegetarian but I do love vegetables and eating meatless once or twice a week can be good for the budget. This is not a lens to educate those who may be considering changing their lifestyle, I'll let the experts take care of that. I hope it will be useful to my vegetarian friends and anyone else out there that would like to enjoy a meatless dish, whatever their reasons may be. Finding vegetarian recipes with five or less ingredients hasn't been easy so this will definitely be a work in progress so come back often as I will be adding more and more content.

Maple-Roasted Carrots & Parsnips 

From Woman's Day Magazine

Serves: 4

Prep: 15 min
Bake: About 30 min

Cost Per Serving: 46¢

1 lb carrots (6 medium), peeled
12 oz parsnips, peeled
1 Tbsp vegetable oil
1 Tbsp maple syrup or pancake syrup
Season with salt and pepper

1. Heat oven to 450°F. Have a rimmed baking sheet ready.

2. Place carrots and parsnips on baking sheet. Sprinkle with oil, salt and pepper; stir gently until evenly coated.

3. Bake 25 to 30 minutes, turning vegetables over after 15 minutes, until tender and browned.

4. Remove from oven, drizzle with maple syrup and gently toss until coated. Transfer to a serving bowl; serve immediately.

Per serving: 143 cal, 2 g pro, 26 g car, 7 g fiber, 4 g fat (0 g saturated fat), 0 mg chol, 332 mg sod

Using Tofu 

Tofu Lo-Mein

INGREDIENTS
1 (16 ounce) package extra firm tofu
2 tablespoons olive oil
2 (3 ounce) packages Oriental flavored ramen noodles
1 (16 ounce) package frozen stir-fry vegetables
1 1/2 cups water
1 tablespoon soy sauce, or to taste
DIRECTIONS
Press tofu between paper towels to remove some of the water; cut in to bite size cubes. Heat olive oil in large skillet over medium-high heat. Add tofu, and fry until golden brown, about 15 minutes. Stir occasionally to prevent burning.
Meanwhile bring water to a boil in a medium saucepan. Add noodles from ramen packages, reserving the seasoning envelopes. Boil for about 2 minutes, just until the noodles break apart. Drain.
Add the stir-fry vegetables to the pan with the tofu, and season with the ramen noodle seasoning packet. Cook, stirring occasionally until vegetables are tender, but not mushy. Add noodles, and stir to blend. Season with soy sauce to taste and serve.

Stewed Okra and Tomatoes 

I grew up eating this one!

INGREDIENTS:
1 pound fresh okra, washed, trimmed, sliced
1 can (14.5 ounces) stewed tomatoes
1 green bell pepper, chopped
2 tablespoons finely chopped onion
salt, to taste
PREPARATION:
Place sliced okra in pan; cover with water. Bring to a boil and continue to cook for 5 minutes. Drain water; add remaining ingredients. Simmer mixture for 15 to 20 minutes longer, until okra is tender. Add salt, if desired, to taste.
Serves 4.

Zucchini Fry 

Ingredients
1 tablespoon olive oil
2 cups zucchini, sliced
1/2 cup carrots, shredded
1 tomato, diced
1/2 red onion, sliced
1 package Morningstar Farms® Bacon Strips
Salt, to taste
Pepper, to taste
Directions
In a large saucepan, heat olive oil over medium heat.
Add zucchini, carrots, tomato and red onion.
Crumble bacon strips and add to veggie mixture.
Season with salt and pepper.
Simmer for 25 minutes.

I only eat meat when it's offered in a meal by
other people - as a health consideration mostly. At home I eat chicken or fish and lots of veggies and fruit. That didn't fit into the poll...
