Yeah yeah yeah, I know, Velveeta's chemical make-up is like only one molecule away from plastic. So what? It tastes good, it melts better, and has a shelf life of about 50,000 years. Ever try making nachos with blue cheese? That stuffs funky! It's got mold in it..MOLD! Just think of how much worse your wife's nasty ass tuna casserole would be if she tried to make it with brie or some other designer cheese. Velveeta likes you, trust the cheeeeeeeeese!

Velveeta is a by product of the cheese making process, according to Kraft's website describing it. Its labeled a whey product, I believe they say.
I've heard the one molecule away from plastic saying referring to everything from velveeta to margarine to a klondike bar. Silly arguement there mates. Search molecule structure at Google. Then get back with me.
By the way, Velveeta has much less fat than traditional cheese. It is an acquired taste though, I must admit. I believe they call it a comfort food.

Velveeta used to be real cheese. I was basically processed from the leftover trimmings of cheeses like cheddar, swiss, colby and others. This allowed Kraft to have very little wasted cheese. I know the formulation has changed since my days in Urbana, but it is not the same product today.
