First of the Waffle Recipes: Basic Waffles
2 cups flour
3 tsp gbaking powder
1 tsp baking soda
1 tsp salt
2 cups four milk or buttermilk
4 eggs, beaten
1/4 cup melted butter or vegetable oil
Method:
Sift the dry ingredients together. Mix the sour milk and eggs together. If you don't have sour milk, just take two cups of regular milk and add two tablespons of vinegar. It will sour shortly.
Use a beater and beat at high speed. stir in oil or butter.
Preheat the waffle iron and bake until golden.
Serve with syrup.

Second of the Waffle Recipes: Fudge Brownie Waffles
Sinfully good.
4 oz unsweetened chocolate
1/3 cup butter
1 1/2 cups flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 cup granulated sugar
1 tbsp unsweetened cocoa powder
3 eggs, separated
1/2 cup milk
1/2 cup dairy sour cream
1 tsp vanilla extract
3/4 cup walnuts, chopped
Vegetable shortening for the grids
confectioners' sugar
Method
Preheat waffle iron. In a small, heavy saucepan or double boiler, melt chocolate and butter over low heat.
In a medium-size bowl sift together flour, baking
powder, baking soda, granulated sugar and cocoa
powder.
In a large bowl beat together egg yolks, milk, sour cream and vanilla. Gradually stir in flour mixture and melted chocolate and butter. Beat until smooth. Stir in walnuts.
In a small bowl, whip egg whites until soft peaks are formed. Fold into batter, which will be thick.
Lightly brush hot grids with shortening or oil. Pour enough batter to fill two-thirds of the waffle iron. Push batter out to the edges with a wooden spoon. Cook until crisp and a dark rich brown. Do not overcook. Repeat with the remaining batter.
To serve, cut waffles into quarter sections. Sprinkle powdered sugar through a fine sieve over the top.
Serve with powdered sugar or with ice cream, Chocolate Fudge Sauce and whipped cream.
Waffle recipes are not necessarily good for the waistline! :-)

Third of the Waffle Recipes: Light Waffles

4 cups self-rising flour
2 tbsp sugar
1/4 tsp baking soda
4 cups nonfat buttermilk
1/2 cup vegetable oil
8 egg whites
Vegetable cooking spray
Method
Combine flour, sugar, and soda in a large bowl.
Combine buttermilk and oil; stir well. Add to dry ingredients, stirring just until moistened. Beat egg whites until stiff peaks form; carefully fold into batter.
Coat a waffle iron with cooking spray and allow waffle iron to preheat. Pour batter onto hot waffle iron and bake.
Makes about 32 waffles of 105 calories each, and with 3.8 grams of fat.

Fourth of the Waffle Recipes: Smoked Salmon and Dill Waffles
1 3/4 cup flour
2 tbsp double-acting baking powder
1 tso salt
1/4 tsp freshly ground black pepper
2 cups milk
2 eggs
5 oz smoked salmon
1 md onion, peeled & finely diced
1/4 cup snipped fresh dill
Softened cream cheese and finely chopped scallions or sour cream and salmon caviar for topping.
Preheat your waffle iron. Melt the butter; reserve. In a large bowl, whisk together the flour, baking powder, salt and pepper. In
another bowl, whisk together the milk and eggs until
well blended. Pour the liquid ingredients over the dry
ingredients and whisk gently to combine. Fold in the
salmon, onion, dill and melted butter.
Lightly butter the grids of your iron, if
needed. Brush or spray the grids again only if
subsequent waffles stick.
Spoon out 1/2 cup of batter (or the amount recommended
by your waffle maker's manufacturer) onto the hot
iron. Spread the batter evenly over the grids with a metal spatula or wodden spoon, stopping right before the edge. Close the lid and bake until golden and crisp. Serve immediately or keep the waffles warm while you continue baking the others.
Serve with a scoop of cream cheese and a sprinkling of chopped scallions or a generous spoonful of sour cream and some salmon caviar
