Let's Go Nuts Over Walnuts!

The walnut is such a versatile resource, that I decided to see how many uses I could find for it!

Through this lens, I hope to share with you some of the many uses of the walnut including yummy walnut recipes.

I'll reguarly be adding items about walnuts and walnut wood, so be sure to check back soon!

Walnuts On Wiki 

Walnuts (genus Juglans) are plants in the family Juglandaceae. They are deciduous trees, 10-40 meters tall (about 30-130 ft), with pinnate leaves 200?900 millimetres long (7-35 in), with 5-25 leaflets; the shoots have chambered pith, a character shared with the wingnuts (Pterocarya) but not the hickories (Carya) in the same family.

The 21 species in the genus range across the north temperate Old World from southeast Europe east to Japan, and more widely in the New World from southeast Canada west to California and south to Argentina. The Latin name, Juglans, derives from Jupiter glans, "Jupiter's acorn": figuratively, a nut fit for a god.

The word walnut derives from Old English wealhhnutu, literally "foreign nut", wealh meaning "foreign" (wealh is akin to the terms Category: Wiktionary - :Welsh|Welsh and Vlach; see Walha and History of the term Vlach).Online Etymology Dictionary - "Walnut" The walnut was so called because it was introduced from Gaul and Italy. The Latin name for the walnut was nux Gallica, "Gallic nut".

Cooking With Walnuts 

The nuts of all the species are edible.

Walnuts are rich in oil, and are widely eaten both fresh and used in cookery. The oil is expensive so should be used sparingly and it makes a really tasty salad dressing.

Walnuts are also an excellent source of omega-3 fatty acids, and have been shown as helpful in lowering cholesterol.

They need to be kept dry and refrigerated to store well. In warm conditions they become rancid in a few weeks, particularly after shelling.

In England we have "pickled walnuts". These are immature nuts in their husks that have been preserved in vinegar. They are just wonderful with cold meats...especially with all that left over turkey at Christmas!

In Armenian cuisine, walnuts are preserved in sugar syrup and eaten whole.

In Italy, liqueurs called Nocino and Nocello are flavoured with walnuts. In Georgia, walnuts are ground along with other ingredients to make walnut sauce.

Waldorf Salad 

Apparently, the first Waldorf Salad was created in New York City in 1893, by Oscar Tschirky, the maître d'hôtel of the Waldorf Astoria.

The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise. Chopped walnuts were added later to this now American classic.

Some prefer their Waldorf salad made with yogurt, instead of mayo.

Waldorf Salad Recipe 

Ingredients

1/2 cup chopped, slightly toasted walnuts
1/2 cup celery, thinly sliced
1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
1 sweet apple, cored and chopped
3 Tbsp mayonnaise
1 Tbsp fresh lemon juice
Salt
Pepper
Lettuce

Method

In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper.

Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.

Serves 2 Hungry tummies ;)

Pickled Walnuts Recipe 

'Pickled walnuts?' I hear you cry! Yes, they're delicious! Great with cold meats or salad. Give them a try!

Ingredients:

green Walnuts
1/2 cup salt for every 5 cups water (for brine)
For spiced vinegar:
For every 5 cups white vinegar, add 2 tablespoons peppercorns, 2 walnut-sized pieces 0f dried gingerroot and 2 tablespoons whole allspice.

Method

For the Brine:

Boil the water and pour in the salt. Stir well to dissolve and cool before using.

Wearing rubber gloves, prick the walnuts all over with a thin skewer or metal knitting needle. Put them into a bowl and cover with brine.

Put a plate on top of the walnuts to keep them under the surface and leave 5-6 days in a cool place. Drain, cover again with fresh brine and leave for another week. Drain well, spread on a tray and leave in a warm room or, better still in the sun.

Turn them occasionally and leave for 2-3 days or until they turn black.

For the spiced vinegar:

Cruch the spices lightly to bruise them, tie in a piece of cheesecloth and add to the vinegar. Boil in a covered enamel or stainless steel pan for 10 minutes. Cool and remove the spices.

Pack walnuts in dry jars, then cover with spiced vinegar, seal at once and leave 7-8 weeks before using.

If you have a Walnut tree, or access to one, you can try this English recipe.

Green Walnuts (picked in June and July, before the shell has formed and can harden in the pickle.)are used. If you push a thin skewer or knitting needle into the nut, you will be able to feel when the nut is beginning to form. Make sure to wear rubber gloves as walnuts stain badly.

Pickled walnuts are soft, not crunchy and taste soooo good!

Baklava Recipe 

INGREDIENTS

1 (16 ounce) package Filo dough
1 pound chopped nuts
1 cup butter
1 teaspoon ground cinnamon
1 cup water
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup honey

DIRECTIONS

1. Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan.

2. Chop nuts and toss with cinnamon. Set aside. Unroll Filo dough. Cut whole stack in half to fit pan.

3. Cover filo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered.

4. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep.

5. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts.

6. Bake for about 50 minutes until baklava is golden and crisp.

7. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.

8. Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

Serves around 18 portions.
