Watermelon: why it's so good for you 

Did you know that watermelon is the Lycopene Leader in fresh fruit and vegetables?

We have known for a long time that watermelon contains vitamin C. But in recent years, scientists learned that watermelon also contains a phytonutrient called lycopene (sounds like "LIKE-oh-peen").

It is the substance, or pigment, that gives tomatoes and watermelon their rosy red color.

These red pigments are known as carotenoids (ka-ROT-en-oids). Scientists are interested in carotenoids because of their antioxidant properties. Antioxidants are one of many nutrients that we get from plants that are needed to help keep the body's cells healthy.

What's so special about the lycopene in watermelons?

Watermelons and tomatoes both have lots of lycopene. It seems that your body can use the lycopene from watermelon more easily than the lycopene from raw tomatoes. Actually, the lycopene from tomatoes is more easily absorbed inside your body once the tomatoes have been cooked.

  • Watermelon (especially yellow-orange varieties) is one of the rare food sources of citrulline, an amino acid used in wound healing and cell division. Slurp up the juice but bite down too: There's extra citrulline in the white and green part that most people toss.
  • Watermelon is a good source of potassium, which helps control blood pressure -- making it the perfect snack for stressful family reunions.
  • There are only 96 calories in two fill-you-up cups of sweet watermelon, and its high liquid content makes you feel full. So start your dessert course with a wedge and you're less likely to go overboard on Aunt Edith's brownies.

Tips for Choosing the Best Watermelon 

There's an art to choosing the best watermelon that makes all the difference in the world. The National Watermelon Promotion Board offers these three easy tips for choosing a great watermelon.

* Choose a firm, symmetrical fruit that is free of bruises, cuts and dents.
* Before you buy, pick up your melon. The heavier it feels, the better -- a good watermelon is 92% water, which makes up most of its weight.
* on the underside of the watermelon there should be a creamy yellow spot from where it sat on the ground and ripened in the sun.

Tips for Storing Watermelon 

Store watermelon on the warm side

Store uncut watermelons at room temperature. They continue to develop nutrients after picking and refrigeration halts the process.

Compared to most fruits, watermelons need a more "tropical" climate - a thermometer reading of 55°° F is ideal. However, whole melons will keep for 7 to 10 days at room temperature.

Store melons too long, and they'll lose flavor and texture.

Lower temperatures cause chill injury After two days at 32° F, watermelons develop an off-flavor, become pitted and lose color.

Freezing causes rind to break down and produces a mealy, mushy texture.

Once a melon is cut, it should be wrapped and stored at 37° - 39° F.

3 cups chopped seedless watermelon
1 cup chilled green tea
1 cup chilled cream soda

Seedless Watermelon 

You can hardly find a watermelon that hasn't been genetically altered to be seedless in the US. Do you think this is a good idea? The seed companies do this so that growers are forced to buy their seeds every year. But is this healthy or does it take the life-force out of the food? Or worse? Europeans do not allow genetically altered foods.

I suppose they are not as natural as watermelons with seeds, but I do tend to buy seedless. I notice that the first spots to go bad are right around the seeds, so the less seeds, the longer my melon lasts.

The only thing I miss is a good watermelon spitting competition...oh, am I the only one that's ever done that, hmmm.

Soon though, he felt a discomfort in his stomach pointing out the error of his ways, and went back to the cart to replace the melon.
