"No 4th of July barbecue is complete without watermelon. I'd like to amend that statement to include Watermelon Cocktails!

This refreshing summer cocktail is the perfect accompaniment to whatever you'll be throwing on the grill this Independence Day. Martha Stewart inspired this recipe, which I adapted from her watermelon and basil margaritas.

The watermelon is cool and refreshing, while the mint and basil balance the sweetness and give it a fresh, crisp herbal note. You can use all mint or all basil, if you prefer."

4th of July Watermelon Cocktail:

7 1/2 pounds seedless watermelon, rind removed, fruit cut into 1-inch cubes
4 teaspoons superfine sugar
8 ounces silver tequila
12 basil leaves
12 mint leaves
2.5 ounces Cointreau
6 cups ice

Make watermelon ice cubes by putting 24 pieces of cubed watermelon on a baking sheet lined with wax paper.

Freeze for one hour, covered.

Take the rest of the watermelon plus the sugar and puree until smooth. Strain into a bowl. Put the tequila, basil and mint in a pitcher and muddle. Then stir in Cointreau and watermelon puree. Pour mixture into cocktail shaker with ice and mix for each cocktail. Put watermelon ice cubes in a glass and pour cocktail in. Garnish with herb sprigs and enjoy!

Cool, refreshing watermelon in a martini. Sweet perfection!

Ingredients:

1 cup watermelon juice (press watermelon through a sieve or cheesecloth)
1/2 cup (4 oz) Vodka
1/4 cup simple syrup (sugar)
juice of 1 lime
3 tablespoons salt (optional)
3 tablespoons sugar (optional)
ice
Watermelon slices, for garnish (optional)
Preparation:

Makes 2 servings.
Mix together the sugar and salt if using. Wet the rim of a chilled martini glass with a piece of watermelon. Dip the rim into the sugar and salt mixture. Repeat for other glass.

Place the watermelon juice, vodka, lime juice, and simple syrup into a cocktail shaker. Top with ice. Shake well.

Pour contents through strainer into martini glasses.

Garnish with a wedge of watermelon if desired.

Simple syrup is a mixture of sugar and water. It is simple to make, using a ratio of 2 parts sugar to one part water. You can keep it on hand to use as a sweetener for coffee and tea, or as a base for instant sorbet.

Ingredients
1 teaspoon lime zest
1/2 cup water
1/2 cup sugar
3 tablespoons coarse salt
1 lime wedge
1 cup watermelon puree (*see Cook's Note)
2 tablespoons fresh lime juice
1/2 cup premium 100 percent agave tequila
2 tablespoons orange-flavored liqueur (recommended: Grand Marnier or triple sec)
1 cup ice
Directions
In a medium saucepan, combine the lime zest, water, and sugar. Bring to a boil over medium heat, and cook, stirring, until the sugar dissolves. Remove from the heat. Cool to room temperature and strain out the zest. (Can be made in advance; keep in a covered container in the refrigerator.)

Chill a margarita glass in the freezer for 30 minutes. Place the coarse salt in a shallow dish or saucer. Wet the rim of the glass with a lime wedge and dip the glass into the salt, coating the top edge.

In a cocktail shaker, combine 2 tablespoons of the cooled lime syrup with the watermelon puree, lime juice, tequila, orange-flavored liqueur, and ice. Shake until frothy and well chilled, at least 1 minute. Strain into the prepared glass and garnish with a lime wedge.

*Cook's Note: To make the watermelon puree, remove seeds from fresh watermelon and cut into large chunks. Place in a blender and process until smooth and well pureed.

Watermelon-Tequila Cocktails

Ingredients

1/4 cup water
1/4 cup granulated sugar
8 cups diced seedless watermelon (1 pound)
1/4 cup fresh lime juice
1 3/4 cups blueberries
3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
1 1/4 cups silver tequila
Ice

Directions

In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint
Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.
Makes 8 drinks.
