Watermelon: why it's so good for you
Did you know that watermelon is the Lycopene Leader in fresh fruit and vegetables?
We have known for a long time that watermelon contains vitamin C. But in recent years, scientists learned that watermelon also contains a phytonutrient called lycopene (sounds like "LIKE-oh-peen").
It is the substance, or pigment, that gives tomatoes and watermelon their rosy red color.
These red pigments are known as carotenoids (ka-ROT-en-oids). Scientists are interested in carotenoids because of their antioxidant properties. Antioxidants are one of many nutrients that we get from plants that are needed to help keep the body's cells healthy.
What's so special about the lycopene in watermelons?
Watermelons and tomatoes both have lots of lycopene. It seems that your body can use the lycopene from watermelon more easily than the lycopene from raw tomatoes. Actually, the lycopene from tomatoes is more easily absorbed inside your body once the tomatoes have been cooked.
Watermelon for Health
But at least once a day, three days a week, do take watermelon seed tea as a part of the water. This would be prepared by pouring a pint of boiling water over a tablespoonful of watermelon seed (ground or cut) and allowing it to steep. Let it cool, then strain and drink. This will clarify those conditions that cause reactions in the kidneys and bladder, for, the lack of eliminations and the slowing up of the circulation causes a greater quantity of drosses to be held in the system, and these need to be eliminated from the body.
More will be eliminated through using this stimuli for the kidney activity than in most any way.

Healthy Reasons to Eat Watermelon
- Watermelon has lots of lycopene, a key plant antioxidant that is famous for fighting heart disease and prostate cancer. Tomatoes are usually considered the lycopene all-stars, but you have to cook them in a little oil to release it. Watermelon not only needs no cooking to unleash its lycopene but, cup for cup, it has 40 percent more than tomatoes.
- A big slice of watermelon (about two cups) fills almost half your vitamin C quota.
- Two cups of the juicy red melon also supply nearly a quarter of your daily beta carotene, which your body uses to make vitamin A. Running low on beta c can leave you vulnerable to viral infections and vision trouble.
- Watermelon (especially yellow-orange varieties) is one of the rare food sources of citrulline, an amino acid used in wound healing and cell division. Slurp up the juice but bite down too: There's extra citrulline in the white and green part that most people toss.
- Watermelon is a good source of potassium, which helps control blood pressure -- making it the perfect snack for stressful family reunions.
- There are only 96 calories in two fill-you-up cups of sweet watermelon, and its high liquid content makes you feel full. So start your dessert course with a wedge and you're less likely to go overboard on Aunt Edith's brownies.

Tips for Choosing the Best Watermelon
* Choose a firm, symmetrical fruit that is free of bruises, cuts and dents.
* Before you buy, pick up your melon. The heavier it feels, the better -- a good watermelon is 92% water, which makes up most of its weight.
* on the underside of the watermelon there should be a creamy yellow spot from where it sat on the ground and ripened in the sun.
Tips for Storing Watermelon
Store watermelon on the warm side
Compared to most fruits, watermelons need a more "tropical" climate - a thermometer reading of 55°° F is ideal. However, whole melons will keep for 7 to 10 days at room temperature.
Store melons too long, and they'll lose flavor and texture.
Lower temperatures cause chill injury After two days at 32° F, watermelons develop an off-flavor, become pitted and lose color.
Freezing causes rind to break down and produces a mealy, mushy texture.
Once a melon is cut, it should be wrapped and stored at 37° - 39° F.

South-of-the-Border Watermelon Iced Green Tea
South-of-the-Border Watermelon Iced Green Tea3 cups chopped seedless watermelon
1 cup chilled green tea
1 cup chilled cream soda
1/8 teaspoon ground cinnamon
1 teaspoon light brown sugar
Ice cubes
Two to four 5-inch-long cinnamon sticks, for garnish
Serves 2 to 4
1. Put all of the ingredients except the ice cubes and cinnamon sticks into a blender and blend on medium speed for 2 minutes.
2. Pour the tea into old-fashioned glasses filled with ice. Stand a cinnamon stick up in each glass and serve immediately.

INGREDIENTS
1 to 2 cups seedless watermelon chunks
1 tablespoons honey
1 tablespoon fresh mint leaves, or to taste
1 cup lemon yogurt
Dash cinnamon
1. Puree watermelon, honey, and mint in a blender or food processor quickly--do not over blend. Pulse in the yogurt and cinnamon just until smooth.
Serves 1 or 2.

2 Tbs. lime juice
1 Tbs. sugar
1 cup crushed ice
½ cup water
Dash of black pepper or cayenne -- optional flavor twist for heat-lovers

Seedless Watermelon
You can hardly find a watermelon that hasn't been genetically altered to be seedless in the US. Do you think this is a good idea? The seed companies do this so that growers are forced to buy their seeds every year. But is this healthy or does it take the life-force out of the food? Or worse? I suppose they are not as natural as watermelons with seeds, but I do tend to buy seedless. I notice that the first spots to go bad are right around the seeds, so the less seeds, the longer my melon lasts.
The only thing I miss is a good watermelon spitting competition...oh, am I the only one that's ever done that, hmmm.
