Decadent Coconut Cream Cheese Brownies

You've just got to try these decadent brownies...

Ingredients
3 eggs
1 cup/250 mL melted butter
1-1/2 tsp/7.5 mL Watkins Original Double-Strength Vanilla
2 cups/500 mL sugar
1-1/4 cups/300 mL all-purpose flour
1/2 cup/125 mL Watkins Baking Cocoa
1/2 tsp/2.5 mL Watkins Baking Powder
1/4 tsp/1.2 mL salt
1 cup/250 mL chocolate chips
Filling:
2 packages (8 oz/227 g each) cream cheese
2 tsp/10 mL Watkins Coconut Extract
1/4 cup/60 mL sugar
1 egg
2 tbsp/30 mL milk
3/4 cup/180 mL Watkins Coconut Dessert Mix

Cooking Directions
In a large mixing bowl, combine eggs, butter and vanilla. Combine dry ingredients; add to egg mixture and mix well. Stir in chocolate chips. Set aside half for topping. Coat a 9 x 13"/23 x 33 cm pan with Watkins Cooking Spray. Spread remaining batter into prepared pan. In a small bowl, beat cream cheese, coconut extract and sugar until smooth. Add egg, milk and dessert mix, beating just until combined. Carefully spread filling over batter. Drop reserved batter by tablespoonfuls atop filling. Cut through batter with a knife to swirl if desired. Bake at 350°F/180°C for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Refrigerate until serving.

Makes 3 dozen.

Mesquite Barbecue Sauce

Smoky Southwestern taste.

It's a snap to create your own perfectly seasoned barbecue sauce.

Simply mix 1/3 cup/80 ml Watkins Mesquite Barbecue Sauce Concentrate with 2/3 cup/160 ml ketchup. Make sure to use a good quality ketchup. Brush on grilled, broiled and oven baked meats for a pleasantly smoky grilled flavor.

Variations: Try mixing concentrate with tomato sauce, or apple sauce instead of ketchup.

Other uses: A tablespoon or so of Mesquite Barbecue Sauce Concentrate can be added to baked beans, casseroles, ground beef for meat loaf, hamburgers etc.

Basic Creamy Salad Dressing

With the onset of warmer weather it's time to serve more salad!

1/2 cup/125 reduced-calorie mayonnaise
1/3 cup/80 mL low-fat milk
2 tsp/10 mL vinegar, less if desired
1-1/2 tbsp/25 ml* Watkins Garlic and Dill Snack and Dip Seasoning

*Also try the following as variations: Watkins Garden Vegetable Snack and Dip Seasoning, Cucumber and Dill Snack and Dip Seasoning, or Salsa and Sour Cream Snack and Dip Seasoning.

Directions: Whisk together all ingredients until smooth. Serve over assorted salad greens.

Makes about 1 cup/250 ml, 2 tbsp/30 ml per serving.

Peppered Hummus and Pita Chips

Hummus is a healthier appetizer and it's not that hard to make.

Ingredients for Hummus:

2 tbsp/30 mL Watkins Grapeseed Oil
1/3 cup/80 mL chopped onion
1/3 cup/80 mL chopped green pepper
1 tsp/5 mL Watkins Garlic Liquid Spice
1 can (14 oz/400 g) garbanzo beans, drained
1/2 tsp/2.5 mL Watkins freshly-ground Sea Salt
1 tsp/5 mL Watkins Parsley
1 tbsp/15 mL fresh lemon juice
1/2 tsp/2.5 mL Watkins Salsa Seasoning
1 tsp/5 mL Watkins Black Pepper (or to taste)

Ingredients for Pita Chips:

5 or 6 large pita rounds
1/2 cup/125 mL Watkins Garlic and Parsley Grapeseed Oil
3/4 tsp/4 mL Watkins Garlic Granules
1/4 tsp/1.2 mL Watkins Seasoning Salt
1/4 tsp/1.2 mL Watkins Black Pepper

Cooking Directions
Sauté onion and green pepper in oil and Liquid Spice until vegetables are soft. Add with remaining ingredients in blender or food processor and blend until smooth. Serve with pita chips.

Pita Chips
Preheat oven to 350°F/180°C. Split pita rounds in half horizontally if hollow. Combine remaining ingredients; brush all over both sides of pita rounds. Stack pita and cut into 8 wedges. Place wedges on large ungreased baking sheets. Bake 10-15 minutes or until golden brown.

Homemade Cinnamon Rolls

Watkins is famous for our purest ground cinnamon, these are yum, yum good.

Ingredients
4-1/4 to 4-3/4 cups/1 to 1.25 liters all-purpose flour
1 package quick-rising active dry yeast
1-1/4 cups/325 mL milk
1 tsp/5 mL Watkins Original Double-Strength Vanilla
1/4 cup/60 mL sugar
1/4 cup/60 mL butter
1 tsp/5 mL salt
1 tsp/5 mL Watkins Cinnamon
2 eggs
6 tbsp/90 mL butter, softened
1/2 cup/125 mL brown sugar
4 tsp/20 mL Watkins Cinnamon
Glaze:
1 cup/250 mL powdered sugar
1 tsp/5 mL Watkins Original Double-Strength Vanilla
4 to 5 tsp/20 to 25 mL milk

Cooking Directions
Combine 1-1/2 cups/375 mL of the flour and yeast in large mixing bowl. Heat the 1-1/4 cups/325 mL milk, vanilla, sugar, butter, salt, and cinnamon just until mixture is warm (120-130°F/50-55°C), stirring constantly. Add to flour mixture along with eggs. Beat with an electric mixer on low speed for 30 seconds; scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a spoon, stir in as much of the remaining flour as you can (dough will be soft). Knead in enough of the remaining flour to make a moderately soft dough (3 to 5 minutes total). Shape dough into a ball; place in a lightly greased bowl, turning once. Cover and let rise in a warm place until double in size (about 1 to 1-1/2 hours). (The dough is ready for shaping when you can lightly press two fingers 1/2-inch/1-cm into dough and an indentation remains.) Punch down dough and divide in half. Place each half on lightly floured surface and smooth into a ball. Cover and let rest 10 minutes.

On lightly floured surface, roll half the dough into a 12 × 8-inch/30 × 20-cm rectangle. Spread with 3 tbsp/45 mL of the butter. Combine brown sugar and cinnamon; sprinkle half over rectangle. Roll up from short side. Seal edges (brushing with water makes rolls easier to seal). Repeat with remaining dough. Slice one roll into 8 pieces and the other roll into 7 pieces. Arrange slices, evenly, cut-side up, in greased 13 × 9-inch/33 × 23-cm baking dish. Cover and let rise until nearly doubled (about 30 minutes). Bake at 350°F/180°C for 25 to 40 minutes or until light brown. Invert at once onto wire rack, invert again. Cool slightly.

Drizzle rolls with a glaze made by combining the powdered sugar, vanilla, and milk. Serve rolls warm or store in an air-tight container.

Makes 15 servings.

Watkins Pepper Cheese Log

Watkins is famous for black pepper, this appetizer is sure to satisfy the pepper lover.

Ingredients
2 packages (8 oz/227 g each) cream cheese, softened
2-1/2 tsp/12.5 mL Watkins Italian Seasoning
3/4 tsp/4 mL Watkins Garlic Granules
3/4 tsp/4 mL Watkins Onion Granules
2 tbsp/30 mL Watkins Cracked Black Pepper
or crushed Watkins Garlic Peppercorn Blend

Cooking Directions
Combine first four ingredients; place on plastic wrap and shape into a log. Place on new sheet of plastic wrap and pat Cracked Pepper onto all sides. Roll up and refrigerate until firm. Cut into thin slices and serve with whole grain crackers.

Makes 1 log, 16 servings.

Nutritional Information Per Serving: Calories 50, Protein 1 g, Carbohydrates 1 g, Sodium 40 mg, Fat 5 g, Saturated Fat 3 g, and Cholesterol 20 mg

Tip: Make with a low fat cream cheese to reduce the fat content.

Ham with Apricots in Vanilla Sauce

Not the same old ham and pineapple, the apricots and Watkins famous Vanilla go well with the ham

Ingredients
2 center-cut ham slices, about 1/2 inch/12 mm thick (trim fat and slash edge)
1-1/2 cups/375 mL dried apricots
1-1/3 cups/325 mL water
3 tbsp/45 mL sugar
1 tbsp/15 mL Watkins Pure Vanilla
1/4 tsp/1.2 mL Watkins Nutmeg
1/8 tsp/0.6 mL Watkins Cloves (Ground)
2 tbsp/30 mL cornstarch
1/2 cup/125 mL water

Cooking Directions
Place ham slices in large glass baking dish. Bake, uncovered, at 350 F for 15 minutes. While ham is baking, combine apricots and next 5 ingredients in medium saucepan. Bring mixture to a boil, reduce heat and simmer 5 minutes. Combine cornstarch and water; stir into apricot mixture and cook until mixture begins to thicken. Drain excess liquid from ham. Spoon apricot mixture evenly over ham slices. Bake an additional 10 to 15 minutes or until heated through. With two spatulas, remove ham slices along with apricot topping to serving platter.

Makes 8 servings.

Savory Orange Couscous

Serve this delicately-flavored side dish with baked or broiled chicken, fish or pork chops.

Ingredients
1 cup/250 mL orange juice
1/2 cup/125 mL water
1 tbsp/15 mL Watkins Chicken Soup Base
2 tsp/10 mL Watkins Onion Liquid Spice
1 tsp/5 mL Watkins Orange Peel
1/4 tsp/2.5 ml, more if desired Watkins Lemon Pepper
1 cup/250 mL uncooked couscous

Cooking Directions
Combine all ingredients except couscous in medium saucepan; bring mixture to a boil. Add couscous; remove from heat and let stand for 5 minutes. Fluff with fork before serving. If desired, sprinkle with chopped green onions before serving.

Makes 4 servings.

Delicious Lemon Squares

Ingredients
Bottom Layer:
1/2 cup/125 mL butter
1 cup/250 mL flour
1/2 cup/125 mL chopped pecans
1 tsp/5 mL Watkins Butter Extract

Cream Layer:
1 cup/250 mL powdered sugar
8 oz/227 g fat-free or light cream cheese (at room temperature)
1 tsp/5 mL Watkins Original Double-Strength Vanilla
Half of a 1-quart/liter container of whipped topping

Lemon Layer:
1 pie filling recipe from Watkins Lemon Dessert package, using 2-1/2 cups/625 mL water, Lemon Dessert Mix
1 tbsp/15 mL lemon juice

Cooking Directions
Combine bottom layer ingredients and pack into an 11 x 7"/28 x 18 cm baking pan. Bake at 375°F/190°C for 15 minutes. Cool completely.

Cream together powdered sugar and cream cheese. Add whipped topping and fold in. Prepare lemon pie filling; add lemon juice and let cool.

Spread a thin layer of cream mixture over baked bottom layer. Spread lemon filling on top; spread rest of cream mixture on top of that. Chill. (Note: Chilling after applying lemon layer may make it easier to spread top layer.) Cut in large squares.

(Note: Other Watkins Dessert Mixes may be used in place of Lemon.)
