Fruit Salads and Fruit Salad Combinations

This is usually a great summer meal because they are cool and refreshing for a hot day.
In general most of this type salad will start with the protein source (meat, seafood,or chicken), veggies like celery, sweet peppers (any color), a bit of onion, and chopped hard-cooked eggs. The dressing will vary as much the final seasoning and dressing. This salad is often served on a bed of lettuce with crackers or crusty bread.Recipes abound for the variation and they are all delicious! (Have you guessed yet that I like salad?)
An example of this meat salad is a favorite at many fast food resturants in the form of Taco salad.
Pasta Salad
The salads go on and on
Cooked cooled pasta is a good side dish or add the meat and make it the meal. The basics for Pasta salad - Pasta of your imagination with so many varieties available, often added celery, chopped egg, onion, green peppers or pimento, cheese in cubes or shredded, sometimes peas, asparagus, cucumber, and tomatoes. Molded and Congealed Salad - a thing of the past or the elite?
Not as often used - but it might be a time thing
There was a time when Mothers stayed home, not working outside the home or being a WAHM on the internet or otherwise. I think this was the time of the ever popular congealed and molded salads. Some were quite works of art. That is just my theory that people got much busier and quite frankly these salads must be made ahead, sometimes with various layers and addition. Time consuming.You still see these some and often on a buffet table that is catered. Molded shapes are often seafood molds - might be a Salmon Mousse in the shape of a fish. Cranberries layered with gelatin, cream cheese layer, and another of cranberries, chopped nuts with ground orange makes a lovely ring mold at the holidays.

Just how to top off a salad
In most cases people buy bottles dressing and mayonnaise to use in binding heavier salad like pasta, potato and meat salads. It is possible to make your own. You can show your creativity and add those special flavors you like in your for mildness or spiciness. With the variety available I would just say try a few and keep a few various dressing on hand.
In addition to dressing many add toppings:
croutons (butter soaked and seasoned bread cubes)
cheese - your chose in shredded or cubed
nuts or seed such as sunflower
bacon bits
seasoned Chinese noodles as crumbles

- My husband has a salad every day for lunch. Always the same...head lettuce, romain, brocolli, califlower, radish, onions, craisins, walnuts, cheese, bacon bits, thousand island dressing. It's the Ken Special. He's converted a couple friends to the same salad. Love your lens!
