- Remove from heat and let stand for 20 minutes.
- While cooling, preheat the oven to 200 degrees.
- Place ginger slices in a glass pan
- Place into oven and bake until ginger slices are nearly dry but still chewy.
- Remove from oven and let cool.
- Toss the cooled strips in sugar to lightly coat (optional)

Store in air tight container for up to 2 months
