Wheatless was the way to go for me. The other grains sometimes implicated in celiac disease — barley, rye, and oats — do not seem to bother me. I don't eat a lot of barley or rye, but I live on rice and oats, whole and ground into flour. This lens is my way of keeping information about going wheatless at my fingertips, and making what I find out or figure out available to others. If you suspect that you may be wheat intolerant, talk to your doctor.

Wheatless Recipes I Created Myself

This collection of wheatless recipes is selected from my growing collection of posted recipes.
Cornbread
Made with oat & rice flours, with yogurt for moistness.
Pancakes
Small, delicate pancakes that deliciously deliver syrup and melted butter.
Gingersnaps
For the cookie monster who's been crying since giving up wheat.
Basic Beef Stew
Serve it over rice or cubed steamed potatoes.
Teriyaki Chicken
If you are careful to use low-sodium wheat-free soy sauce, and serve it with steamed rice or rice noodles, this version of teriyaki chicken is wheat-free.
Meatloaf
Old-fashioned rolled oats are used instead of bread or cracker crumbs. The loaf is built in layers, with cheese inbetween. Pizza sauce adds spice.
Peanut Butter Kiss Blossom Cookies
Oat and rice flours are substituted for wheat flour, and special dark-chocolate kisses are swapped in for milk-chocolate kisses, in this less-sweet wheatless version.
Wheatless Christmas Blossom Cookies
Wheat flour is swapped out for oat and rice flours, and colored sugar crystals plus striped kisses give these classic blossom cookies Christmas flair.
Wheatless Honey Lemon Chicken
A gooey-good sweet-sour chicken recipe is tweaked to remove the wheat flour. Yum!
Hungarian Beef Stew
Based on a recipe for goulash from "Cooking Light" that has been tweaked to make it wheat-free.
Potato Cheese Soup
A meatless soup tweaked to be wheatless as well. It received a positive enough family reception to enter the Lenten meatless Friday rotation this year.
New England Clam Chowder
Slightly thickened, and flavored with onion and garlic, this version is closer to a cream soup than a classic thin chowder.
Beef in Cocoa Gravy (Mole Sauce)
A beef stew with Mexican style.
Wheatless Banana Bread
Tweaked from a recipe that originally used all-purpose wheat flour.
Mama Yatot's Beef
A filipino rice cover made with beef and mushrooms, adapted from a recipe posted at the Yatot Chronicles.
Leprechaun Casserole
A meat-and-potatoes casserole with an unexplained name, adapted from a recipe at Sunny Gardens.
Wheatless Ginger Pancakes
Adapted from a recipe contributed to the Carnival of the Recipes.
