Welcome to my Kitchen
I will admit when I worked a full time job outside of the home, I would spend my days off preparing meals and freezing them for the week. I still take a day and cook many different dishes and freeze them, because working online and always having something I need to do is still very time demanding.
I have had to adjust the way I cook over the past year because of my High Blood Pressure, so just like my art, my cooking goes through many changes as well. Most of my recipes are low sodium, no sodium as time passes I may change them to be healthier. I do a lot of research on foods, I have become a devoted label reader and my taste buds have gone spicy. SO with that being said, let's get this cookbook page going!

Caramel Apples

Homemade Caramel Apple Coating
2 1/2 cup brown sugar (light, packed)
1/2 cup granulated sugar
5 oz evaporated milk
2 tbl. butter
1 tsp vanilla extract
2 tbsp marshmallow fluff/creme (optional)
Combine sugars and milk in a 2-quart sauce pan and bring to medium heat until sugar is dissolved. Bring to a rolling boil stirring constantly or for about 8 minutes (or until candy thermometer reaches 238°F). Remove from heat stir in butter and marshmallow (optional). Stir in vanilla extract.
Let hot solution cool until slightly thick. Swirl each apple into the hot mixture until completely coated.

Autumn Apple Recipes

Peel and Core two apples, and one or two carrots and place them in the food processor until they are chopped.
1 1/4 cups of All purpose Flour
1/4 cup of Milled Flax Seed
1/2 cup of Oatmeal (I grind my mine to make my own oat flour)
1 large chopped apples
1 large chopped carrots
1/4 cup of coconut
2/3 cup of Silk Almond Milk
1 cup brown sugar
1/4 cup canola oil
3 egg whites
3 teaspoons Sodium Free Baking Powder
2 teaspoons of organic cinnamon
1 teaspoon of almond extract
Mix together all of your dry ingredients, then add your wet ingredients. Stir well but do not over mix because they will be tough. If by chance the batter seems a little dry add a little more almond milk.
Spray your cupcake papers with a light oil (better to be safe then sorry) and fill the cups 3/4 full. Place in the over on 350 degrees for 25-30 minutes. When you take them out of the oven sprinkle with powdered sugar.

1 bag chocolate chips
1 bag peanut butter chips
Melt together in a double boiler. I use a metal bowl over a pot of boiling water. Make sure the chips are completely melted. Go ahead and line your cookie sheet with parchment paper or waxed paper do not use foil, I made the mistake and used that once and it stuck to the chocolate
1 cup of nuts (your choice)
1 cup of raisins or dried cran-rasins
1 cup of coconut
Mix the nuts, raisins and coconut into the chocolate. You need to work sort of fast here, pour that mixture onto the lined cookie sheet and spread it thin. After it hardens, break it up into small pieces. This is a good little treat to wrap in those little Halloween bags to give to your friends or guest!!
(I have made this with only using dried cherry cran-rasins also!)

Do you know, it is the simplest things in life that mean a lot and can be the most fun? You can purchase those readymade dips at the grocery store, put it into a bowl and add a little green food coloring. Stir it until you have the green coloring you want. Place it on the table with a bowl of chips, or those blue corn chips and let the kids enjoy it. But for fun you could also make this dip.... (Wicked laugh)
Green Slim Dip
1 pack of onion soup mix
1 cup of sour cream
2 drops of green food coloring
½ cup diced tomato
Mix everything together and blend well. If the green is not dark enough add another drop of green food coloring. Keep refrigerated until you are ready for the party. Place the bowl the dip is in, into a large bowl with ice to keep the dip chilled. Have a couple of bowls of different chips, regular potato chips and blue corn chips would be good! Don't forget the labels!!!!!

One Liter Club Soda
Blue Food Coloring (to darken punch more)
Mix everything together adding the Club Soda last. You can add a couple of frozen hands or some ice cubes with plastic spiders in it.
This REALLY tasted good. I will admit, at first I was a little eerie to taste it, I mean remember-I am known as the "Mad Scientist of the Kitchen"!

1 3/4 cup pumpkin puree (follow directions above)
4 eggs
1 cup vegetable oil
2/3 cup water
2 1/2 cups of Brown Sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
DIRECTIONS
In a large bowl, mix together wet ingredients: pumpkin puree, eggs, oil, water and brown sugar until well blended. Whisk together the dry ingredients: flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Slowly add the dry ingredients into the pumpkin mixture until just blended. Try not to over mix because that will make the bread tuff. Pour into 3-lightly greased loaf pans. Bake for about 55 minutes on 350 degrees.
Loaves are done when toothpick inserted in center comes out clean.

I purchased a container of Creme Brule sugar from a local store that has four different flavors-one including a buttered rum sugar. That is one I used for my recipe.
Cream Together:
1 stick of butter
1 stick of unsalted butter
1 tablespoon of vanilla
1 1/2 cups of sugar
2-egg whites
Add:
1 teaspoon No-Sodium Baking Soda
1/2 teaspoon No-Sodium Baking Powder
2 3/4 cup of All-Purpose Flour
By using a handmixer be sure to mix this stiff dough until creamy. Use a 1 inch scoop and place the ball on a lined cookie sheet with parchment paper. Flatten and sprinkle with a flavored sugar. Bake at 375 degrees for 12-15 minutes.

½ cup of wheat flour
½ cup of all purpose flour
1 teaspoon No Sodium Baking Powder
2 Tablespoons of Canola Oil
2 Tablespoons of Dried Buttermilk
(found in the baking section of your grocery store by the can milk)
Water
Mix everything together adding enough water to make the dough workable but not too sticky. Sprinkle your surface with some flour. Divide your dough into 4 pieces to make larger flat breads or divide into smaller pieces for smaller ones (the smaller the flat bread, the fewer calories).
Roll each piece into a flat round disk, preheat a large fry pan sprayed with a non-stick cooking spray. Place your disk in the pan and allow it to cook until it forms bubbles on top like pancakes do. Lightly spray again with the cooking spray and sprinkle with black pepper, turn and allow it to finish cooking approximately another minute or so. Put it onto a plate and cover with a dampened cloth and finish cooking the remaining flat breads.
Calorie Break Down: 170 Calories for one Large Flat Bread and 20mg. Sodium
For the whole batch of Flat Bread there is 680 calories so divide how many Flat Breads you decide to make into 680 for your total.

2 cups of all-purpose flour
1 ½ cups of brown sugar
¼ cup natural unsweetened applesauce
2 egg whites
2 teaspoons of vanilla
1 teaspoon of cinnamon
2-cups oats (not instant)
¼ cup of water
1-teaspoon of baking soda
1-stick of unsalted margarine (softened)
3-tablespoons of mini dark chocolate chips
Using a 2/3 cup of raisins would mean fewer calories
**Please note: by using the sodium free baking powder you will save 1240 mg. of sodium!! That is a Huge difference from zero with the sodium free baking soda!
I mixed the sugar, applesauce, cinnamon, vanilla, egg whites, and margarine together than added the remaining ingredients. By using a ¼ cup ice cream scoop I got 13 huge thick cookies from this mixture. Line your pan with parchment paper, scoop on the cookie dough, and bake on 350 degrees for 20-25 minutes.
**Please note: if you use a smaller scoop, the calories per cookie will be less. It is very important to use a scoop to make sure all of your portions are the same to get an accurate calorie count!

1-container of chicken breast that you cooked and froze
2-cups of cooked brown rice
1-cup of frozen peas (that have been thawed)
½ cup of organic crushed tomatoes

Fresh Basil cut in thin strips.
To thaw your chicken boil for about 5 minutes, drain and cut into one inch cubes. Cook and drain your brown rice and add the chicken. I use organic can green peas at the moment because I did not want to waste them (even some organic foods have a high sodium content ½ cup of peas has 340 mg. of sodium) if you are using frozen green peas that is much better! Thaw them and add to the mixture. Start with a ½ cup of the crush tomatoes and see if that is enough tomato for you if not add a little more. Add a little hot water just to make sure it has enough liquid and add all of your seasonings, except for the fresh basil. Simmer on low until it is warm and all of the spices have had a chance to release their flavors. After it is done, sprinkle the top with fresh basil strips and enjoy!

1- Cup of All Purpose Flour
1-teaspoon of No Sodium Baking Powder **Ingredients: Monocalcium phosphate, potato starch, potassium bicarbonate. (This comes in an 8 ounce container)
2-Tablespoons of Canola Oil
2-Tablespoons of powdered buttermilk (found in the baking section-by can milk)
2-Tablespoons of sugar
1/2 cup of fresh blueberries
water
Mix everything together adding enough water to make the dough workable but not too sticky. Sprinkle your surface with some flour-flatten dough so it is has a half inch thickness. Use a buscuit cutter, small glass or cleaned vegetable can and cut out biscuits.
Line the flat pan for your toaster over with foil and lightly spray with a non-stick cooking spray. Bake 15 minutes on 425 degrees. Take out of toaster oven, cover with a towel until cooled.
Mix 1/2 cup of powdered sugar together with a tiny amount of creamer, milk or juice to make a glaze. Drizzle over cooled biscuits. I get 5 biscuits with the size cutter I use, and this last me for five mornings worth of breakfast. Be sure to keep in the refrigerator.

Use 1 pound of turkey or 95% lean ground beef
1 egg white
1 cup or 1/2 cup of chopped spinach
1/2 cup no sodium bread crumbs
pepper
parsley
oregano
garlic powder (not garlic salt) or use fresh garlic which would be better
Mix everything together real good and roll out the size meatballs you want. Preheat a skillet with olive oil and cook the meatballs until they are done. I always cook mine on low.

I promise this dessert is SO Good!! Cube up some pound cake. Make sure the chunks are pretty big. Again using skewers, alternate adding cake and pineapple until the skewer is filled.
Mix together:

Brown sugar
Cinnamon
Touch of nutmeg
Spread over the kabobs
They are ready to cook!! Watch these closely when you are grilling them because the objective is to toast the cake.

- I love this lens and the cookbook approach with "top tabs". I suggest you create an how-to lens showing in detail how you created the cookbook. It is a great concept that Squidoo has made possible. Love recipes. And the beauty of recipes is that no matter how many you have seen on a particular dish; there will always be room for someone to create another one with just some original different twists. Recipes: Love to read them and love to eat them. Great job WhiteOak.
