"Humans cannot synthesize, or create, trans fatty acid. The only source is through diet," study chief Dr. Frank B. Hu of the Harvard School of Public Health, Boston, said in a written statement.
The main source of trans fat in the diet is partially hydrogenated oils that are plentiful in cookies, crackers, pastries and fried foods. "Eliminating the use of partially hydrogenated oils and other sources of trans fat in the U.S. diet -- as long as saturated fat intake doesn't increase -- will likely help reduce the burden of cardiovascular disease," Hu said.
Partial hydrogenation is an industrial process used to make a perfectly good vegetable oil into a very unhealthy food ingredient. The process is used to make oils more solid; provide longer shelf-life in baked products; provide longer fry-life for cooking oils, and provide a certain kind of texture or "mouthfeel." The big problem is that partially hydrogenated oils are loaded with trans fat.
The amount of trans fat in red blood cells correlated significantly with the amount of trans fat consumed and was associated with increased levels of "bad" LDL cholesterol and decreased levels of "good" HDL cholesterol.
After adjusting the study data for multiple factors that might influence the results, women with the highest trans fatty acid content in red blood cells were three times more likely to develop heart disease than women with the lowest trans fatty acid content in red blood cells.

Within four years, their mortality rate and rate of heart attacks matched the people who had been doing these behaviors all along," said Dr. Dana King at the Medical University of South Carolina, who led the research. Nutrition for Teens
Burns and her team of researchers found that teens with the lowest intake of fruit and especially vitamin C had weaker lungs compared to the others. Teens that ate less vitamin E, found in vegetable oil and nuts, were more likely to have asthma.
Many studies have connected healthy eating habits with strong, healthy lungs, so Burns and her colleagues surveyed and tested 2,112 12th-graders from the United States and Canada.
In keeping with previous surveys, they found that many teenagers ate less than the recommended amounts of fruits and vegetables. They also found that teens that consumed less fruit and lower levels of omega-3 fatty acids were more likely to have asthma and respiratory symptoms such as wheezing. Even moderate amounts of the omega-3 fatty acids are protective according to Burns who added that walnuts and flaxseeds are good sources of omega-3 fatty acids.

This new study, due to be published in the December 2007 issue of the American Journal of Preventive Medicine, found that obese children who watched four or more hours of TV a day were 330% more likely to have high blood pressure than children who watched less than two hours a day.
Dr. Jeffrey Schwimmer wrote in the study that: "There is a significant association between hours of television watched and both the severity of obesity and the presence of hypertension in obese children". Many studies have found a strong link between watching TV and obesity, but this is the first study to show a link between TV and blood pressure in obese children and teens, the researchers wrote.

This new study shows that women who eat a healthy diet, drink moderate amounts of alcohol, are physically active, maintain a healthy weight and do not smoke have a significantly reduced risk of heart attack - a reduced risk of up to 92 percent!
New research published in the January, 2008, issue of the journal of the Public Library of Science shows that people who drink moderately, exercise, quit smoking and eat five servings of fruit and vegetables each day live, on average, 14 years longer than people who do not practice these lifestyle habits.
Diet Sodas May Double Your Risk of Obesity
But is this a wise health choice?
Perhaps not, for according to a study by researchers at the University of Texas San Antonio, middle-aged adults who drink diet soft drinks may be drastically increasing their risks of gaining weight later on.
Diet Soda Discovery
The study monitored the weight and soda-drinking habits of more than 600 normal-weight patients aged 25-64. When researchers followed up on the patients some eight years later, they discovered:
Participants were 65 percent more likely to be overweight if they consumed one diet soda a day compared to if they drank none.
Two or more low- or no-calorie soft drinks raised the odds of becoming obese or overweight even higher.
Those who drank diet soda had a greater chance of becoming overweight than participants who drank regular soda.
Finding Clarity
By itself, diet soda cannot be blamed for weight gain; however, various contributing factors may play a role.
For example, a person who drinks a diet soda may feel it's acceptable to make up for those calories with another high-calorie food. And while the tongue is temporarily satisfied by the sweet taste of diet soda, the brain isn't similarly fooled and still craves calories for energy. Other studies have suggested people who drink an artificially sweetened beverage before a meal will eat more high-calorie foods than those who do not.
Therefore, with diet soft drinks and sugar-sweetened beverages (even fruit juices) linked to weight gain and obesity, many people are left wondering, "What is safe to drink?" The answer, of course, is water.

A recent study by researchers at the University of California found that solar ultraviolet B (UVB) radiation can significantly reduce the risk of 16 different types of cancer by naturally stimulating the production of vitamin D in the skin. The study's authors are Cedric F. Garland, Dr.P.H., from the Department of Family and Preventive Medicine at the University of California, San Diego, and William B. Grant, Ph.D., director of the Sunlight, Nutrition and Health Research Center (SUNARC) www.sunarc.org/about.htm
"Enhancing vitamin D status appears to be the single most important simple thing people can do to reduce their risk of cancer, apart from avoiding tobacco and moderation in the intake of alcohol," say Cedric Garland and William Grant.
It has been frequently reported that those who work outdoors have a reduced risk of developing melanoma [Garland et al., 1990; Kennedy et al., 2004]. The reasons appear to be twofold:
They develop a tan that blocks the penetration of ultraviolet radiation so it can't produce the free radicals that can lead to melanoma.
They produce lots of vitamin D.
The researchers recommend that people get their vitamin D from exposure to natural sunlight. Fair-skinned people who live in sunny regions of the country can produce about 1,500 IU of vitamin D in 20 minutes of exposure at noon if only 10 to 20 percent of their body is exposed -- such as chest, back and arms. People should try to expose more of their skin surface for a shorter amount of time, rather than stay in the sun longer with minimal skin exposure, the study says. Darker-skinned people may need up to four times as long to make the same amount of vitamin D as fair-skinned people.
The study recommends wearing hats to avoid prolonged sun exposure on more sensitive parts of the body, such as the face, and to keep moving when in the sun. Garland and Grant caution fair-skinned people to avoid over-exposure, since the skin produces sufficient vitamin D in just 20 minutes a day.

Ginger Can Kill Ovarian Cancer Cells
Dr. Rebecca Liu, an assistant professor of obstetrics and gynecology at the University of Michigan Comprehensive Cancer Center, and colleagues tested ginger powder dissolved in solution by putting it on ovarian cancer cell cultures. It killed the ovarian cancer cells in two different ways. First, through a self-destruction process called apoptosis and second, through the process of autophagy in which cancer cells digest themselves, the researchers told a meeting of the American Association for Cancer Research.
Ovarian cancer kills 16,000 out of the 22,000 U.S. women who are diagnosed with it every year, according to the American Cancer Society. Ginger has been shown to help control inflammation, which can contribute to the development of ovarian cancer cells.
"In multiple ovarian cancer cell lines, we found that ginger-induced cell death at a similar or better rate than the platinum-based chemotherapy drugs typically used to treat ovarian cancer," said Dr. Jennifer Rhode, who helped work on the study.

Could Help Against Stomach Cancer
The new study, part of the European Prospective Investigation into Cancer and Nutrition (EPIC), followed 521,457 subjects in 10 European countries with an average age of 52. It is said to be the largest cohort study on fruit and vegetable intake and the incidence of stomach (gastric) cancer in Western countries and the first to look at adenocarcinoma of the oesophagus.
After an average of 6.5 years of follow-up, 400 cases of gastric cancer and 188 cases of oesophagus cancer had been reported. While total vegetable intake was not associated with a decreased risk of gastric cancer, the researchers report that an increase in the intake of onions and garlic of 10 grams per day was associated with a 30 per cent reduction in the risk of intestinal gastric cancer.
This is not the first time that onions have been linked to reduction in the risk of certain cancers. US researchers recently reported that onion extracts could inhibit the growth of liver and colon cancers in vitro.
A large-scale epidemiological Iowa Women's Health Study looked at the garlic consumption in 41,000 middle-aged women. Results showed that women who regularly consumed garlic had 35% lower risk of developing colon cancer.
