While Wusthof's Gourmet series of knife blades are still made of high-carbon steel with a stain-resistant alloy, the difference from the Wusthof Classic series lies in the fact that the knife blade is marginally thinner and is cut by a precision laser instead of by hand.
Wusthof Gourmet knife blades still maintain the classic Wusthof shape as the knife blade is ground and polished by computer to ensure perfect tapering from blade tip to bolster. On each piece of Wusthof, Full tangs extend through the synthetic traditional-style handles, which are triple-riveted for strength.
